The Book on Pie by Erin Jeanne McDowell could not have arrived at a better time! You see, pies are my nemesis. Or more properly, baking pies is my nemesis. For as long as I can remember, I have dreamed of baking a perfect pie, a pie like my grandma used to make with a buttery, brown crust. And for as long as I can remember, I have failed.
I'm confident that if I'm not a fabulous pie maker after reading this book, it's all on me, because the author does a terrific job of laying out the basics, and then going one, two or three steps further. She is a fabulous teacher and speaks from authority - she's created, tested and perfected each of the recipes in The Book on Pie trying a variety of ingredients to determine what works and what doesn't.
The recipes are broken down into doughs & crusts, decor & toppings, fruit pies, custard pies, cream, chiffon & cold set pies and savory pies. And there are so, so many recipes! I mean, so many that the possibilities are both inspiring and terrifying - there are more than three dozen dough recipes alone!
I admit, I've never dreamed of eating much less making some of the pies in this book - they are just so creative. Things like fry bread taco pie, triple-chocolate caramel truffle pie, carrot cake custard pie, and birthday cake pie. But the recipes seem so approachable and the photos look so delicious, I'm willing to try.
I opened this book hoping to maybe successfully bake a simple apple pie. But all that has changed thanks to the author's passion and enthusiasm. Now, I'm setting my sights on sweetcorn pie with blueberry whipped cream, a rooter float baked Alaska pie, and maybe even a sausage and caramelized onion pie with soft pretzel crust.
If you love pies - or love the idea of making pies - pick up this book. I guarantee you'll be inspired!

You can't give less than 5 stars to this book. There's no way! It has so many different types of pies and fillings that everyone will find at least one that they love! There are recipes from traditional to the most interesting flavors. There are sweet pies, savory pies, gluten free pie, vegan pie, chocolate pie, fruit pie, custard pie and a lot more! Excellent! This is the only book that those who love to bake pies will ever need! The descriptive guidance of every step is phenomenal - and includes everything for bakers just beginning to those who are advanced in their skill. The photos of the pies throughout the book are gorgeous. The recipes look amazing and there is a recipe to fit every pie mood. This is a book that pie bakers will use to reference technique and recipws time and time again. The Book on Pie is a must have on the shelf of any baker who loves a good pie!

The Book on Pie is the only book you will every need for pie. This cookbook is super in depth and has so many recipes that you could make one pie every day for a year and still have more recipes to try. This book contains a ton of different types of crust recipes as well as tips and tricks on how to decorate and style pie crusts. The actual pie recipe are broken up into four major categories: fruit, custard, and cream/chiffon/cold set pies, and savory pies. This book would be a great addition to for any baker!
