I've enjoyed my Instant Pot for the past two years but was aware that the recipes I used it for seemed meat-centric and heavy on creams, sauces and gravies. We've been trying to eat healthy meals with more vegetables and less meat after a couple of health scares so when I spotted this new cookbook using the Instant Pot to make healthy Mediterranean meals, it seemed just what the doctor ordered.

300 recipes provided--that should keep me busy! The chapters are titled: Breakfast; Dips and Appetizers; Rice; Grains; Pasta; Beans; Lentils; Vegetables; Seafood; Fish; Poultry; Pork, Lamb, and Beef; Fruits and Desserts. I've already highlighted several to try, mainly belly-warming soup recipes at the moment since we've just had a 3-inch snowfall overnight: Avgolemono (Lemon chicken soup), Hearty Minestrone Soup, Mediterranean Seafood Chowder, Mixed Seafood Soup, and Cioppino all sound particularly yummy!

I will update my review as I do some taste-testing of dishes. I do wish there were more color photos included--those are always inspiring to answer, What's for dinner?

I absolutely love this cookbook! My favorite recipes are healthy, full of plant foods and easy to prepare - this book has 300 such recipes! I love the simplicity, ease and speed of my Instant Pot and always look forward to recipes that use this appliance. I look forward to making so many of these recipes, especially the bean dishes, soups and desserts. I highly recommend this book - especially for those looking to eat healthier, save money on their food budget, and for meal prep.

First the recipes were easy to follow.Second I was late and nervous to the Instapot movement. I remember my mom having a pressure cooker and remember whistling tops and tense moments in the kitchen. The step by step guide was so helpful and the outlines for each recipe were well thought out. I found the writing simple but not condescending. Great fun really!

I could not read the Kindle version of this cookbook.
It is so garbled that you can't follow a recipe.
I also couldn't get the .pdf version to work without downloading paid software.

So I can't review this book fairly since I could not make some of the recipes to give feedback.

I was excited to review these Instant Pot recipes. First off, there is a thorough description of what a Mediterranean diet consists of, as well as a summary of what a pressure cooker can do.

I didn't make any of the recipes, but I had one big reservation at the beginning. While I'm not very familiar with Mediterranean meals, I do know Greek yogurt very well, and that is the first recipe in this cookbook. I have made countless batches of Greek yogurt and expected it to fall in line with what I've encountered. However, immediately they discuss setting the lid to sealing, and then later releasing the pressure. The yogurt function is never under pressure. There are two features: first, it brings the milk to a boil, second, it maintains a steady temperature to incubate the starter and the milk for an extended period of time. Never does that button bring the contents to pressure. In fact, the lid used for pressure cooking isn't a necessary component, and many users prefer to employ a glass lid, whether the IP branded one or one from their own pots and pans, so they can monitor the process.

So to have the very first recipe discuss, incorrectly, the need to seal the lid and, later, release the pressure until the pin drops, made me question the reliability of the other recipes in the book.

I love my Instant Pot, and I was looking for help to find recipes in line with my dietary preferences. This recipe book for the bill! Simple and easy-to-follow, delicious, helpful!

The Everything Mediterranean Instant Pot® Cookbook by Kelly Jaggers is a cookbook and recipe collection slanted toward the Mediterranean Diet and utilizing the instant pot electric pressure cooker for preparation and time-saving. Due out 11th Feb 2020 from Simon & Schuster on their Adams Media imprint, it's 304 pages and will be available in paperback and ebook formats. According to the publishing info, some of the content is compiled from earlier Adams "Everything" series publications.

The layout is logical and easy to follow. The introduction covers the basics of the Mediterranean Diet, tools, supplies, how-to for the Instant Pot, and cleaning and maintenance. The following chapters include the recipes arranged roughly by category: breakfast, dips & appetizers, rice, grains, pasta, beans, lentils, vegetables, seafood, fish, poultry, pork/lamb/beef, and fruits and desserts.

