I gobble up any new vegan cookbook. I have been a vegan for 49 years and I was impressed with the variety and simplicity of these recipes. This is not only a must have for new vegans but also caters to long time vegans who are looking to change up their meals with affordable, simple and delicious recipes. If food is flavorful you will attract even the diehard meat eater to take a look. This book does that.

I love recipes that use few ingredients, so I was excited about this title, and it didn’t disappoint. A great selection of healthy vegan recipes with only a maximum of eight major ingredients that should have something for everyone looking for simple yet delicious vegan food.

This is a wonderful vegan cookbook with great ideas and recipes. The pictures of the recipes are mouth-watering! I can't wait to try them out!

MAN FOOD
I can’t lie. My hubs cooks nearly all our meals and he makes Man Food, as he wittily calls it. Nary a veggie nor fruit touches our plates, save taters or corn, as real men eat carbs! 🥔🌽

MOUTHWATERING
That said, I could be a vegan in a heartbeat and in a younger healthier iteration of myself, I nearly was. So I was thrilled to review THE VEGAN 8, bursting with 100 recipes made with just eight — count ‘em — eight ingredients or less. My heart went pitty pat just thinking about it, indeed it did, because these are mouthwatering, beautifully photographed creations!

TO SWOON FOR!
I’m talking ‘bout Elevated Avocado Toast, Pumpkin Pie Crepes, Cuban black bean stuffed sweet potatoes, Skillet Baked Mac n’ Cheese, even No-Bake Chocolate Espresso Fudge Cake. Oh my! Now I just gotta take over our kitchen and get to work. Thanks to THE VEGAN 8, we ain’t just eatin’ Man Food no more! 😁

This was an excellent primer to help get you ready for a Vegan Diet. I was able to gain a lot of valuable insight and lots of lovely recipes.

Awesome cook book, loved the new ideas. It was a different experience for me to look at a cookbook over my kindle but it wasnt all bad.

Enjoyed this. Great to see some different recipes for Vegans as I feel a lot of recipes are repeated in other places. For health/dietary reasons I try to eat vegan when possible although it's not a natural habit for me my body and health thanks me when I do and some of these recipes make it much easier to do.

This cookbook is a God-send! Part of the wonderful part of cooking Vegan food is creating things that are delicious through spices and lots of vegetables. The downside is that so often the ingredient list is LONG. This cookbook is great because the ingredient list is a great size for each recipe! Definitely worth picking up!

As a vegetarian I am always on the look out for fun interesting recipes, I'm trying to go a bit more plant based these days and so I jumped at the chance to give this one a go.

its packed full of fairly simple recipes that dont require tons of ingredients. Lots of pictures and its all laid out easily in an easy to read format.

Have cooked a few recipes from this book now and have been really impressed.

I love this cookbook. My husband and I became vegan last year and this is such a great collection of easy to follow, everyday recipes. This would be a great starter for people who even want to just add more meatless, plant based options to their weekly rotations.

Brandi Doming starts off by explaining the reason why her family chose to switch to this eating style. I loved that she shared her story and it’s clear that she actually uses these recipes in her own home. She then goes on to include her favorite pantry staples: spices, sweetners, non-dairy milks/yougurt, nut butters, nuts/seeds and flours. I really enjoyed this section and learned about a few new products to look for.

The recipes are fantastic. All include only a handful of easy to find ingredients with minimum prep. Each one starts by listing if it’s oil free, gluten free or nut free. Doming then adds a paragraph where she describes each recipe. I always enjoy reading these. It truly makes everything more personal. She also include the nutritional info and a few tips along the way. I love when cookbooks include good info, easy to read layouts and eye catching, beautiful photos to help you visualize everything.

My husband and I sat down and went through the 100 recipes together. We truly found so many that we are excited to try out. Our favs include: Orange-Vanilla Waffles, Spice-Is-Nice Baked Oatmeal Squares, On-The-Go Lemon Poppy Seed Muffins, Chocolate-Cherry Granola, 20-Minute Alfredo, Mexican Tahini Chickpeas, Pizza Quesadillas, Thai Peanut-Sesame Sauce, Sweet Chili-Mustard Sauce, Skillet Baked Mac ‘N’ Cheese, Almond-Coated Asparagus With Dijon-Tahini Sauce, The Best Fluffy “Buttermilk Mashed Potatoes, Sweet Potato Cornbread and Sesame Teriyaki Sauce.

