I'll admit I am not a vegan, but I enjoy plant based meals more. This book contains a lot of yummy , diverse and easy to follow recipes. I love that nutritional information is included for every recipe.

I have read a lot of vegan cookbooks over the last few years and this one really does focus on non-fussy takes of classics. You will get tacos, pastas, burgers, and even shepherds pie. But if you are looking for meat like options there is an entire chapter around TVP and Seitan. If you want a cookbook that is very accessible give this one a look.

The Everything Easy Vegan Cookbook is full of delicious and inspiring recipes. You don’t have to be a vegan to enjoy this cookbook. If you love eating vegetables, this is a great place to find some new recipes to add to your repertoire.

I feed a vegetable-loving family composed of two meat-eaters and one pescatarian (fancy word for vegetarian that eats fish). When exploring a new cookbook, I always look for 3 recipes to make that fit into our normal eating habits. I could not stop at just three recipes in The Everything Easy Vegan Cookbook. I wanted to make so many!

We use as many whole foods and fresh vegetables in our diet as possible. Some of the vegan ingredients were new to me: nutritional yeast, TVP, seitan, and tempeh. Only one of these is explained in the book and that is only because a recipe is included to make it. This cookbook includes an entire section devoted to the benefits of adopting a vegan lifestyle. Why not explain what you will be eating as well? I turned to YouTube to learn more about these ingredients.

Recipes I Made:

Sesame and Soy Coleslaw Salad – Delicious! We love soy sauce and sesame oil, so I couldn’t resist this one. The recipe calls for Napa cabbage instead of traditional cabbage. The crunch and texture were perfect! I enjoy the flavor of Napa cabbage a lot. It tastes more like lettuce to me, but still retains the crunch of cabbage. Instead of mayonnaise, the coleslaw dressing is made from sesame oil, soy sauce, olive oil, apple cider vinegar, and maple syrup. I served it in a bowl with rice, chickpeas, and ground beef. I will definitely make this again. I would like to try it without the maple syrup next time.

Cuban Black Bean and Sweet Potato Bowls – Very filling and satisfying. We even ate it for breakfast the next day! This recipe was very simple to make as printed. As is, this is a great two-pot meal option. One pot for the rice and another for the black beans, sweet potatoes, and spices. I will definitely make this again with a few changes. First, I will add diced red onion and sweet red peppers to the black beans while they cook. Second, I will roast the sweet potatoes in the oven instead of cooking them with the black beans to add another layer of texture.

Lemon, Basil, and Artichoke Pasta – I am in love! This recipe is going to be added to my regular summer rotation. I totally forgot to add the lemon and it still tasted amazing! For fun, I also added some fresh sweet mini-pepper rings and feta cheese.

I'm not a vegan or vegetarian, although recently I have been making an effort to include more plant-based meals into my diet, so I was very excited to check out The Everything Easy Vegan Cookbook.

Right off the bat, I was happy to see that the cookbook definitely lived up to its name. None of the recipes were overly complicated, and most, if not all of them could definitely be accomplished on a busy weeknight for dinner. Also, with the exception of a few dishes, this book shows that you don't need to rely on buying "fake" meat substitutes for a complete vegetarian/vegan dish, letting the vegetables shine on their own.

The only downfall here is a lack of photos. The photos in the book are beautiful, but I wish every recipe had at least one to show the finished plating, if not several to show the steps of the cooking process.

I'm really excited to go shopping and get cooking -- my mouth is watering just thinking of the eggplant puttanesca!

For two years now, I’ve been reading and reviewing vegan cookbooks. The vast majority seem rote, tweaking familiar recipes and plonking them down in book form. Thankfully every once in a while, a cookbook comes along that shows innovation. I am not looking at the same old, same old recipes. The Everything Easy Vegan Cookbook by Adams Media is just such a cookbook. While this is only the second cookbook I’ve read and reviewed from Adams Media, I have to say that I’m definitely impressed. They are also responsible for The Spicy Plant-Based Cookbook that I reviewed earlier this year (you can see my review of that book here).

