Being in a family of 5 vegetarians, I am always looking for new, healthy recipes to try. I also prefer my cookbooks to have plenty of pictures. This book satisfied both criteria. I tried several recipes and was very happy with the results. The recipes are easy to follow and use many ingredients already in my home. I would recommend this to any who enjoys flavorful, healthy meals.

Great photographs highlight these recipes that covered a wide variety of ingredients. I think there's something for everyone in these pages.

A wonderfully written and beautifully detailed and outline cookbook that I recommend for any household. The recipes are fantastic, easy and healthy. A+++ on this cookbook.

This cookbook had wonderful photographs that were truly beautiful. I enjoyed the holistic approach that Nikole brought to explaining health. However, a lot of the recipes just did not appeal to my palette. Those looking for varied recipes that have more robust flavor profiles will enjoy this cookbook.

This is a nice cookbook filled with a variety of recipes and lots of color photos (about 2/3 of the recipes have a photo, perhaps more, and there are copious amounts of photos of the author looking pretty while holding limes and things like that). It's divided into sections like breakfasts, salads, plates, sweets, etc. Many of the recipes are gluten free, though lots use spelt flour instead (which has gluten). Most are dairy free and most are vegetarian. There are lots of vegan recipes, too. No nutritional information is provided.

The book seems like a good balance between honestly healthy but not devoid of any taste or familiar sweetness, fats, etc. I was a little discouraged by the breakfast section since almost every recipe involved oats. My 12 y/o is allergic to gluten and oats (yes, even gluten free oats, as are about 25% of folks with Celiac Disease and gluten intolerance). I was intrigued by the green smoothie pancakes, though I'd have to make my own version as hers use spelt flour. Other recipes were equally intriguing (jalapeno pumpkin waffles? I'm only 25% creeped out and 75% intrigued!).

This would be a good book to preview online or through the library to see if it's a good fit, but all in all it seems like a great cookbook.

The first recipe is for a delicious looking healthy breakfast cookie, and then a few pages later there's a recipe for chai oatmeal! At this point of the galley, I had to switch over to Amazon and put this book directly into my Wish List. Sold.

Every now and then you find a glorious unicorn of a cookbook that has healthy recipes that actually sound delicious and don't have obscure ingredients you need to Google and then drive 45 miles away to find. This is one of those glorious unicorns.

Highly recommended for human beings who make and consume food.

I love Nikole's youtube channel and as soon as I heard she was writing a cookbook I knew that I needed to read it!

I loved it so much! There was some great information about food shopping and meal prep. There was also some amazing recipes! Each one sounded better then the last!

The only thing I was disappointed about what that I wish pictures were included with every recipe. It's hard for me to visualize what the finished product would look like, so I think a picture would be very beneficial, especially for us beginner cookers.

I can't wait to pick up a finished copy to keep in my kitchen!

Wonderful cookbook filled with a variety of recipes to satisfy any craving! These recipes will work for anyone following a gluten-free diet as well as a vegan or vegetarian diet. All ingredients are readily available and the instructions are relatively simple. I look forward to trying several recipes, starting with the zucchini fritters!

I am always looking for new healthy recipes to make for me and my husband so I was super excited to try the recipes in this cookbook.

I have tried a few recipes and I like that they were super easy to make and they were very yummy.

I do highly recommend this.

This cookbook is a great resource for experienced healthy eaters looking for inspiration for unprocessed, clean eating. It contains many vegan and gluten free recipes (or at least variations for them), so this cookbook would appeal to those diets. Many of the recipes contain at least 10 ingredients, so readers should be prepared to stock up on a lot of possibly new ingredients. In addition - some of the ingredients seem to be fairly unique to the specific recipe, so it's uncertain if it is worth buying that certain ingredient, only for it to go bad later.

However, the cookbook is laid out well - with introductory chapters on meal-prepping, a mini meal plan, pantry/kitchen staples, and an argument for healthy eating. In addition, each recipe is labeled with small symbols indicating if it's gluten free, meal prep friendly, plant-based or freezer friendly. This is a quick way to determine if a recipe is right for you.

I would recommend this cookbook to healthy eaters who have experience trying new foods, or to those following vegan/gluten free/dairy free diets. I wouldn't recommend it to those just starting on their healthy eating journey.

