The pies in this book are a thing of beauty. I want to eat pies like these. I aspire to make pies like these. I own at least a half-dozen books on pies and I'll be adding this one to my personal collection. I can't recommend it highly enough.

As the title says, it's the book to make the perfect pie Yay I love the variety of fillings and ingredients that can be made for a perfect and delicious Pie

Love the wide variety of doughs and crusts included here, and some of those custard/cream pie recipes look AMAZING (black forest pie I'm looking at you). There weren't as many pie recipes as I was expecting, and to be honest, some of the photographs weren't all that appetizing (many of the pies looked somewhat burnt to me).

A comprehensive book with lots of information and recipes, in addition to various sections to make it easier to find whatever you're searching for. Several of the recipes looked amazing and I'd love to try the Cranberry-Orange Pie.

If you get any cookbook this year? This is it!!

It's such a wonderfully made up book with easy to follow but fantastic recipes and a huge variety offered.

This book doesn't just focus in what goes into the pie dough or how the pie looks, this book focuses on all pie aspects!

From offering sooooo many different and wonderful option she of different pie doughs and explaining why some options are better for which purpose (want a flaky crust? A thick one? Thin? Buttery? Or perfect to cut shapes?)

I also love that this book includes vegan and gluten free options/recipes and doesn't treat it as sadly other cookbooks have as if it's a huge inconvinence to have include those recipes but rather just packed them in the book as if they belong there (and they do!)

The pictures are beautiful and I quiet honestly want to make almost all of those pies ... well basically right now, but let's be realistic here I can't do that! Where would I put them all!
But that is what this book makes me want to do!
Each recipe looks so fantastic and all the little explanations or lessons on why this method gives that result makes me itch to try it out and see!

Highly - HIGHLY- recommend this book!

This is an amazing pie book! I'm giving it 4.5 stars only because there's not pictures of all the pies and I like recipe books where I can see the final product before I make it.

That being said this is beautiful! Amazing pictures of kinds of pies I'd never even thought of before, and I'm a pie person! Great photos, unique recipes, and all kinds of pie crusts! Sweet and savory and chiffon or berry - I'm really impressed with the variety!

There are pictures that show what different dough should look like while mixing and after baking. It also defines terms around baking that are less common but very helpful! It's a thorough guide to all sorts of decorating and delicious sounding recipes.

There is a lot of great information in this book for any pie baker!

I now need another book added to my collection. This pie book is the real deal. From the pictures of what your dough should look like to all the information included you need this on your shelf. I loved the wide variety of crusts and techniques. I own quite a few pie books but this might be my go too. I do feel it fits a wide variety of baking skill also!

GIVE ME PIE! Absolutely love everything pie related. Can honestly say I am excited to try out most of these recipes and tricks to make the best pies ever.

This is an amazing resource. The photos are great and they gave me so many ideas on decorating. Evan the plane apple pie Now has 30 was to spice it up,. This is great using up panty ingredients. This helped my crust turn out amazing rather than its normal flat.

I had the opportunity to review two different huge pie cookbooks that premiering this fall, this one and Pie Academy. I was curious to see which one I'd recommend over the other but ended up feeling that they are both five star cookbooks with their own strengths. The other has far more recipes and is more old-fashioned advice. This one is more modern and boasts gorgeous color photos of every single pie recipe, plus has features like recommended crusts and finishes for each.

The photos are all over-the-top styled and beautiful. In some cases, it's hard to tell how to get the effect from the photo since the recipe is for the basic pie and not necessarily for how she did hers. For instance, the blueberry pie had me confused because it shows fresh blueberries and white "berries" on top, along with shaved lemon peel. It doesn't call for anything white (or shaved lemon peel) and the suggested finishes don't mention it, so I couldn't figure out if she somehow iced blueberries or if they were something else. Later in the book I saw that she used some decorative white balls (like those edible cake pearls) on another pie and realized that she must have scattered those on the blueberry pie for effect.

Gluten free and vegan crust recipes are provided, and many of the filling recipes are gluten free and/or vegan. Savory pie recipes are also included. No nutritional information is provided.

This book will give you lots of tools to make different crusts, fillings and finishes. There are quite a few recipes that I'm looking forward to trying.

When this book is released towards the end of the year, it will undoubtedly become THE Book on Pie - the definitive collection of the delicious pastry treat. Nothing even comes close. The recipes are comprehensive, and I like that the author gives options for pairing various crusts with the different fillings, providing an almost infinite number of possibilities. She also helpfully marks each as to degree of difficulty, so novice cooks don't get in over their heads. Mark Weinberg's color photography of almost every single pie offered made me gain 10 pounds just drooling over them. A must have collection.

