The Ultimate Instant Pot® Cookbook for Two: Perfectly Portioned Recipes for 3-Quart and 6-Quart Models by Janet A. Zimmerman, makes it possible for those who have small families – couples, single mothers (or fathers) with a child or two, or a couple of roommates - to jump on the Instant Pot bandwagon and save time in the kitchen. The recipes work in the Instant Pot as well as smaller electric pressure cookers, and there are enough mouthwatering recipes to tempt almost everyone.

There are several advantages to using an Instant Pot or a similar appliance, not only because these wonder pots are a way to prepare meals quickly, but also because they don’t heat up the kitchen during the hot summer, they are portable and can be taken to a vacation home, and there is less clean-up and no stove to scrub.

Zimmerman has included a variety of dishes, some that appeal to almost everyone: gluten free, vegetarian, poultry, meat, and fish dishes, side dishes containing pasta, rice, and potatoes, delicious risottos, and basics like chicken stock, applesauce, hard-boiled eggs, and marinara sauce. There are dishes from countries all over the world, including the Middle East, Thailand, Italy, Japan, China, Mexico, France and North Africa. There are also all-American dishes – Clam Chowder, Shrimp and Grits, Cod and Green Beans with Dill Mustard Sauce, and Carrot Cake.

The instructions are easy-to-follow and are suitable for cooks at all levels – beginners to advanced – and since Instant Pots are so easy to use, cooks may quit using their stoves and ovens altogether.

Although there aren’t photographs of every dish, the photos that are included are very well done, and make it difficult to choose what to make next. It would be nicer if there were more photos, but with great cameras on cell phones, cooks can take their own pictures. There are plenty of helps and hints to make it easier to use using the electric pressure cooker, and this excellent cookbook will be instrumental in helping cooks improve cooking skills.

All told, this cookbook is one that belongs in every cookbook collection of Instant Pot owners and small families.

This was a very well written cookbook. I found the layout to flow well and the recipes were easy to understand and follow along to. I look forward to trying some of them out for my family.

The Ultimate Instant Pot Cookbook for Two is a new tutorial cookbook and guide aimed at recipes with smaller portions for two (or for one with some leftovers) which uses the Instant Pot brand programmable multi-function cookers. Released 26th Feb 2019 by Rockridge Press, it's 275 pages and available in paperback and ebook formats. Author Janet Zimmerman is a food writer, educator and blogger who is one of the creative writers behind The Spruce Eats.

I'm on the verge of being an empty nester. Our three kids are (mostly) grown and away at school or other activities. Additionally, we have a little more relaxed schedule now and can spend a little more time and be a little more adventurous with meal prep.

The book is lushly illustrated and written in an accessible easily understandable style. There is a really good introductory chapter about the subtleties of portion cooking with a pressure cooker and control when cooking for two; if a recipe calls for half a fennel bulb or half a can of tomatoes, she has suggested recipes for using up the excess at a later point in time whilst the ingredients are still fresh. This helped a lot with meal planning for me.

The chapters are arranged thematically: breakfasts, vegetables and sides, beans and grains, meatless main dishes, seafood and poultry, beef and pork, desserts, and kitchen staples/sub-ingredients to be used in other recipes. I didn't count the number of the recipes included, but it must be over 80, possibly closer to 100.

The instructions (especially the introductory how-to's aimed at operating the instant pot itself) are easy to follow and logical.

I trial tested three recipes on my 6 quart ultra. All three came out perfectly, and there were no leftovers to speak of.

Thai Red Curry Beef was mild and sweet. We had a little bit of sauce leftover but it disappeared as a snack on rice a little later the same evening.

Ginger Oatmeal Muffins were very dense and flavorful. The recipe makes 4 muffins, enough for breakfast and one for my tea break at work. These are quite solid and my husband calls these Lembas (because we're huge Lord of the Rings nerds and that's how we roll).

Browned Butter Risotto is a hearty side dish with a creamy slightly sharp cheddar element. This went very very well with pork chops, some pickles and steamed broccoli.

Very tasty recipes made with easily sourced ingredients.

Four stars, my pressure cooker is getting a LOT more use these days.

I thought this book was a great idea. As a soon-to-be empty nester who loves the Instant Pot, I loved the idea behind this book. It had a nice variety of recipes that were pretty easy to pull off. Expanding the recipes for a crowd if you come across one that’s really good is a little tricky, but with some figuring you can work it out. Enjoyable!

Being that my husband and I are Instant Pot newbies and empty nester this cookbook is perfect for us. Having to learn how to cook for just the two of us now that our children are away at college this cookbook has lots of yummy recipes without a tonof food left over. The recipes are easy to make and over the top delicious.

Well, if I needed a book to almost (yeah, I know that’s a qualification because I can’t commit 😉 ) convince me to get an Instant Pot®, The Ultimate Instant Pot Cookbook for Two by Janet A. Zimmerman might just do the job.

The Ultimate Instant Pot Cookbook for Two goes well beyond being just a cookbook. It tells you about useful accessories for your Instant Pot® without going overboard; it provides a trouble-shooting section; and there’s a handy little guide with each recipe that’s almost like a little hand-holding for those of us who think maybe the Instant Pot® could go ballistic. Also, it just may well help you decide on the size of your Instant Pot®.

The recipes have a wide appeal covering all of the usual bases, BUT there’s also a meatless section for folks like me! That is such a huge plus as, if even you’re not planning to cut meat completely out of your diet, many are cutting back on their meat consumption so it’s really handy to have these meatless entrees as well.

