First of all, this book has gorgeous photos. Everything looks so vibrant and fresh and delicious. They made me want to cook every single recipe! Everything I cooked was just as delicious as I expected.

Lovely! Some wonderful recipes here, lots to bookmark. I like the way it's divided into sections such as veg + grains, veg + rice, etc, my favourites being veg+toast and veg + eggs. Some truly yummy looking dishes, with nothing too difficult. The only minor niggle for me is that a few of the ingredients are not available where I live except perhaps in the major cities, but I'm sure they are easily substituted. It is aimed at the US market, but apart from those few ingredients easily useable by anyone, anywhere.

I'll be honest- I wasn't a fan of this cookbook. I felt very uninspired to make anything from it. Many of the recipes seemed to build on a similar formula, and had an especially Asian-leaning flavor palette (which of course, is ok, but should either be identified as such, or have a Asian-inspired chapter). Overall I wasn't very interested and didn't end up making anything from the book.

Excellent resource and guide to cooking simple vegetarian dishes or for those wanting to increase their veggie intake! Great photos and easy to follow recipes.

Fascinating The images included in this particular book make vegetarian cooking looks so appealing and accessible. My only regret while reviewing this cookbook is not trying more recipes. Many of the recipes seemed fairly straightforward and easy to do. I really enjoyed this cook book and am definitely considering adding it to my personal collection. It would be a nice addition to any individual trying to clean up their eating habits.

This cookbook is not only beautiful but a kitchen essential. Full of delicious recipes, Susie Middleton provides the how-to on making healthy, great tasting meals. I love that she also teaches building meals from what you have on hand, not just from a recipe. Perfect for all cooks and those looking for fresh, tasty ideas!

Simple Green Suppers by Susie Middleton had me at one-dish dinner. That is my kind of cooking! I love the wonderful vegetarian recipes, neatly separated by eating them with pastas, grains, etc., and detailing what goes well with each. Lots of the recipes are easy enough to pull off even for a basic cook like myself. Beautiful photos, though not every recipe includes a photo of the completed meal.

Disclaimer: I am by no means a good cook. I am actually a novice when it comes to cooking.

Simple Green Suppers... There is certainly a lot of green in this cookbook. While a lot of the recipes aren't simple, at least for me, it really does include a lot of fresh ingredients. My favorite section was the toast. I
love coming up with new ways to do toast. (As breakfast is my favorite type of meal.) I was able to find the majority of recipes that I would like to try out in this section. I also found a couple of other recipes in other sections, but very few. The other recipes sounded delicious, though, and I enjoyed reading through them.

Author Susie Middleton has written a very practical vegetarian cookbook as her recipes focus on one-dish meals. Anyone who has done a lot of cooking learns to appreciate the ease of one-dish meals as there is little clean-up afterwards. Also, one-dish meals tend to be fairly easy to cook as everything goes into one pan speeding up the time at the stove.

I like how Middleton tells about her easing into the vegetarian diet as she says she started eating less meat until one day she realized moving onto the vegetarian diet would not be much of a change in her eating style.

As to the recipes the author wrote all the recipes in her cookbook could be prepared in an hour or less and most recipes could be prepared in 45 minutes or less.

In Simple Green Suppers, Middleton urges readers to start The One-Dish Veggie Supper Strategy. With the One-Dish strategy, you no longer need to worry about the three things on a plate rule, explains Middleton, using the one-dish approach your meal will be easy, stress-free and full of complimenting flavor.

Middleton suggests adopting a formula called veggies + 1, for instance:

veggies + noodles
veggies + grains
veggies + broth

to name a few. These recipes are simple, and easy considering you are now making one-dish meals apart from a main dish plus a side or two. These recipes are not only healthy but flexible often easy to substitute one ingredient for something similar which everyone will be able to appreciate at one time or another.

Great cookbook in a simplified format. Chapters combine various vegetables with a main staple such as vegetables and noodles or vegetables and toast. A cookbook that inspires from the first pages. I tried the Mini Savory Bread Puddings (could not resist that photo) and the result looked almost identical with the only difference being ramekin style. Also made the Spiced Lentil and Sweet Potato soup. Both recipes were warming, tasty and fun to make. Will definitely be trying many more recipes from this book.

I love the formatting of this book and how the recipes are broken up. Simple, green, recipes without being bogged down with "zoodles," but real grains and noodles paired with lots of veggies.

While this book may suit the needs of a few, it is not the ideal choice for a public library where people generally are looking for simplicity. Best wishes to all. I am sure you will find your audience.

As someone who lives with individuals who believe that a meal isn't a meal without meat, I'm constantly looking for ways to incorporate more vegetables into my everyday diet. This cookbook takes everyday, available vegetables and elevates them. I especially liked the way the chapters are organized and really enjoyed the "For the Pantry' sections. Nicely done!
