Karen Ansel's Healthy in Hurry is chock full of simple recipes with great illustrations. Yes, the recipes are simple, and anyone with experience cooking wouldn't need this cookbook. However, you have to look at the target audience: young adults just starting out. When my husband and I were first married (precociously young and headed off to grad school early), someone gave us a series of cookbooks with titles like The Three Ingredient Cookbook, The Four Ingredient Cookbook, etc. The recipes were cheap to make but left a lot to be desired as far as taste and health went. Healthy in a Hurry would be much better choice now for young adults/older teens.

Loved this book so much! As someone who loves cooking, I'm always searching for new recipes and cooking advice and this book is full of great recipes. I especially liked how simple most of the recipes are, and that the book also offers a lot of useful information on how to eat healthier, how to combine different recipes for a varied menu throughout the day and get all the nutrients you need.

OK if you don't mind changing your diet and eating a lot of food you and your family may not be accustomed to.