Ingredient measurements are supplied in American measurements only. There's a conversion chart for metric measures in the appendices. The nutritional information: fat, carbs, protein content are listed for the recipes as well as serving sizes. Extra tips or recipe alternatives are listed in sidebars with the recipes. The recipes themselves are fairly straightforward and are made with easily sourced ingredients. Many are very simple, none of them are overly complex.


The photography is not abundant; most of the recipes are not illustrated, but the photographs which are included are clear and well done. I wish there had been more photographs and serving suggestions, but I do understand that extra photography increases the price of book projects very quickly.

This is a huge collection of recipes and even allowing for the fact that some of them are very similar to others in the same category, this will keep Instant Pot cooks going for ages. Many of these can also easily be adapted to non-Instant-Pot cooking with the codicil that food handling safety and prep be taken into account.

Formatting for the eARC make this a little difficult to follow recipes, so I didn't make any. That being said, I liked that it had some colored pictures even in eformat. I looks like it will also be giving the nutritional values of the recipes (fat/protein etc.). I also liked how the chapters were broken down - breakfast/dips/rice/grains
/pasta/beans/lentils/vegetables/seafood/fish/poultry/pork, lamb, beef/fruits & desserts. Also, the ingredients seemed to be ones that would be easily bought. This will be one I recommend for the library and will also probably be the one that I buy for myself.

This book is loaded with wonderful and easy t9 make Mediterranean recipes for your Instant Pot. I usually like more pictures in a good recipe book, but this is still such a great resource. It is full of tips and tricks!
There are over 300 recipes spanning from breakfast to desserts!
Highly recommended for all!

Having recently acquired an Instant Pot, I have been feverishly scrambling to learn how to use it properly. I like that this cookbook has everything clearly laid out step by step. My only wish is that there had been more photos. I am a huge fan of plentiful color photos in cookbooks.

Such a great variety of recipes for my new Instant Pot, and I’m always looking to add more Mediterranean recipes to my collection. I’m really impressed with the lentil recipe options as well as the variety of soups. I’m going to try the pesto chicken and potatoes recipe next week so I’ll report back with an update.

I have only made a few recipes with this book; however, I give Kelly Jaggers five-stars just for her Balsamic Chicken Tights with Tomato and Basil recipe! That dish is GOLD! My family and I have used it for chicken thighs, roast chicken, and will try it in the crock-pot with chicken breasts soon! DELICIOUS!

Up until I purchased my first Instant Pot, my experience with pressure cooking was confined to canning fruits and vegetables. My daughters were enjoying a whole new approach to feeding their families with the Instant Pot. We got to experience that excitement while our kitchen was being remodeled and they each treated us to home cooked dinners. It was amazing to see how this amazing appliance became an integral part of their kitchens. Needless to say, we purchased an Instant Pot too.


The Everything Mediterranean Instant Pot Cookbook by Kelly Jaggers is chock full of recipes that will please anyone who is striving to live the Mediterranean way, employing this game changing appliance. The recipes we have cooked using this cookbook have been easy to put together quickly, and resulted in tasty meals we're planning to fix again. Our favorites so far include Stuffed Acorn Squash, Almond Date Oatmeal, Creamy Thyme Polenta and Chicken Breasts stuffed with Feta and Spinach.

I am impressed with this cookbook. Like most cooks who are learning to cook with a a new appliance I was searching online for recipes and tips to make the most of my Instant Pot. This cookbook is good for beginners as it includes very good how-to information to start cooking right away. Within a few months of getting our 6 quart pot I ordered a 3 quart (mini) Instant Pot. I have used both pot sizes in preparing the recipes, sometimes simultaneously. This is a book I will use again and again because I like it that much.

I found many intriguing recipes to use with my new best friend ( instant pot). I loved the health tips and explanations of different ingredients. I will admit that often I would skip adding something that didn’t affect the taste or makeup of the recipe but will never do that again. An example is a short blurb about why to add flax seeds to oatmeal. ( 1.57 milligrams of omega fatty acids linked to reduced risk of heart disease) and how best to eat it. There were new ideas... figs in my morning yogurt! I will definitely purchase the book on Feb 11th when available as using a kindle for recipes and missing the beautiful photo shots is a detriment!

