This book has scrumptious looking pictures with easy to follow recipes. Plus slow cooker meals are so easy to follow... definitely recommended.

This cookbook had some interesting healthy slow cooker ideas. Look forward to trying most of them. Always looking for slow cooker recipes and this cookbook doesn't disappoint.

Just the word “healthy” in the title of a cookbook conjures images of tree huggers eating wild garlic and hickory nuts in the forest. Luckily, Lauren Keating has different ideas on healthy, and has included recipes that actually taste good in her cookbook, Healthy Meal Prep Slow Cooker Cookbook: Nutritious Recipes to Prep Ahead and Enjoy All Week. There are chapters on food prep, making foods ahead, batch cooking, and organizing food for the week. This is helpful for those who are organized or want to learn to be organized.

Don’t be fooled, many of the recipes have been adapted to a healthier lifestyle, such as cream scones using non-fat yogurt instead of cream and whole wheat flour instead of white. Trendy recipes such as Shakshuka have been healthified a bit, and there are also breakfast casseroles that have been lightened up. Soups and stews usually do well when made a little healthier, and there is a good variety here. Vegans and vegetarians will like this cookbook because there is a chapter dedicated to them and the dishes sound pretty good. The chicken and seafood chapter has several mouthwatering recipes that are easy to make and will appeal to the entire family. The Pork, Lamb, and Beef chapter is equally good.

The upside is that all of the dishes are made in the slow cooker which not only saves time, doesn’t heat up the kitchen, and doesn’t require constant checking. Keating has included recipes that no one would guess can be made in the slow cooker, and the recipes turn out well (i.e. Whole Wheat Dinner Rolls).

Unfortunately there are a minimal number of photographs, and that is actually the only negative about this cookbook. The recipes are written in standard form with easy-to-follow instructions.

Anyone who is interested in healthifying their food and organizing their meals to save time prepping, will love this cookbook.

This cookbook had some really great recipes. The recipes were easy to understand and not too complicated for the average cook. I enjoyed the illustrations and look forward to making these recipes for years to come.

This books is full of ideas to make in a slow cooker - which I love! I haven't made any yet, but there are definitely a few that caught my eye. Looking forward to making some delicious meals!

Well organized and a good resource, the recipes in Lauren Keating's Healthy Meal Prep Slow Cooker Cookbook are great inspiration for twists on the classics, as well as a few new ideas for me. I'm a huge slow cooker fan and use mine regularly, this is just the kind of book I need.

This cookbook focuses primarily on breakfast and main meal dishes that can be prepared in a slow cooker. While it has many of the traditional slow-cooker recipes, I was particularly impressed with the section with vegetarian main dishes such as Pad Thai Spaghetti Squash and Chickpea Curry. I think that chapter makes it unique among the many slow-cooker cookbooks. The recipes seem easy to make and healthy.

I like the idea of this book but I feel like the recipes need to be better tested. I made the Tex-Mex Quinoa yesterday with terrible results - the cook time is far too long even on low and I ended up with burnt mush (and a waste of good ingredients. I normally would try 3 recipes before reviewing a cookbook, but I am hesitant to try anymore recipes. If I feel brave enough to try another recipe from this book I will update my review. Until then, 2 stars.

The title immediately drew me into this one. Every mom/full time job dream - meal prep, slow cooker, healthy. While I did highlight several of the recipes to save and try for later, I didn't learn anything new or seem overly impressed with the "healthy" nature of these recipes. I appreciate the macro counts - I count macros religiously and it helped me lose 20+ pounds, but a lot of the recipes were carb and fat heavy, with no enough protein to even it out. I'd have to make substitutions for most of these recipes if I was cooking them for my family. The book is clear and organized and easy to follow. Each recipe has all the information you need like prep time, cook time, servings, calories, and it also tells you if the recipe is vegetarian, vegan, GF, freezer friendly or one-pot.

Healthy Meal Prep Slow Cooker Cookbook is a recipe collection and meal plan guide by Lauren Keating. Released 30th June 2020 by Callisto on their Rockridge Press imprint, it's 174 pages (for the print copy) and available in paperback and ebook formats. It's worth noting that the ebook format has a handy interactive table of contents as well as interactive links. I've really become enamored of ebooks with interactive formats lately.

The book has a logical and easy to follow format. Following an introductory chapter which covers the background how-to of slow cooking and how to incorporate it in meal planning, other necessary tools, supplies, and ingredients, the following chapters include the recipes, arranged thematically by meal type: breakfast, soups stews and chili, vegetarian and vegan items, seafood and poultry, pork lamb and beef, and finally partial recipes for staples and other ingredients. Nutritional information is included in the footer at the end of the recipes and includes calories, fat, carbohydrates, proteins, fiber, and sodium.

The recipes have their ingredients listed bullet style in a sidebar. Measurements are given in US standard only. Special tools and ingredients are also listed, along with yields and cooking directions. Special classifications for each recipe (gluten free, nut free, 5 ingredient, vegan, etc) are included in a header bar. Most of the ingredients are easily sourced at any moderately well stocked grocery store. The book also includes a short author bio and a metric conversion chart, but lacks any index or a general ingredients index. The recipes themselves are varied, and represent a number of world cuisines. They're tasty and easily prepared and many are simple and easy to prepare, requiring few ingredients and little prep time.

My main quibble with the book is that the recipes are mostly not photographed. There are a few photos, and they're clear and attractive, but they only represent about 5% of the recipes included in the book. It is, however, a very well written book with a positive and upbeat "vibe". PS The Korean-inspired beef wraps are *phenomenally* delicious.

Four stars.

For anyone who owns a slow cooker and wants to try new, healthier recipes this is the book for you. The book is comprised of sections for any diet / lifestyle and has beautifully photographed meals.

This is a great slow cooker cookbook! I would make almost all the recipes in this book and I'm very excited to try some of them soon. The recipes are easy to make and most of the ingredients we have at home. It's very clear and organized and easy to follow. Each recipe has all the information you need like prep time, cook time, servings, calories, and it also tells you if the recipe is vegetarian, vegan, GF, freezer friendly or one-pot. Ok you had me at that cover....wow. I love slow cooker food, made right it can offer great meals and amazing leftovers. Meal prep is easy if your dedicated and this book makes it simpler. So many benefits from slow cooking with some amazing looking recipes.

What did I like? The book starts off with some amazing pictures of Korean style beef wraps that caught my attention and held it. Many of the recipes I’ve already bookmarked to try. Prep was really secondary next to the list of amazing recipes.

Would I recommend or buy? I would definitely recommend but the book had amazing pictures but just not enough. Maybe a picture for one in ten recipes but with a slow cooker I have more confidence with buying since I’ve never had a bad meal in a slow cooker. I did copy a ton of the recipes though in hopes of making some outstanding meals.

Thoughts for the author? Kudos to a great cookbook! Five stars! Thanks to the publisher for a copy to read and offer my opinion.

This book has some really good sounding recipes all which are really healthy. I can't wait to try them. Many of them are different than I have found in other healthy cookbooks. This book is a keeper.
