Excellent Instant pot cookbook. I also own the paper copy which I prefer over cookbooks and it is very well used in my kitchen. Everything I have tried is delicious and the recipes are accurate.
There is a good variety of recipes from different cuisines.
Very well illustrated as well. Highly recommended.

This book is great for everyone who has an Instant Pot, wishing for more vegetarian recipes! I absolutely loved these recipes and I am pretty sure, that even meat-eaters will enjoy these!

It's nice to see more Instant Pot recipes that are not meat filled. I'm not a Vegetarian or Vegan. Sometimes it's just nice to see non-meat recipes. There were many delicious looking recipes I wanted to try to make.

This was OK. I'm not a vegetarian but like many vegetarian meals. Most of the recipes in this book, however, didn't appeal to me.

This is a handy cookbook for those new to instant pots or vegetarian cooking. I enjoyed the easy to follow recipes and the meals I made tasted delicious. Thanks to the publisher and netgalley for an egalley.

Simple, easy, useful recipes that couldn't have been handier over the last year. The instructions were clear. the choices were varied and I was able to make some wonderful meals quickly with this book.

Thank you for the opportunity to review this cookbook. I am new to the world of instant pots. I don’t use mine as often as I thought I would since receiving it as a gift, but I decided to request this ARC to see what more experienced users have come up with. I think this is a decent book for a beginner to the tool. However, not the best choice probably for a seasoned home cook, as they may be a bit bored with the offerings. Yet, I found some tips and ideas from this read suitable for my first few dinner attempts. I would suggest it for those starting off with the pot or beginner cooks only

The recipes in this book may be suitable for individuals who have never cooked before. For a person like me who has been cooking for many years, the recipes were too basic. I was hoping to find some novel, delectable dishes to make in the Instant pot but was disappointed.

Overall, I found the Instant Pot Miracle Vegetarian Cookbook rather underwhelming. I think fans of Pitre's blog, TwoSleevers, will enjoy this book as well as those looking for new vegetarian dishes to add to their repertoire.

Although I am not a vegetarian, I do eat plenty of vegetables and I am always looking for new ways to prepare them. As a fan of the instant pot, I was excited for this cookbook bringing them both together.

This book did not disappoint with a variety of options, and easy to follow instructions. I am definitely looking forward to upping my instant pot game!

Instant Pot Miracle Vegetarian Cookbook is the latest cookbook offering from Dr. Urvashi Pitre, the recipe creator for a popular blog. The color pictures are appetizing, and the individual recipes tried work. However, I do find it amusing the the book specifically points out,"... if a recipe doesn't work for you, it's unlikely to be the recipe and more likely to be be something that you could do differently." Interesting approach to setting a tone and a target audience!

There are some interesting recipes in this book for cooks who want meat-free dishes. Directions are clear and easy to follow. However, for those of us living outside of larger cities, some of the ingredients may be hard to find. Garam masala, for example, isn't readily available anywhere near me, nor are specialty soy and vinegar products. Not sure how substitutions would work. Something to keep in mind if you decide to buy this book.

I already have and enjoy this author's Instant Pot Indian cookbook, so I was thrilled to have the opportunity to receive an ARC through Netgalley to review in exchange for my honest opinion.

This cookbook is awesome. I've tried about six or so of the recipes so far, and found them delicious and easy to follow. My husband and sons (10 and 13) have also found the recipes great.

The first one that I tried was the Italian greens and eggs (the 13 year old's request).I forgot to get kale though, so I substituted frozen spinach. The result was less robust looking than the pic in the book, so I was initially disappointed. However, it tasted great!

I've also tried a few of the eggplant recipes (all good), a bean stew (yum), and the baked beans. The baked beans were a little disappointing, but it was my fault; I soaked the beans, but not enough, I guess. The taste of the sauce was excellent, but the beans were too hard to really enjoy it.

Overall, this recipe book is a great addition for any Instant Potter, especially the vegetarians out there!

I just received a Insta Pot for a gift this year and so enjoy it but needed more vegetarian receipes. As a strict vegan I found most Instant Pot cookbooks feature meat dishes so I was pleased to receive this for review. This is the perfect book for Instant Pot users to learn more healthy plant based receipes that are easy and fun to make. I learned more about my Insta Pot as well and feel more skilled with it after reading this cookbook. Thank you to the publisher and to Net Galley for the opportunity. My review opinion is my own. I highly recommend this cookbook for all Instant Pot cooks.

A very well thought out cookbook. Ingredients were pretty easy to find and the steps were straightforward. I no longer eat a strict vegetarian diet but did for many years, so this was a good way for me to rethink my approach to nutrition and remind myself what I liked about being vegetarian. I would recommend this to others looking for quick, simple meals whether strictly vegetarian or not.

"Instant Pot Miracle Vegetarian Cookbook" by Urvashi Pitre is a must-have for all fans of the Instant Pot! The included recipes are easy enough for the average home cook and are comprised of common ingredients that most cooks either already have on hand or can be found easily in your local grocery store. All of these recipes are thoroughly tested-these recipes work! This book also includes a nice explanation of the different functions of the Instant Pot, as well as some great tips and tricks to getting the most out of your Pot. This book is perfect for anyone who is trying to add more plant-based meals to their diet and is not just for vegetarians. A full color photo accompanies most of the recipes, something that is lacking in many other Instant Pot cookbooks.

My favorite recipes from this book are as follows: Greek Style Green Beans and Potatoes, Chipotle Chili, Garlic-Parmesan Spaghetti Squash, Sweet and Spicy Glazed Brussels Sprouts, Texas Caviar, Summer Vegetable Soup, and HOT FUDGE PUDDING CAKE!

I have two other cookbooks by Urvashi Pitre and I love them. She is an author I trust. This book is both for an instant pot pro and the novice. She gives active cooking time in the instant pot and total time, which is very important. Most of the recipes have pictures, which are beautifully done. I am not a vegetarian, but am starting to want to find ways to eat more vegetables and less meat. The only critique I have is the omission of nutritional information, which I find very surprising as she seems to be very conscious of nutrition and very pro-keto diet in other ventures. Overall, great instant pot vegetarian cookbook that would be a welcome addition to my endless cookbooks.

I just snagged an Instant Pot from Amazon because I've been wanting one for awhile. This cookbook is going to be the perfect place to get started because of its focus on vegetarian recipes.

First, I absolutely loved all of the information at the beginning of the cookbook. There were detailed descriptions on what to expect when using an Instant Pot and even FAQs for people that have run into trouble while they're cooking. There was so much valuable information that makes the introduction worth reading.

Second, I loved the vibrant photographs that accompany most of the recipes. It's always helpful to me to see what recipes are supposed to turn out like so I know whether it's worth the effort of making it. The pics made everything look so delicious and appetizing!

There are a variety of recipes with a wonderful international flair. My only complaint is that I wish there were more entrees vs. just side dishes. This would have me feel more like I would have a whole arsenal of dinners at the ready. I'm so excited to start making some of these recipes though, and I'd definitely recommend to other Instant Pot vegetarians!