Really appreciate how simple many of these recipes are, the book has lovely photos and easy to understand instructions. I don't follow the Mediterranean diet exclusively, but I do try to incorporate elements of it regularly. Looking forward to making healthy meal prep simpler!

I chose to read this book as I live on the Mediterranean coast, and despite not having the actual Instant Pot multi-cooker with which this book is associated, the recipes were too tempting to resist!

Having moved here almost two decades ago, I found (happily) that there were very few fast foods places to eat, and local dishes were readily available, using fresh, healthy ingredients. Times have changed, and the burger restaurants have infiltrated the region, but not at the expense of local, family eateries offering proper food with typical Mediterranean panache.

Admittedly, at home, my go-to dishes stem back to food I ate back in the UK; you cannot deny the power of nostalgia. Eating out, however, is a different story, and I will choose a local, traditional Mediterranean dish over junk food any day.

I am glad to say I found plenty of inspiration in this book to expand my own repertoire and boost my diet with the Mediterranean vibe - lots of fish, olive oil, vegetables and herbs. Some of my favourites, and ones that I'm dying to try myself are:

Tomato & Asparagus Frittata

Baba Ghanoush (aubergine dip)

Skordalia (garlic dip)

Basil Cod Kebabs

Rosemary Salmon

Lemony Chicken Soup

Risotto Primavera

I could go on, there's so many to choose from!

Is your mouth watering? And none of these are difficult ... Easy to find ingredients. Simple to make. Tasty and healthy!

There's a recipe for dandelion greens that caught my eye, but having dogs, I know that the dandelions are "watered" way too frequently for me to ever be tempted to eat them!

The book is obviously intended for the US market, so terminology is occasionally "iffy" - I mean, what on earth is a SLIDER?, but in general the recipes are easy to follow and well laid out. The only downside is reading this on a Kindle doesn't lend itself to easy navigation. My copy is an uncorrected proof, and there's no links on the TOC, so that makes  for a lot of scrolling through (I've bookmarked my favourites ;) hopefully that'll work) That said, the final version will no doubt include that option, although I think a print copy would be well worth the cost, if just for the scrummy pictures.

The book has interesting recipes. There are a few that are not purely one hundred percent Mediterranean, but all in all the book has good recipes. They are tasty and interesting.
The critique I have is that Since there are multiple instant pots on the market there should be more modifications for the differences even within the Instant Pot Brands models.

Almost everyone who owns an Instant Pot uses it constantly. And almost everyone loves Mediterranean food. So almost everyone will love Kelly Jaggers cookbook, The Everything Mediterranean Instant Pot® Cookbook: 300 Recipes for Healthy Mediterranean Meals―Made in Minutes. The Everything series covers dozens of different subjects, but the cookbooks in the series are especially good in that they include dozens of good recipes and are almost bibles in themselves. This one is no exception; the recipes cover a vast subject – Mediterranean food – which includes dozens of countries.

Some of the fish and seafood dishes are especially appealing: Pistachio-Crusted Halibut, Cod Stew with Olives, Rosemary Cod, and Citrus Fish Tacos, to name a few. There are also dozens of mouthwatering chicken and meat dishes – these are recipes that most of us actually want to eat. Vegetarians will find rice (including several risotto dishes), pasta, and vegetable dishes that are great – the Instant Pot does a great job with these. There is an excellent recipe for classic Chicken Cacciatore, as well as several Greek classics such as Avgolemono Soup and Greek Spaghetti and Meatballs. Besides classic Mediterranean dishes, there are less well-known, but delicious recipes for several varieties of hummus, and several egg dishes suitable for light lunches or breakfast. There is something for everyone here. The recipes are well-written and easy to follow, so everyone can cook from this book.

The one big drawback of The Everything series is that there are few photographs, making it impossible for most cooks to imagine what the finished dish will look like. Photographs are easy to do nowadays, and since the recipes are tested, the dishes are most likely at the test kitchen waiting to be photographed. Why they don’t do it, is unforgivable.

All told, Instant Pot cooks who like Mediterranean food will find it very helpful to add this excellent cookbook to their collection. It has enough recipes to keep cooking new things for months.