The introduction informs the reader of what it means to be a vegan, regardless of why one has chosen this lifestyle. I liked the tone, which is factual yet upbeat. What I didn’t like was being reminded of the fact that animals who are mass produced for food suffer but it’s the truth. I just try not to think about it anymore because I can only control my own behavior, no one else’s.

The recipes are a good mix of whole foods and processed vegan foods. While I personally would rather have a chili made up of beans and vegetables, I can imagine that some would very much like this one in which veggie burgers are crumbled up. The entire soup section pretty much left me salivating and thinking that I really have to give making cashew cream a try and finally a vegetarian Tom Kha Kai soup! I loved that an entire section was dedicated to tofu and another to its cousins tempeh and seitan. These should be among the staples of vegan cooking but so few cookbooks actually offer many recipes involving them.

There were so many recipes here that sounded delicious among them was Eggplant Puttanesca. Now I’ve always loved puttanesca. I don’t do the original with anchovies but do put all of the rest of the ingredients in: capers, olives, tomatoes. But adding eggplant in sounds like a very rich idea that I can’t wait to try.

The recipes are not complicated. The authors even provide suggestions for tweaking to add heat or lower heat, to make less sweet, or whatever the possible “iffiness” might be.

If you are a new vegan, thinking of becoming vegan, just doing Meatless Mondays, or even a long-time vegan, you will probably find lots of recipes in this cookbook that will enhance your cooking. I highly recommend!

I absolutely love this cookbook. It has 200 different recipes and most are family friendly. I love that all ingredients are easy to find and I do not have to go to a specialty store to get them. They have recipes for every occasion from appetizers to desserts and everything in between, even has a section for sauces and tofu.
We are not a vegan family, but try to make vegan meals 2-3x a week for the health benefits. This book has it all, and has literally became by weekly go to for meal prep. The recipes are easy to follow, and come out delicious! No skillset is required for these recipes, which I love.

The Everything Easy Vegan Cookbook is very comprehensive, containing 200 recipes for everyday essentials through to meals you can serve up for a special occasion. I think this would be the ideal recipe book for someone who is new to vegan cooking, as there are plenty of simple recipe options to get you started and some more complex meals for when you're more confident. There is bound to be something for everyone to enjoy, regardless of personal tastes and preferences. It is worth noting that these are American recipes, so some of the terms and measurements used might not be familiar for my fellow UK/international cooks.

That being said, I've been vegan for 8 years now, and vegetarian for over 10 years before that. I'm quite a confident home cook and have a little library of vegan recipe books already. With that background, I did find that many of the recipes in here are ones I can already make either without a recipe to follow or using one of the recipes I already have. I aso tend to prefer recipe books with more photos so that I can navigate through recipes more easily and so I know at a glance what each recipe intends for me to make. However, while these things mean that this isn't necessarily the right recipe book for me, I am aware that it would be a perfect fit for others.

I didn't like that in the first chapter of this book, which is essentially there to convince people why it's good to be vegan (not always the case), readers were pointed to PETA as a source of information. PETA has a history of racist, ableist, and sexist campaigns amongst many other issues. I think the authors should have either chosen a different organisation or compiled the information in the book itself.

The Everything Easy Vegan Cookbook by Adams Media
200 Quick and Easy Recipes for a Healthy Plant-Based Diet

Tasty easy to create meals that include easy to find ingredients most places in the world. I will have trouble finding some of the ingredients in my small village on a hilltop in Lebanon BUT I enjoyed reading the recipes and thinking about how I could adapt them to the ingredients I can find locally. AND that is possible because I saw “flavor profiles” for dishes you might find on a restaurant menu and seeing how the recipe was most likely adapted to use vegan ingredients to achieve a similar flavor and texture. The more I read, the more I wanted to start cooking. Each recipe included nutritional information and that is essential to many cooks who are interested in providing a healthy diet for those they love.

