I was excited to receive a copy of this book from netgalley in exchange for my review.
I LOVE my electric pressure cooker. I had it for several years without touching it because I didn’t know how to use it, and I wasn’t convinced the recipes would be any better than the ones where I spent all day cooking them. I recently began using it more and have also been searching for more healthy ideas, and recipes that were more than just beans, soup, and roast.
This book includes both. It also includes an overview of the instant pot and a guide to the accessories that are needed for the recipes. I loved this because most IP cookbooks I’ve gotten include one or the other.
It also has a wonderful rundown on the ketogenic diet, a Keto friendly food list, and a section on ketosis, which is great for beginners who might not be familiar with more than a general idea of ketosis, like me.
But back to the real reason we’re here- the FOOD.
The breakfast section included both sweet and savory recipes and I’m ready to try them all. Muffins, various types of eggs, PUMPKIN SPICE LATTES. The main courses were pretty much all immediately written into my meal planner. A major bonus to this recipe book is that if the recipe calls for a sauce or spice rub, it doesn’t refer you to a secondary location, it’s included in the recipe. I hate turning back and forth as I prep.
I loved the sides and appetizers. They’re all suitable for fancy potlucks and entertaining, as well as just a regular night at home. And the desserts? Even your non Keto friends are gonna need the recipe.
But my favorite things of all were the tips for every recipe that we’re extra advice to perfect the recipe for IP beginners, and suggestions for variations to change some of the recipes up. And more importantly, queso. The queso recipes are the first on the list for me to make.

Basic book with recipes that I have actually seen before. The recipes are done simply which makes it easy, but it really isn't any new recipes that I havne't seen before.

I have been following a Keto lifestyle for about a year now and bought my first Instant Pot this year as well. I was amazed when I saw this book and instantly knew that I needed it.

The instant pot makes preparing dinner a breeze but all too often I have to adjust my own recipes because there are not many Keto ones already adjusted for it. This book changes that. It begins by giving an overview of what Keto is and how it works. I love that it begins with this. Keto is becoming more popular and I feel it is easy to read a quick summary instead of scientific papers as I have. It not only gives an overview of Keto but also ventures into how to use your Instant Pot. This...this is incredibly useful. It can be intimidating to use the first time, but this is a wonderful tool for beginners.

Aside from informative, this book brings delicious looking recipes. The images are so bright and colorful that my mouth watered looking at some of them. Broken up into meal categories, it is easy to find a recipe for anything you are looking for.

This book is a must-have tool for Keto beginners. It will become your most used recipe book for sure but remember it is much more than that.

Keto and Instant Pot (IP) are all the rage now and cooking Keto is easier than you think, once you learn how to substitute carbs and sugars with healthier ingredients. Not to mention the IP speeds up your cooking time. This book is a great foundation to give you some recipes to begin with and ideas on how they are substituting things like cauliflower for rice, etc. AND if you're not using that IP you got for the holidays, this is going to help you get started using it...often!

Nothing earth shattering recipe wise in here if you are a seasoned Keto cook, but trust me, that IP is your new best friend! I use my IP often, but never thought about making things like a frittata in the IP, so I got some good ideas as well. I'm planning to make the scotch eggs today!

A great book to get you started on both Keto and using your Instant Pot!

Books like this are dangerous. They work for a little while but the diets don't last. They are also unhealthy and misguide people. There is no simple solution but to eat well, healthy and exercise.

Recently started a Keto diet, which i thought would be easy, but yah there are hidden carbs in so much shit. So i have turned to cook books so i don't have to think and i can just make something i know won't be loaded in the end. And with an Instant Pot, you can make it quicker, and not have to worry about standing over a stove.

Whether you follow a keto or gluten-free diet, Keto in an Instant has spectacular recipes you will want to eat.

After a short introduction to the keto diet and the Instant Pot, the book has a multitude of recipes for breakfast, dinners, soups, stews, sides, salads, snacks, appetizers and desserts. Most of your momma’s comfort foods are here. Meatloaf, chili, carrot cake, and beef stew are just a few examples. Your favorite snacks like buffalo wings, poppers, and artichoke dip are also included. My personal favorite is the Cheesy Garlic Cauliflower Flatbread that looks exactly like real bread but has only 135 calories and 2 net carbs per serving. The author suggests using the flatbread for pizza crust too.

Due to the low carb count in these recipes, none have more than 500 calories per serving with most less than 300. Most of the recipes take less than an hour to make and much of that time is when the Instant Pot is cooking by itself. There are full calorie, protein, net carb and fat counts for each recipe. For those people also avoiding dairy or soy, there are easy options to substitute ingredients. Best of all every recipe has a full-color picture to drool over.

Keto in an Instant is great for Instant Pot owners who are also keto, gluten-free or just want to eat healthier while losing some weight. 5 stars!