Needless to say, I’m definitely buying a copy and recommending this new cookbook to all of my friends!!

Written by popular blogger Brandi Doming, this is a gorgeous cookbook for vegans or anyone who wants to follow a more plant-based diet. It includes 100 recipes with short ingredient lists (8 or fewer ingredients) that are clearly labelled dairy-free, nut-free, gluten-free or oil-free. All ingredients are fresh (no "fake" meats / cheeses etc). Every recipe is accompanied with a stunning photo which I find brilliant because, personally, I've never made a dish from a cookbook when there wasn't a photo.
A wonderful addition to your library if you have special dietary restrictions or you want to include more plants in your diet!

I have followed Brandi Doming's blog and Instagram for year, using her recipes as an easy transition to plant based living. The first recipe I tried from this cookbook was One Pan Red Curry with Carrots and Spinach. It was INCREDIBLE! Thai red curry has been a long time obsession and this simple, no fuss, delicious version deserves all the stars!

The Vegan 8 Cookbook is a new staple in my kitchen, just as the recipes from Brandi’s blog have been over the past two years of my plant-based journey.

I wanted to review this book to see if I could convert to veganism and support my partner's vegetarianism with a few new recipes.

Did it deliver? Sort of. The title sells, "simple" recipes with "8 ingredients or less". I didn't feel the book delivered on this promise.

I didn't find the ingredient lists simple, and I had to look to make sure there were less than eight ingredients. Okay, there are.... but.... most aren't quick or simple. The first chapter of recipes (breakfast) didn't appeal at all. Most were the kinds of breakfasts I'd maybe make if I were running a ritzy bed-and-breakfast (one even named with this in mind), but not everyday meals where I have maybe 15 minutes from start to finish.

The book shines with the sauces and dressings (I literally bookmarked each one), and then the dinners (where I wanted to lick the page). A note, too, that folks with gluten issues will appreciate the ingredient lists, although if you're on a celiac or grain-free diet, this book won't support your needs.

I've yet to make anything from the book -a true test of a cookbook. Still, it might be awhile, since many of the ingredients aren't readily available while traveling full time (as I do). Once I have tested at least one recipe, I'll update this review.

Absolutely one of my top favorite cookbooks. I love that theres not a million hard to find ingredients in every recipe.

A very interesting collection of vegan recipes. They look simple and delicious, and the photographs are just beautiful.  The recipes will be especially useful if you enjoy Tex-Mex flavours. The book is well organised into clearly defined sections (such as breakfast, entrees, soups and stews...), and the recipes are labelled with regard to their being gluten-, oil- or nut-free. If I had to recommend some recipes, the stews seem particularly appetizing.  There is also a dessert section (although I will admit I am always wary of vegan desserts). 

A good gift for a friend who enjoys cooking vegetable-based meals.

I am not vegan. However, I do have some friends that do practice a vegan lifestyle. I was curious about the book mostly because of my last fiasco dinner where I made a pineapple thai curry recipe that included fish sauce and a vegetarian lasagna with cheese. Therefore the meal was not vegan and I felt really terrible about giving my vegan guest a salad with vinegar, salt, and pepper since my pesto salad dressing also hid some cheese. I didn't think you could make so much with only 8 ingredients so I was surprised by the breadth of recipes. Since I am not vegan, I had to find a few of the ingredients. Recipes were good bases that I tweaked a little to get the taste our family prefers. However, I'm glad I have a few dishes I can use when our vegan friends come over.

Recently, a doctor told me to eat a plant-based diet for health reasons (related to kidneys). Then, along came this collection of ideas for vegan meals with EIGHT OR FEWER INGREDIENTS! My reaction: sign me up!

I haven't tried all the recipes, but many of them look terrific. The format is nice, and it is a non-threatening way of getting this helpful information out. I expect the print version will be more visually pleasing than the digital, but either way, it's a great tool. Five stars.