* A chart with seasonings for various ethnic areas that could be used to create in the home
* How to substituted vegan proteins in non-vegan recipes

Would I consider buying it for myself or as a gift? Definitely

There are a lot of lovely vegan recipes in this book, all of which are easy to follow and well set out. As a veggie who is dipping their toes into veganism, this is a great starting point

First, I should say that I am not a vegan, but I do like to adopt healthier meal options into my skill set. I have certain health requirements that would benefit from vegan recipes, so I am happy to look through a list of accessible, easy, and uncomplicated dishes. This cookbook is loaded with recipes. It offers 1) appetizers, sauces, and dips; 2) breakfast; 3) salads & salad dressings; 4) soups; 5) vegetables, stir-fries, and sides; 6) rice and grains; 7) classic pastas; 8) mains; 9) Seiten, TVP, and tempeh; 10) tofu; 11) desserts. There is a LOT in this cookbook.

It begins with a brief introduction about veganism and addresses some common questions and myths.
There are not as many pictures as usual cookbooks. Since I'm looking at an ebook, I'm not 100% sure what the layouts look like, but I would reckon it has to do with how many recipes are offered. So, you get more content rather than visuals, so that's more bang for your buck so to speak.

Personal thoughts about the recipes: they are not overly complicated. I didn't know anything about #9 (seiten, TVP, tempeh) and only have used tofu a few times, albeit incorrectly apparently! So, I did gain some insight on cooking tips (there are some in the margins sometimes) and knowledge about new types of dishes that incorporate ingredients I'm not so familiar with. The other offerings utilize food and techniques that I'm used to, or they veganize dishes I'm already making. So, I would suggest this to anyone with an interest in cooking vegan dishes, as it's not beyond a beginner's skill set.

This vegan Cookbook was everything I wanted in a cookbook and more. It can be hard to find some recipes that taste as good as their non-vegan counterparts but this cookbook hit the mark. Perfect for someone who is just getting into the lifestyle.

A lot of variety and flavors in this cookbook! I enjoyed the information on why / how about being vegan and feel like this is a great beginner book! I especially enjoyed the nutrient information for EACH recipe. I thought that was really handy!

This collection of easy and vegan recipes is really good, especially for those who are new to veganism! Only thing I wished it had was more photos of the recipes. Would recommend!

As veganism grows in popularity, the amount of literature on vegan cooking grows exponentially. With this sort of landscape, it can be difficult for a vegan cookbook to stand out. Luckily, The Everything Easy Vegan Cookbook by Diane K. Smith proves to be a solid resource for those aspiring to incorporate animal product-free recipes into their repertoire. The Everything Easy Vegan Cookbook is an accessible introduction to vegan cooking; “introduction” being the key word.

The cookbook opens with a chapter on the benefits of eating vegan. Smith ensures these benefits are explained in a simple, approachable manner. Many of these benefits are not new to those who have done even a little bit of research on the vegan diet. My only complaint is with the brief discussion of weight loss as a benefit of the vegan diet. Smith likens weight loss to looking like a celebrity; this feels a little flippant. After all, there is no body type associated with veganism and insinuating that there is will be a red flag to some considering a vegan diet. Similarly, a directive to visit PETA.org for more information, without further instruction, feels a little lazy. However, these are relatively minor issues. After all, readers have assumedly picked up this book because they want to cook vegan. So, onto the recipes!

Though some purists will not like the copious inclusions of ingredients like “vegan beef” and “vegan cheddar cheese”, I’ve found that meat and dairy substitutes are a great way to ease into a plant-based diet. In this way, The Everything Easy Vegan Cookbook does live up to its name. Purchasing meat and dairy alternatives is simply easier than creating one’s own homemade plant-based beef or cheese. Additionally, Smith’s entire section dedicated to tofu is excellent. Even as someone relatively well-versed in cooking tofu I found quite a bit of inspiration in these recipes.

Ultimately, The Everything Easy Vegan Cookbook may fall a bit flat for experienced vegans. However, the book’s offerings for new vegans and the vegan-curious are deserving of some credit. The recipes are easy to follow, most including pretty common household ingredients, and helpful tips line the recipe pages. Personally, the Scallion Pancakes and Pizza Bagels were winners in my household. The Everything Easy Vegan Cookbook will not be groundbreaking for most, but will be ideal for some.