The recipe sections include Breakfast (oatmeal, muffins, eggs), Vegetables and Sides (salads, potatoes, risotto), Beans and Grains (stews, casseroles, soups, pilaf), Meatless Mains (soup, polenta, tofu, pasta), Seafood and Poultry (pasta, shrimp and grits, chicken salsa verde), Beef and Pork (chili, stew, lasagna), Desserts (custard, bread pudding, cheesecake), and Kitchen Staples (stocks, sauces, basic beans).

At the end are pressure cooking time charts and measurement conversions.

Among the recipes that I personally found tantalizing are: Pimiento Cheese Corn Pudding, Lentils with Red Peppers and Feta (I LOVE feta!), Jamaican Rice and Peas (which I like to cook and can imagine how wonderful it would be to have it on the table quickly), Spicy Sesame Noodles and Vegetables, Vegetable Korma, Maple Nutmeg Custard, and Spiced Peach Bread Pudding. Okay. Now I’m hungry.

I imagine for folks who are more picture-oriented, you might not like that there aren’t pictures for every recipe. Personally I don’t find that a hardship, not when the recipes are mouth-watering by themselves.

I highly recommend The Ultimate Instant Pot Cookbook for Two.

A very practical addition to the Instant Pot library. Great for small meals, which for me is ideal. I received an Instant Pot for Christmas and am still finding my way with it. I think this cookbook is practical and well thought out. Thanks to the publisher and to NetGalley for the opportunity to read and review it.

This is a great cookbook. It combines the just right amount of guidance with recipes. The instant pot can be intimidating if you have never used a pressure cooker before I do believe this book will bring a certain comfort level to the reader.

For some reason when I cook with an Instant Pot I make enough for a small army, I loved that this book scales recipes down to a manageable amount for my husband and I.

Great for beginner and advanced users alike!

This a a good cookbook. Straight forward, easy recipes that are the kind a person would actually make and not some exotic thing no one ever has ingredients for.
I particularly like the times for cooking chart. I am pretty new to the Instant pot and am always at a search for how long to pressure cook something.
She also has included multiple tips on operating the pot, prepping ingredients, planning for meals, and other Instant Pot accessories that a person might like to purchase.
I would recommend this for anyone with an Instant Pot, not just when cooking for two.

With my daughter off at college, I thought my days of using the IP for dinner were over just because all of the other recipes out there were for families - I am so proud to say I'm wrong! With this cookbook, my husband and I can still enjoy amazing meals in just a few minutes with little to no leftovers. THANK YOU!

I was delighted to find a cookbook for recipes using an Instant Pot when you only have two people in your family. It looks like they can be easily doubled or tripled for larger families, so this is something that can be used when your family is young and you can continue using as children grow up and move out.

The book begins with some very welcome information about the Instant Pot and then shares some scrumptious recipes. It is broken down into 9 main categories: Basics, Breakfast, Vegetables and Sides, Beans and Grains, Meatless Mains, Seafood and Poultry, Beef and Pork, Desserts and Kitchen Staples. With everything from eggs, muffins, potatoes, risotto, salads, stews, casseroles, soup, quinoa, stroganoff and more. You may find that you are using your Intsnat Pot all day.

I loved this book and found it very useful.

I really appreciated the into and the author's tips/ tricks. I already tried making the small batch yogurt and small batch applesauce. Both came out really well! Next, I plan to try: Chicken Teriyaki and Rice; Korean Short Ribs, and the Ham & Potato Soup. I really appreciate the author's time in making a cookbook for smaller batches!

Author Janet Zimmeran's The Ultimate Instant Pot Cookbook for Two includes meal planning, shopping tips and recipes for two using your instant Pot. As the author writes she has spent most of her adult life cooking for two. She's also published two pressure cooker cookbooks: The Healthy Pressure Cooker Cookbook (2105) and Instant Pot Obsession (2017). Happily she has written her newest cookbook using recipes for two which I appreciate as hubby and I have raised our family. We are back to just us so I am always looking for recipes just for two.

I recently bought a 3 quart instant pot to cook for 2, so I really appreciate the effort of the author, Janet A. Zimmerman to help us out. She provides a great introduction of how to use the various instant pots and gives great indication of the quantities of ingredients to use to cook 2 servings or to double up a recipe.She also provides recipes and ideas to use up leftover ingredients ( fresh produce, protein) and leftovers to use in other recipes which are also provided in the book., which helps the reader avoid food waste and save money.

The variety of recipes are great as she covers, breakfast, vegetables and sides, beans and grains, meatless mains, and mains that include seafood, chicken, beef and pork. She also provides recipes for desserts and staples such as chicken stock, marinara sauce and rice and yogurt. She also provides cooking time charts and measurement conversion.

I like a cookbook that also includes a photo of each recipe, this book provides some. I think that this is an excellent instant pot cookbook and I feel more confident now to finally unpack m instant pot. The recipes that will try my hand on are: Steel-Cut Oatmeal with Cranberries and almonds, Beet Salad with Creamy Dill Dressing, Warm Thai-style green bean and tomato salad.Minestrone, curried cauliflower soup, teriyaki chicken and Rice, coconut Vanilla Rice Pudding. and so many more.

I like the idea of this cookbook. I recently got an instant pot and so far haven't really loved it, in part because I haven't figured out how to adjust batch size. Both the introduction and the "use it up" hints at the end of each recipe are great. However only a quarter of the recipes caught my eye.

I like the idea of making the Instant Pot more useful to small households but this book was a disappointment.

On the good side the Introduction is mostly helpful and each recipe includes helpful tips at the end for doubling and time-saving.

Unhappily, the recipes just don't seem that good and, often, require oven finishing and other cooking that are things the reader wants to avoid by using the Instant Pot.
