I love cookbooks.... seriously. I love the idea of eating healthy and right all the time but it rarely happens. So I just bought an instapot... a mini 3qt so after a few uses....wow! So easy and the food is just naturally great. Next step... cookbook that will help me eat better and learn my instapot better. This cookbook was a slam dunk for me.
What did I like? Author pretty much dumbs it down for newbies looking for radical meals in an instapot. This should be titled instapot vegetarian meals for dummies which explains how basic it truly is. Also the author and many of her blog members have repeatedly tried these recipes and you can tell by the huge amounts of PICTURES! Omg...swoon the pictures. Prep time....ingredients....etc...etc. All of it is included. Author also encourages you to step outside your comfort zone to try a lot of these dishes because people all over the world vouch for the authentic taste. For me that’s just a win. I fell in love with the Mexican and black bean dishes included and can’t wait to try them.
Would I recommend or buy? I would buy and recommend...you can’t go wrong with such a simple version and you can always contact the author on her blog for more questions. She might quote herself a lazy cooker but her friendliness between the pages make her seem genuine and helpful.

I have come to love my Instant Pot and with a household of picky eaters always looking for healthy recipes that will make everyone happy (who is doing low carb, who is not eating meat) is time consuming. I have now tried a few recipes in the Miracle Vegetarian Cookbook and they were all hits. The Braised Cabbage Pasta, Texas Caviar and Mixed Bean Burrito Bowls are now in our regular rotation. We will keep working our way through the recipes and look forward to making some of the desserts, especially the Apple-Quinoa Porridge. I definite good addition to our cookbooks.

The Instant Pot Miracle Vegetarian Cookbook would be a great addition to anyone's kitchen library. With easy to follow directions and gorgeous photos, you will be able to add easy vegetarian dishes to your repertoire. The author includes both the active and total time for the recipe, as well as what type of vegetarian dietary restrictions it suits (dairy-free, nut-free, etc.). Recipes that I found enticing were Jamaican Mixed Vegetable Curry, Mushroom Stroganoff, and Boston Baked Beans.
I do question some of the ingredients being combined together (like potatoes and green beans) because I fear that there could be a lot of room for error on cooking times between the two different ingredients. I also feel that the cooking times may be a bit too long if you don't want your ingredients to turn to mush - I prefer al dente, fresher tasting vegetables to something that tastes like it has been canned. In my experience, with any Instant Pot recipe, it takes practice and finessing to get things just right based on the overall freshness of your ingredients and altitude, which is the case with this cookbook, as well.

I have been looking for a great Vegetarian Instant Pot recipe book with beautiful photos for so long!! PHOTOS ARE SO IMPORTANT!! And I finally found one! Easy to follow and having a perfectly captured photo of the final product is simply perfection!

I LOVE IT!

With the popularity of the Instant Pot, this is a welcome addition to vegetarian and occasional vegetarian cookbook shelves. The pictures are beautiful and the cookbook includes a wide variety of ways to cook vegetables, grains, and beans. The recipes also appear pretty simple, with tips for novice Instant Pot users.

TONS of great options for vegetarian instant pot meals. I've had a hard time finding tasty ways to cook vegetables in my instant pot without them turning out mushy and bland. This book offers wonderful solutions to that problem and I appreciate that the author is a self proclaimed "lazy foodie," meaning that she loves delicious food but she also appreciates when she can cook quickly and take shortcuts without sacrificing taste. Same, girl! Same.
