Thank you to Netgalley for letting me review this cookbook. This is a great authorized InstantPot healthy cookbook for newbies and experienced cooks. The recipes are easy to follow and use accessible ingredients. The recipes are healthy yet flavorful. I like that the author gives recommendations of other recipes in the book that will go well together. I also appreciated the detailed directions once the ingredients are in the pot. The pictures are great too! This cookbook will help people have healthier meals faster, making them more likely save time and money by cooking at home more often.

This is a great addition for Instant pot cooking. Clean eating and meal prep made easier with Instant Pot. I like that there is an “in your pantry” area for the staples you need to have on hand. Recipes instructions are clear. I’m a visual person so the only complaint I have is that there is not enough pictures. Overall, a great book!

The Healthy Meal Prep Instant Pot Cookbook by Carrie Forrest uses fresh ingredients to create healthy recipes using the Instant Pot. The author says her recipes can be adapted for dairy-free, gluten-free, vegetarian and vegan diets.

Her cookbook includes tips for prepping in advance and tips on how to incorporate healthy recipes into your weekly meal plans.

She also tells about how to use the Instant Pot to prepare your healthy meals.

Some of the recipes you'll find include:

This is a very good basic healthy Instant Pot cookbook. I have used an Instant Pot for a few years and I thought the directions here were good and clear. I did not make any of these recipes, but base that on my knowledge of Instant Pot cooking. The recipes are mostly ones that the majority of a household would eat (always important!) and don’t use any super expensive or hard to find ingredients. I would recommend this cookbook to anyone with an Instant Pot, and especially those trying to get away from some the less healthy IP recipes that are easy to find on the Internet.

An okay cookbook. I found several recipes that I plan on trying in the nearish future.

For being a "Meal Prep" cookbook, I felt like there wasn't a lot of meal prep details - the opening chapter loosely covers meal prep in general and offers a few tips for using the instant pot to help with meal prep. Most of the recipes have a little tip at the end either for advanced prep, meal prep or general cooking tips, and the meal prep tips were usually serving suggestions that didn't really seem like meal prep tips (ex: Chicken & Veggies tip was to swap zucchini for carrots, or choose colorful carrots).

While this might not be the meal prep cookbook I was expecting, it is still going to be useful for a few recipes to tr in the instant pot.

Healthy Meal Prep Instant Pot® Cookbook is a new cookbook and technique guide by Carrie Forrest for use in conjunction with the Instant Pot pressure cooker. Due out 18th June 2019 from Rockridge Press, it's 206 pages and available in ebook and paperback formats (ebook format available now).

This is an interesting and useful addition to the instant pot cookbook library. My family have been trying to incorporate more healthy choices as well as more plant based and meatless dishes. This book features the first ('clean eating') and contains a number of meatless recipes as well.

The introductory and how-to sections of the book (~13% of the content) cover ingredients, ingredient prep, cooking, and use of the instant pot. The recipes in the following chapters are arranged in chapters: Basics & Staples, Breakfasts & Brunch, Grains Beans & Veggies, Soups Stews & Chilis, Seafood & Poultry Mains, Beef & Pork Mains.

All of the recipes include ingredients lists, preparation instructions, cooking instructions, and yields.
The instructions are clear and easy to follow and the dishes are made with easily sourced ingredients. The prep instructions are clear and easy to follow.

The ebook format has a handy interactive table of contents as well as interactive links and references throughout.

One small quibble with the book. There aren't very many pictures of the prepared dishes. The photographs which are included however, are really clear and well done.

Four stars, well written and full of tasty healthy recipes.