The author gives you lists of vegetables, fruits, flours, oils and butters, tips on meal prep, and some mouthwatering recipes! I especially liked the recipe for making your own sausage using ground chicken, pork or turkey, with the addition of sage, garlic and sea salt that was simple to prepare with the option to freeze. The recipe for raspberry jam used maple syrup, fresh fruit and orange juice - it is unusual to find a recipe for jam in a healthy cookbook!
You will discover recipes for pancakes, sweet potato pancakes and honey roasted cashews that are easy to prepare and use local ingredients - enjoy!

The Healthnut Cookbook by Goncalves is a great cookbook. One caveat is that many of the recipes have a lot of ingredients that I would not usually stock in my cupboard, this can be both good and bad. Good for people who want to mix up their regular healthy diet and bad for those of us who would like to simply try a few recipes out but not invest in a 2lb bag of coconut/almond flour. Aside from that, anyone who is looking to find inspiration for a healthier diet or someone who wants to shake things up a bit, I think this book would be great for them. The recipes are filled with healthy fats, fiber, and proteins. The photographs of the recipes make your mouth water, but I find it very unlikely that I would cook many of them myself.

Amazing cookbook, one of my favorites ever! This gorgeous cookbook is chock full of healthy, approachable recipes made with easy to obtain ingredients.

Subscribing to no particular "diet", the recipes are easy to adapt to any lifestyle.

I highly recommend!

Nikole's holistic approach to healthy eating is fantastic. As I get older and more focused on overall health rather than a specific weight/size, reading healthy approaches to food (instead of fad diets) are so much more valuable to me. I still have a hard time eating breakfast and would much prefer running off of coffee (which is unhealthy but something Nikole mentions) yet knowing so many out there do the same and can change is a positive influence. I liked her list of 'What's in My Pantry' that I was able to compare against mine - and I was pleasantly surprised to see how similar they were which gave me more confidence in trying out her recipes. Some items were surprising (Specialty Items -- herbal coffee -- what?!). I also appreciate that she has 'rise and sine breakfast cookies' - something healthy, easy to make, and healthy to grab on the go. Her 'healthnut tips' are interesting and fairly new to me. Overall, I really liked this book, its layout, the beautiful photos of the food, and the numbered instructions. The recipes are a pretty good twist and while I was disappointed to not see the nutritional facts, it does put more emphasis on eating for enjoyment and health rather than tracking everything going in.

The Healthnut Cookbook is all about healthy eating. While the book does not subscribe to one specific diet you can take any of the recipes and have them fit what you eat (with slight tweaks). There are so many recipes that are vegetarian or vegan and several of the "staples" recipes are vegan versions like coconut whip and Almond Parm.

There are so many recipes I want to try from this book and I don't think I would feel guilty about eating any of them.

I've been subscribed to Nikole on YouTube for a while, and was very excited to hear about her cookbook. There are a ton of great recipes here, although the only one I've actually made so far is the Salted Caramel Stovetop Granola; so good! There are sections for all meals of the day, as well as sections on kitchen staples and equipment needed for cooking. The recipes all sound great and everything is easy to read and follow.

I first found Nikole on her Youtube channel and was really excited when I heard she was writing a cookbook. This book is full of delicious and easy to make recipes- some I've tried before (such as her banana bread and every day green smoothie) from seeing them on her blog. I love that she provides tips on what to have handy in the kitchen as far as utensils and staples (food, spices, etc). I love her ten healthy habits- a reminder that it's not just about what you eat but taking care of yourself mentally, emotionally and spiritually as well. The book is full of beautiful pictures and I can't wait to try more of her recipes. Thank you to Netgalley and Hachette Books for an ARC copy in exchange for an honest review.

I've been following the Healthnut Nutrition accounts for some time now. I'm all about healthy eating so I was excited to get a copy of this prior to release day. The recipes in the book are great, although I was expecting a little more in the 'dinner' area.

The photos were great, but I do wish there were more photos of the recipes. Photos will always draw you in and if I'd seen more of them, I'm sure I'd want to head right into my kitchen to start cooking.

Overall, I think it's a great book and could definitely find myself cooking a lot of the recipes.

Almond Flour parm and cashews make for creamy caesar dessing instead of Mayonnaise.



There's a prep ahead section for the recipes, which should help you put amazing dishes on the table quickly. Some recipes do have quite a number of ingredients, which will call for some shopping.
