I expected more vegetarian recipes for a book with such a large "vegetables" section. Alas, many of the recipes in that section include meat. The recipes are easy enough. The photos included are great, but there is not a photo for every single recipe which is a huge pet peeve for me with cookbooks.

How much time are you willing to spend on dinner? If it’s an hour or less, you’ll want to pick up Elettra Wiedemann’s Impatient Foodie: 100 Delicious Recipes for a Hectic, Time-Starved World. The recipes are not only easy-to-follow and quick to make, but they are for dishes that people will actually want to eat.

Wiedemann is the founder and writer of the popular and delightful blog Impatient Foodie. This cookbook includes several of her recipes that are on the blog, as well as others that aren’t, but are worth having. Wiedemann has successfully come up with a formula to create quick foods that taste like they were made slowly while at the same time reducing the amount of meat consumed and adding more vegetables, grains, and other healthy options. The recipes are unique, healthy, and delicious. Wiedemann uses timesavers like rotisserie chicken, cake and brownie mixes, canned beans, bottled sauces, and even frozen whipped topping (which is, to this cook, a bona fide food crime and one which I refuse to use even though she may use it). Her recipes run the gamut from kale and trendy vegetables, to mouthwatering fish dishes, to lamb and chicken, as well as a shortcut zucchini bread recipe (made with a pound cake mix), to homemade ice cream.

Favorites include Claudia’s Salmon Burgers (the best), and Almond-Crusted Cod on a Tomato and Avocado Salad. Quick Kuri Squash Soup with Bacon and Goat Cheese was easy and good, and her version of the trendy and ubiquitous Shakshuka includes kale and is excellent.

All told, Impatient Foodie: 100 Delicious Recipes for a Hectic, Time-Starved World is an excellent, timely cookbook that will be enjoyed by both beginning and experienced cooks. The pictures are beautiful, the recipes are mouthwatering, and there is enough variety to please even the most picky eaters.

I really wanted to love this book. I wanted it to be a great way to get good food quicky, because I live the life of a single mom. Unfortunately for me, I feel this book fell a bit short of that. While I imagine this book was meant to be a guide to fast, yet healthy food, it was way more complicated than it made it out to be. The word impatient in the title gives me the impression that it's going to be food that is quick to make. While some may have a prep time that is low, it was not typical food. It was complicated, detailed meals that I am not sure my family would enjoy.

So I gave it a try. The meals were good, but again, not as quick as the description made it sound. There was also a lot of non-recipe portions in the book. More than I would find appealing. I would like more recipes, and less reading about the authors life. I feel that should be another book, rather than mixed in with what is considered a cookbook. The food did taste good, but again not something I would find myself making often.

With that said I always encourage people to try a book (or a cookbook in this case) themselves before judging simply from a cookbook. The food is good, so it may be just what someone is looking for. Check it out and let me know if our opinions differ.

I’ve been hearing buzz about this cookbook, Impatient Foodie by Elettra Wiedemann, for some time now. Not having been a follower of her blog, I was intrigued. Short on time? Check. Want delicious food? Check. And… bonus points for bridging “the gap between the ideals of the organic, slow food movement and the realities of a busy life.” Check, check, check.

In an ideal world, I’d have a few hours to prepare meals every day. Taking it slow, enjoying the process. But, honestly, that just isn’t my own personal reality. I work 12 hour shifts on the days I’m in the office and that doesn’t leave much time for anything else that falls on the fun spectrum. I was intrigued, then, when the opportunity to review this book came up.

First thing I noticed was the organization, which I liked very much. The sections are broken down by vegetable, protein, fruit and desserts. The major sections are then broken down by the individual component. Asparagus, beets, broccoli, etc. Handy. I can’t tell you how often I impulse buy something at the farmer’s market and then need to figure out what to do with it.

Getting into the recipes, I was pleased. Healthy. Simple. Quick. Delicious-sounding. I had no trouble finding many to add to my To Make list. I can’t wait to dive into the Thai Coconut Cauliflower Soup and the Raw Broccoli Salad with Sesame Dressing. And the Apple Brie Bacon Grilled Cheese? Oooooh yes. The proof shall be, as they say, in the pudding but I’m excited to get cooking. The recipes sound wonderful.

Impatient Foodie has gained a new follower.

Elettra Wiedemann is a food blogger who has been featured in numerous publications. I was happy to learn that she just published a cookbook and even more happy that I was able to get my paws on an early release. Thank you Scribner for providing an ARC in exchange for an honest review.

Chock-full of inspirational and easy to make dishes accompanied by beautiful pictures, this cookbook is a winner. To give it a true test, I tried 4 of the recipes. All 4 contained simple and slim instructions for quick to put together, colorful/fresh ingredients and unique combinations. There are numerous others that I will not hesitate to make - I already have my shopping list done to try four more! I love the simpler, healthier way of cooking and the reassurance that I am putting good things into my body.

