I went into this book expecting recipes for pies and came out with a lot more knowledge. The tips were incredibly useful, and the book was very entertaining to read.

I loved the pictures in this book, they are very pleasing to look at. I could imagine having this book on my coffee table, just to have it there for people to look through it. The close-ups of pies were mouth-watering and made me want to get to baking as soon as I finished reading the first recipe.

I am no expert on pies; I was out looking for a sure-fire recipe that even a beginner baker could get through, and I found just that in this book. I tried baking my first pie based on the apple pie recipe, and it turned out to be awesome and tasty. I got complimented by my mother and grandmother, though I realize I need a bit more practice before my pies could be deemed presentable and pretty. It tasted good, though, and I claim that as a victory.

Can't wait to try out more recipes, especially the mixed-berry hand pies.

This is a fantastic cookbook for any of the pie lovers out there. I am not an experienced pie baker but this one gave me all the detailed knowledge I could want. The book includes how to make dishes gluten free or vegan and has so many tips and tricks that even experienced bakers will find useful information. I loved the detailed instructions and information about making pie crusts and all of the information was very useful. I also loved the range of information!

I used this ARC to plan for the roundtable linked above + below. Although I didn't formally "review" this book, I should state that it's just one of the best cookbooks I've ever touched. This is one for the ages, a cookbook that defines the genre, and unparalleled photography. McDowell and Shara Alexander were incredibly kind and I'm sure I'll encounter this book again. Some memorable pies include:

155 Roasted pineapple pie
176 Any-Fruit Tarte Tatin
203 Blood Orange brulee pie
220 Caramel-Earl Grey Custard in gingersnap crumb crust
223 Birthday-cake pie
230 White chocolate-peppermint pie
276 Creamy Mango Pie
281 Breakfast pie
288 Striped citrus pie
292 Fresh watermelon pie

This has easily become one of my favorite cookbooks. The ease in which McDowell explains the recipes allows for a non-stressful and delicious experience. I’ve already begun to try out her recipes, and her apple pie has become a staple this fall in my kitchen.

Wow, Erin puts so many efforts into this book!

I knew Erin when she showed up on my youtube. One of the videos I watched was about making pie. But this book is insanely detailed. Like wow! So many variations, so many possibilities! And, the pictures in this book are very beautiful. If you see them, you want to immediately make it.

The technique is very well explained. I also enjoy her stories behind those pies. Love it!

I love that this book is so readable and creative at the same time. Lots of useful explanations behind techniques, lots of tips, lots of good pictures. Which takes the mystery out of pie making. The perfect book to read and learn from as we get ready for the holiday season and pie making.. My grandmother was a great Pie lady -and my Mom not so much but after reading this I am inspired to try my hand at some classic pie making ..

Thank you to NetGalley, Erin Jeanne McDowell and Houghton Mifflin Harcourt for the ARC of The Book on Pie. This is my personal review.
I love cookbooks! This was more than just a cookbook it was a wonderful explanation of all things connecting to pies.
I have very little experience with making pies, so this was a little intimidating to read the recipes. But they were so well explained that anyone could make at least some of the pies in this book.
The photos were beautiful and mouth watering to see.
The book started out with the basic facts on pies and all you need to know. I learned a lot about pie making I did not know.
The recommendation on the different crusts to use for the pies was extremely helpful. I also liked the ideas on what extra to use.
This is a great addition to a cook’s collection

I loved this book so much! I love baking, but find pie to be intimidating. This easy to follow instructions plus witty writing made me want to attempt and conquer my fears once and for all! I love the step by step guidance and all of the picture references (especially what not to do and how to fix mistakes). I can tell how much love and care went into this book - I think it would be a great book for any kitchen!

Thank you to Netgalley and the publisher for this ARC in exchange for an honest review!

The book on pie is exactly the book for anyone who wants to go past using pre-made pie crust! With an excellent variety and instructions, this is a great addition to any baker's collection.

The flavors of the pies were good and, honestly, you can adjust to what you enjoy/like in a pie.

Definitely highly recommend this cook book.

Many thanks to NetGalley and Rux Martin/Houghton Mifflin Harcourt for the opportunity to review a digital ARC of this gorgeous cookbook by Erin Jeanne McDowell! 5 stars!

