The recipes in this book look delicious! I was so excited to see a book that embraces vegetables instead of trying to hide them or treat them as just a side. I appreciated that recipes were both in grams and oz as well as Fahrenheit/Celsius, so that it was accessible. The pictures made everything look so good. I also liked that many of the recipes had a possible variation that it listed. My one complaint is that although the author warned that alternatives could be used for the non vegetarian ingredients such as fish sauce, she didn't actually say what those alternatives are. I would have appreciated the guidance. Either way, I can't wait to try to make some of these foods.

We love to see a modern vegetarian cookbook that doesn't scare away the omnivores! This book is filled with mouthwatering photos you'll be excited to sink your teeth into. The recipes are categorized by type, so you can easily look for what you're craving. An extra treat is the Liveners chapter, filled with flavored oils, dressing, and crunchy toppings you can add to any meal to "liven" things up. I love forward to making my way through this cookbook and I know my family will be try the new dishes.

Fantastic collection of recipes. Interesting and challenging in a good way, nothing feels like I wouldn't be able to give it a go. I’d definitely buy this. Looking forward to cooking my way through it.

I love vegetables, so I was excited when Anna Shepherd’s book, Love Vegetables: Delicious Recipes for Vibrant Meals, was published. This book is all about vegetables and includes dozens of recipes that use them in many different ways.
Although I’m not a vegetarian, the recipes included are mouthwatering and they are for dishes that both vegetarians and carnivores will want to make at home. The recipes are written in the traditional manner with the ingredients listed first, followed by step-by-step instructions that are easy to follow for both beginning and advanced cooks.

One thing that is great about this cookbook is that the recipes are very unique. They use lots of different vegetables in each dish, as well as beans and pasta, and many of the recipes are hearty and filling without the need for meat, poultry, fish, or seafood. Actually, those of us carnivores can always add our favorite proteins to many of these recipes if we are so inclined. Another plus to these recipes is that many are colorful and very attractive, which is evident to anyone perusing this cookbook due to the beautiful, professional photographs that have captured most of the recipes.

All told, vegetable lovers will love to cook from this excellent cookbook. It makes a nice addition to a cookbook collection.

Special thanks to NetGalley for supplying a review copy of this book.

I was excited for this book, as I'm a huge vegetable lover but also very particular about them due to sensory issues. This book did disappoint however, the recipes sound very unappealing and also unattainable for someone who doesn't live close by to a whole foods/ organic shop. Not for me.