A cookbook that lives up to its title. After a short introduction about the vegan lifestyle, the book comes up with all sorts of simple recipes. I especially liked the diversity, from western pancakes to a Thai version, African stew and all sorts of Italian pasta, and the absence of fancy ingredients.
I think the book is especially suitable for all those who are new to vegan cuisine. Especially the two chapters about "tofu" and "seitan and tempeh" demystify the prejudices about meat substitutes, which, by the way, have already been consumed in Asia for centuries.
Form Breakfast to sides and mains, to tasty desserts, this cookbook provides simple and delicious recipes for every taste.

The title says it all everything is easy in this cookbook and ingredients you can find at a local grocery store. If you are vegan or wanting to become vegan this is the book for you. Good for beginners.

This is a fabulous cookbook!

It starts out by explaining a little bit about following a vegan diet, how vegans get nutrients, and the various benefits to be gained by eating a vegan diet. Even with all of this, it never comes off as preachy or pushing a plant-based lifestyle, although if you're reading this type of cookbook, you're probably either considering it or already eating this way.

The recipes are broken down into sections, including appetizers, sauces, and dips; breakfast; salads and salad dressings; soups; vegetables, stir-fries, and sides; rice and grains; classic pastas; miscellaneous mains; tofu; seitan, TVP (textured vegetable protein), and tempeh; and delicious desserts. Each of the recipes include nutritional information, and there is a section at the back that provides conversion between US and metric.

Each of the recipes includes a little blurb at the beginning, providing a little bit of information - either about the recipe itself, substitutions that can be made, or what to serve it with. There are stunning pictures included for many of the recipes that had my mouth watering. I bookmarked so many recipes, and I already know that I will be returning to this book time and again.

Something that especially appealed to me is that the recipes include ingredients that I already have on hand and don't have to visit special stores for. It's nice to be able to just flip to any page and be able to make the recipe without having to hunt down obscure ingredients. Another thing I liked is that it doesn't involve complicated cooking techniques or equipment. I know my way around the kitchen, but I'm not comfortable with difficult recipes, and I'm fairly certain that I could prepare the vast majority of the recipes in this book without difficulty. I'd highly recommend this book no matter what your skill level is.

There is such a wide range of recipes in this cookbook! It would make it easy to start implementing more vegan recipes in my life. The book starts with an intro that explains veganism. Each recipe shows a breakdown per serving of calories, fat, sodium, carbs, fiber, etc. which I found very unusual. There are not a lot of photos in this book, which I would have preferred.

I was quite happy with “The Everything Easy Vegan Cookbook”. There are a variety of recipes, the recipes were clearly and neatly organized by type of food (i.e. breakfasts, desserts, appetizers, etc.), and the recipes appear to be easy to follow. I especially liked how the nutritional information was given for each recipe. When I look through a cookbook, I gravitate toward the recipes that have pictures; I don’t know if I’m the only one who does this, but I cannot be alone. So, I was disappointed that there were not very many pictures of the completed recipes. The pictures that were there were nice and vibrant, I just wish there were a lot more. Overall, I think “The Everything Easy Vegan Cookbook” would be a great addition to anyone’s cookbook collection.

It's all in the name! This is the perfect book to gift a friend who recently went vegan, or for yourself! I would say this is more geared to new vegans as there is quite a lot of info in the beginning of the book about transitioning and all the health benefits of the diet.
The recipes are easy just like the title says, with no more than 4-5 steps for each recipe. The ingredients are mostly fresh produce as well as some staple spices and seasonings most of us already have at home. I loved this because often times in the evening I'm too tired to cook a big elaborate meal but this book just makes it so easy(and healthy)! Some of my favorite recipes that I tried so far were the overnight oats, tabbouli, and the mediterranean quinoa pilaf. All so easy and delicious, even with my family eating who aren't vegan-they were impressed! This book has pretty much every recipe you would want as a new vegan, a great staple to have in your kitchen.