I love to bake pies as well as eat them and felt like I knew my stuff. Until I saw this book. Wow - so much info and fabulous recipes combined with gorgeous pictures! I now want to explore so many of these recipes - just wait until you see how many variations of pie crusts she has, plus tips on crimping, lattices, toppings. The recipes themselves are easy to follow, give measurements both in weights and sizes for precision, and just have so many unique ideas. I can't wait to try so many of them!

Normally, I like cookbooks to give nutritional stats, but of course, it's pie so who's counting? I'm definitely buying a hard copy of this book because I will need to refer to this book often!

Erin McDowell is a pie ARTIST! Her recipes all sound delicious and her pies look picture-perfect. This cookbook is amazing for people who want to test their pie abilities. Each pie is given a level (easy-hard) so you know what you are getting yourself into before you start baking. In addition to great recipes, Erin gives a whole chapter on how to make your pie look great. From variations on crimping, lattices, and pie edge decorations, she also gives tips on what to do with those pesky pie dough scraps. She shares the tricks of the trade about dough recipes, including puff pastry! Her book is filled with great things and is soothing to look at. I only wish it was able to hold more pictures, so I could compare my results to hers.

The Book on Pie by Erin Jeanne McDowell is a free NetGalley ebook that I read in early November.

A veritable tome on fruit, cream, custard, and savory pies, not to mention a ton of options for crusts and toppings. Plus, there are so many combinations and concepts that I’d never heard of, nor considered before, i.e. meringues for more than just lemon pies, dumplings containing fruit other than apples, krispie crust, jammy whipped cream, custards flavored with green tea and chai, and the last but certainly not least recipe in the book - frybread taco pie. The only smallest of drawbacks is on the photos with the permeance of bone/ecru/grey marble tablescape backdrops with otherwise full-color pies, then bold font detailing in oxblood and pastel pink.

I love that the whole book is dedicated to pies. Very specific and useful information in one place. Recipes have not been tried personally but I look forward to trying many of them

There is so much information in this book! Tons of background info on tools and equipment, nice offset "Pie Pep Talk" info throughout (lots are troubleshooting), and color photos showing different situations with dough and techniques. Chapters are doughs & crusts, decor & toppings, fruit pies, custard pies, cream/chiffon/cold set pies, and savory pies. It seems like there is a recipe in here for nearly any type of crust and answers for all the pie questions you could come up with. There's a page explaining what fruits can be subbed in what kinds of pie recipes. There are gorgeous pictures for each recipe. The recipes also include make-ahead and storage info, and in many cases list alternative crust ideas and other variations. With the exception of the savory pie chapter (which includes lots of ideas I am not familiar with), the other chapters seemed fairly standard but with beautifully executed and elevated recipes. The dessert pies may not be totally novel, but this is a wonderful book for those looking to learn more and become better and more comfortable with pie baking.
I received an ARC in exchange for an honest review.

I have tried a number of ways to access this title as a PDF however all have been unsuccessful. I would have loved to get a good look at this recipe book. Perhaps a number of different modes of access can be possible in future.

The title says it all. This is the definitive book on all things pie. McDowell is an excellent teacher, and this book would be an asset to bakers of all skill levels.

It’s pie season y’all! Get ready to drool!⁣
⁣
Big thanks to @netgalley for the copy of The Book on Pie by Erin Jeanne McDowell. Y’all know I love to bake so when I saw this up on NetGalley I had to get my hands on it. This book is filled with so many tips, notes, variations, and a detailed supplies list with alternatives which I really appreciated. Erin even talks about storing and reviving the pies as well as what to do with your scraps of dough!⁣
⁣
I don’t know why but I honestly did not realize all the ways one could make pie crusts and fillings. I need to get more creative y’all! Thankfully I now have this book to help me out. There are whole chapters on doughs/crusts & decor/toppings before it even gets to whole pie recipes🤯 I was so overwhelmed over my choices I didn’t know what I wanted to make first. ⁣
⁣
Obviously to truly review this I had to make at least one pie from each category: fruit pies, custard pies, cream/chiffon&coldset, and savory pies. They were all pretty time consuming but easy to follow and totally worth the outcome. I loved the options to make different sized pies. I love me some minis! I did find I ended up needing more liquid than called for in all the recipes. This could be due to not utilizing a scale though. ⁣
⁣
The book does start with sharing different equipment to use like a scale, stone slab, pie weights, etc but I didn’t have any of that and it worked out just fine. Thankfully the book had measurements in both grams and cups. ⁣
⁣
I’m just a bit obsessed over here and need to buy my own physical copy.
