I'm very impressed by this book as Dominique Ansel translates his skill, innovation and experience into user-friendly, easy-to-follow recipes that when followed correctly, will insure baking success.

Too often, "easy" or ":beginner" books make concessions on technique or yield results that are satisfactory but wouldn't hold to someone who lnows more about cooking. What I love about this book are his little notes about how he takes his foundation recipes (what he calls his "go-to"s) and makes adjustments to yield something new. Beyond just stating the adjustments, he explains why he has made the changes that he made, in consideration of the kitchen chemistry and composition of the alternative ingredients. This is exactly the level of kicthen science balanced with just-give-me-the-recipe that can help the home baker elevate their own technique, skill and comprehension of ingredients.
Bravo!

For starters, this book is best viewed on a computer, rather than a mobile Kindle application. On a computer, the text features of bold words, indentations, and italicized hints are all laid out in an easy-to-read manner. In addition, graphic features of beautiful color images fill the entire page, rather than a small quarter of the screen, To reiterate, I would not recommend downloading this on your phone.

At first I was taken back by the measurements in grams. (Again, I was trying to view these recipes on my phone.) Upon viewing on the computer, I was pleased to see that there were the standard US volume measurements, in addition to the metric measurements. The volume measurements were laid out directly to the right of the metric measurements.

I enjoyed the anecdotes that preceded each section. This personal touch invites the reader to dive deeper.

I look forward to stocking up on key ingredients and baking recipes during our time of isolation. I highly recommend this book and I look forward to baking these recipes.

So other worldly. Eactly what you would expect from a Maestro.
You also get a sense of how baking is everything for Dominique Ansel.

Some Lessons from the Master of Cronut



1. I can cook but Baking? Any complex process requires some supervision from an expert.

2. Think of each recipe like first day of school. It lowers expectations and becomes second nature.

3. Everything I need to know, I learned in Kindergarten. Ansel stresses about getting the basics right before innovation.

4. Similar but different. This is where you make controlled changes and observe the outcome.

5. Whats in the cake should be on top of it. The author says that the finishing components are a clue for what flavors are hidden on the inside.



Off Center for the decoration. I figured this from all the pictures even though it is listed in the tips for decoration. The cakes almost look like they have the calm on one side and the wave and surf on the other with the raw fruits.



Do things with intent.



Cake is a gift.

This was a nice book. I plan to buy a few to give as gifts at a few weddings I have coming up. I wish I had had this when I was learning to cook!

I really enjoyed this book; I haven't reviewed baking books in a while (and spent time actually baking), but what surprised me about Dominique Ansel's book was the organization in terms of organizing by 'building blocks' -- base, filling, finishing, and technique. It just makes sense. Also, I appreciated that there was a description of 'timing'. I'm not the most patient (just yesterday I dug into a warm cheesecake that was supposed to set for 12 hours. 12 HOURS!!!!). The recipes are standard enough to make me feel I have a chance at replicating, but interesting enough to let me try my own spin on it. I really like the simplicity of the layout, the photos, and numbered instructions. I'm very glad to have another baking resource that isn't overwhelming and is straightforward enough for me to follow.