This was a fantastic cookbook, and one I plan on purchasing a hardcover copy of. It was filled with easy, accessible recipes that would appeal to everyone.

Impatient Foodie is the cookbook made for anyone with the desire to eat delicious, healthy and interesting foods without the time to prepare them. There are a variety of different recipes to choose from, with a focus on fruits and vegetables, meats, and desserts. Weidemann takes the sustainable food movement to a new level, and has created easy to follow recipes that make it simple for those of us who are too impatient to cook nutritious meals.

I am always struggling to find ways to eat food that is both good for me and quick to prepare. Throw in a desire to eat something locally, and I have no idea how to begin. I love the fact that Weidemann takes the guilt out of what and how I eat through her easy and down-to-earth approach to cooking.

There are so many more recipes that I look forward to creating, that I think I have bookmarked every single page in this one! However, I narrowed it down to a few things to try for my review and every single recipe was quick and flavourful. The Banana Cardamom Oatmeal is one that I have actually made a few times, and if you are a fan of morning oatmeal, this is one that should be on your radar. It is cooked with coconut milk and the addition of cardamom, banana, and pistachios give it a yummy and rich flavour that is so perfect for kicking off the day.

Soups have always been a weeknight staple for me, as they are typically simple to prepare and provide a filling meal on a busy day. The Thai Cocounut Cauliflower Soup in this cookbook is absolutely incredible, and it has so much flavour that comes simply from the addition of red curry paste. It is a must try if you plan on making anything from this book.

Last night, I made the enchiladas and I was surprised at how quickly they were to assemble. A rotisserie chicken makes the task so much easier that I am planning on using this tip more often. Unfortunately, I forgot to take a photo (they are that amazingly distracting!), however I discovered Weidemann has posted the recipe on her Facebook page.

If you are interested in trying to eat healthy and do not have the time to do it, this is one recipe book that you should check out. It is simple, straight forward and really helps to make a foodie out of anyone. I look forward to creating more recipes from this one!

I wasn't expecting to find such simple but cool recipes in this book -- mostly because when I read 'time saving recipes', they seem to be so similar; however, authors of those recipes haven't described themselves as "foodies" which is perhaps where the difference comes in! I really liked the layout of the book -- photos, simple numbered instructions, and recipes that even I could follow (and make them look as good as the recipes). I loved the "Beet Gratin with Gruyere and Goat Geese", although some recipes had store bought ingredients (like cake mixes) thrown in (time savers of course!). It's nice to have recipes ordered by ingredients; overall the recipes are at the same time memorable (in simplicity - easy to remember for next time) but I'm not sure if many readers would lean towards store bought ingredients/time savers versus whole foods.

I don't own a lot of cookbooks and in this day and age with the internet and blogs and Pinterest I'm sure there are a lot of people like me. But every once in a while I see one that has a recipe that sounds really interesting. And then I turn the page and there is another one. And when I keep turning pages and see all these beautiful photos with these great recipes that I even I could make I'm sold. These are not labor intensive recipes that have weird ingredients that you have never heard of or will never find. And the best part is that you can make them in a fairly small amount of time. If you are tired of ordering fast food, spending way too much money for home delivery meal services I highly recommend you give this book a try.

Wanted to like this, LOVED the idea of it. Just wasn't for me. Box mixes are what I am trying to stay away from when I think of Healthy. I want quick and all natural, organic.

This is a book that does precisely what it sets out to do - it promises tasty recipes for those who may feel a little energy and time-strapped, and does exactly that with a surprisingly rich array that should cater to most tastes. Wiederman does an especially admirable job to make sure that vegetable-centric dishes receive center stage, not only ensuring a hefty variety of dishes for her readers, but a very healthy variety as well. Even better, all the ingredients she calls for can be easily procured by anyone with access to a supermarket (unlike many "foodie" cookbooks that load their recipes with high-end and uncommon items that require several trips around town, possibly a few online purchases, and a dent to the wallet all for the sake of a single dish).

Definitely worth your time to at least sit down and browse through, as you'll probably end up being quite surprised by how many potentially inspiring meal ideas it will toss your way.

Lovely colourful recipe book. I love that the recipe book is split into vegetable types with recipes dedicated to each vegetable, fruits and specific foods.

Disclaimer: I am by no means a good cook. I am actually a novice when it comes to cooking.

This cookbook has recipes that are my easy way of making something that's more fancy than what I would usually attempt to try. Almost every recipe has an illustration and I found more than a few I'd like to try. The only downside for me is that the instructions on some of them are listed and grouped in a way that I might get lost. (Might being more than likely... or definitely. I'm trying to be optimistic.) I would have liked the format to be a little easier to follow.

Well designed and organized, this book sorts recipes by ingredient. Recipes don't call for many odd-ball ingredients, which may please chefs on the go. Personally, I did not find many recipes I want to try, but that doesn't mean others won't enjoy it.