I could write an entire essay on how great I think this cookbook is. It has everything I would ever want from a cookbook on pies; it is incredibly informative and helpful and is almost like a cookbook and textbook in one! It goes quite in depth about the crusts, which is the most difficult part of making pies, breaking down every ingredient, technique, and question you can possibly think of and there are photos of what you should expect the dough to look like. There is a table breaking down how much of the different crust recipes you would need for different sized/shaped pans, which I though was amazing. There is also great information on how to make the pies vegan or gluten free. The same goes for the decorating section where there is amazing information, tips, and photos to reference. For the fruit pie section there is a ton on substitutions, types of fillings, and tips on how to cook them. Then there is a section on custard pies where it tells you all the different types of custard pies, and most importantly explains how to fix issues with your custard and how to avoid them. The next section is cold-set pies, which to no one's surprise, provides so much useful information on techniques, tips, definitions, and types of fillings. The last section is on savory pies, which was such a nice surprise! You don't usually think about savory pies, especially when looking at a pie cookbook, but there are so many different and delicious looking ones in here.

Some great things about these recipes is that for each one there is extra info to help you make it perfectly. It starts with a little blurb explaining the pie and the flavors. There is a section that tells you the difficulty as well as the size it makes (how many is makes and in what size pan). There is also a "Make Ahead and Storage" section that tells you how far in advance you can make things, when it's best eaten, and how to store it or reheat it. For each filling recipe there are recommended crusts, which I love because you may not love a crust they choose to pair with it, but this way you have options! There are also recommended finished (toppings), which is also super helpful. Lastly, some of the recipes have an extra note to help you perfect the pie and some have variations, which is not only helpful, but also allows you to play with flavors if you've found a favorite pie and want to change it up a bit! There are also photos for almost every pie in the book, which look amazing and make a great reference for how to assemble/decorate your own pies.

I can go on and on about this cookbook. It seriously amazes me how much thought and planning went into this and it is just a perfect book in my opinion.

If you know me, you know I love a good cookbook! I also love when a book is based on one thing because that means we get a lot of variations. I have a love and hate relationship with pies and this book gave me so many options to choose from. Definitely give this book a try!

Just in time for Thanksgiving, The Book on Pie: Everything You Need to Know to Bake Perfect Pies by Erin Jeanne McDowell is being released. This book is amazing. It includes ideas for pies that have never been thought of, and there are dozens of new ideas for pie makers who are experienced, and also beginners. The vast number of recipes for pie crusts alone are impressive; who knew there were so many different crusts. Recipes for toppings are also impressive and include dozens of new ideas, including glazes. The book includes a chapter on decorating pies, including lattices, cutouts, etc., which will make every baker stop and rethink their latest pie project.

Of course this book is all about the actual pies, and McDowell has outdone herself with not only traditional pies, but also unique and innovative pies that will amaze even the most skeptical pie makers. McDowell definitely thinks outside the box. There are so many types of pies – fruit, syrup, custard, meringue, etc.; they are mouthwatering. And there are several savory pies, too, that look delicious. The instructions are succinct and easy-to-follow, and they actually work.

Another plus to this cookbook is the beautiful photographs of the pies. Not only are the pies gorgeous, but they are obviously actual pies made in a kitchen with a few flaws just like the pies we will be making in our homes. (I’m always suspicious when photographs are absolutely perfect, because we all know that no recipe comes out as flawless and is often retouched). The photographer, Mark Weinberg has done a phenomenal job and will make readers and bakers excited to choose something to bake.

There is something for everyone in this beautiful pie cookbook. It is one that every baker should keep on their shelves.

Calling all pie lovers! You do not want to pass this book up!

Erin McDowell's The Book on Pie is just that and more. I have never come across such beautiful, unique, non-traditional, not to mention delicious pie recipes. There are pie flavour recipes in this book I had never imagined - like Root Beer Float, Watermelon or PB & J. Of course there are the more traditional recipes too, but the 'outside of the box' pies stand out.

You will be mesmerized by the photos in this book and creative pie presentation. The Book on Pie is coffee table worthy and is bound to spark conversations when company comes over. Actually, these pies are exactly what I would make when hosting any gathering: birthday, dinner party, Thanksgiving, or to impress work friends at a potluck.

My kids were naturally drawn to the Birthday Cake Pie . . . and the Triple-Chocolate Caramel Truffle Pie. I will probably start by making the Pistachio Cream Pie, a flavour from my own childhood.

This cookbook is truly a work of art and will turn your desserts into café quality creations to please the toughest crowd.

It's so creepily-awesome when a book comes into play at the exact moment needed. I had made my first pie in years over the Memorial-day weekend (sweet potato), and I wasn't happy with the presentation and had some questions on pie crust -- The Book on Pie answered all my questions, and as I look at my ingredients on the counter (strawberries, lemon, and rhubarb), I'm excited to try another pie and using the instructions in this book. Great photos with instructions, simply laid out, tips and tricks that hopefully will let my pies be perfect - human error aside - this book as renewed my excitement. I've reviewed other pie baking books and they were also great, but my aging brain can't remember a bake I don't normally gravitate to. However, The Book on Pie has kick started the possibility of actually making lovely consistent pies. It's a great resource to have.

This book was beautiful! The pictures were beautiful to look at, the instructions were clear and concise and this book just makes you want to make all the pies! I'm a patisserie student and we have pies coming up in the course so I'll be bringing one or two of these recipes to class to trial.
