I received Instantly Mediterranean as part of a NetGalley giveaway.

Instantly Mediterranean explores recipes that can be prepared in the Instant Pot and air fryer, two of the hottest appliances currently on the market. There's a nice array of recipes, including a vegetarian section, and the convenience of using appliances, particularly the Instant Pot, saves a lot of time and work, particularly for those dishes that evoke hours spent over a stovetop letting flavors meld together. While the recipes themselves are fairly simple, they are higher maintenance in terms of ingredients, particularly for those who may not easily be able to source Mediterranean ingredients, but for those who have ready access, there's a lot of delicious options to try.

This is a beautiful cookbook full of Mediterranean flavors. Almost every recipe has a lovely color picture to accompany the recipe. The electric pressure cooker recipes are separated from the air fryer recipes in case you have one and not the other. My complaints are: 1) no nutritional values included 2) large number of ingredients per recipe 3) difficulty in obtaining regional ingredients 4) no information on ingredient substitutions for those with food allergies.
I think this book would be a great way to introduce more flavors and recipes to my kitchen.

I was a bit disappointed that not all recipes are for the electric cooker or air fryer. Even though all recipes are scrumptious, some are really intimidating. This is a book for someone already familiar with using their appliances and cooking Mediterranean dishes. The few pictures in the book are beautiful, even though I wish there had been more of them.

This book makes me want to accept the challenge to tackle my pressure cooker and air fryer and get better at cooking the dishes! I absolutely loved that there are recipes for different meals!

While I like to look at Mediterranean cookbooks it’s not a favorite food of mine. This book acts on more cultural foods with an authentic feel using air fryer, instant pot, or a pressure cooker.

What did I like? Hummus anyone? That is the only Mediterranean food I can really get behind. I would love to stay there for a few weeks and really try the food. The book has some stunning pictures but sadly not a picture for every recipe. The food has a variety of ingredients for every dish but I never seem to agree that nuts should go with greens , or eggs in a tomato sauce. My palate won’t allow it.

Would I recommend or buy? Anyone not looking for the diet (which is incredibly healthy for you) but wants authentic should check this out. I merely wanted to look at the pictures. Four stars!

I am really enjoying this cookbook! Important to note that these recipes reflect the flavors of the Mediterranean region, not the popular Mediterranean diet specifically. I love that so many recipes from a diverse region have been adapted to the air fryer and pressure cooker. I cook with a Ninja Foodi, so my experience is slightly different from Instant Pot users. The soft cooked eggs cooked in shakahuka did not work out well for me, but I loved the baba ganoush recipe and especially the chicken paella! Highly recommend!

Instantly Mediterranean is a cookbook that provides recipes for your electric pressure cooker and instant pot. There is also a chapter dedicated to recipes for the air-fryer. The foreword explains that the recipes are based on Mediterranean cuisine, n0t necessarily for use as the Mediterranean diet, however, all recipes use fresh ingredients so it's safe to use many of them if you are on a Mediterranean diet. There are bread and dip recipes, full entrees, soups, and desserts contained with the pages of this book. I found the pictures and theming for the chapters to be bright and lively and fitting with the Mediterranean theme. The tone of the text is conversational, but also includes technical cooking terms so you can prepare the dish and get good results. I felt this cookbook was well written and can't wait to try some of the dishes! Also, I am glad that it wasn't another Mediterranean cookbook that ONLY uses salmon for the proteins. The meals include lamb, chicken, and beef. I was pleasantly surprised.

I am always looking for more Instant Pot recipes, especially as the summer weather sneaks up and makes me not want to turn the stove on. There are plenty here and I love that they are not the standard stew and soup recipes I find so often. Lots of choices and if you and your family love to eat Mediterranean, this is a definite must try. Recipes were well laid out and easy to follow with not too many special ingredients.

If you enjoy Mediterranean food and/or Instatpot cooking than this book is for you! The beginning chapter is filled with excellent information on Instantpot and Air Fryer cooking (about the pot, how to use, why to use, etc). I do not own an Instantpot but this cookbook may have just inspired me to purchase one. Subsequent chapters highlight a variety of recipes that are doable for a home chef from a novice skill level and up. I enjoyed the variety of recipes, finding a lot of dishes that I'd not seen in other Mediterranean cookbooks. If you are looking for faithful Mediterranean dishes like hummus and tzicki recipes, you will find them in this book along with beautiful photographs. If you are seeking a more adventurous Mediterranean dish that is included as well. Unique soups, appetizers, main course recipes, breakfasts and desserts.

Personally, I am inspired by the Prosecco Pears and the Beet Hummus and plan on adding both to next weeks menu.

Hello and Happy TIMES to the Instantly Mediterranean cookbook! Where has this cookbook been? And why haven't more people jumped on the instant pot/ air fryer band wagon for most EVERY diet- eating lifestyle there is? So WHY NOT write a cookbook on Mediterraean food prep using these methods? It's a no brainer! C'mon!

I will be making the beet hummus for my 3 year old. I am sure he will enjoy the vibrant color of this dish. The labneh looks divine. Tabbouli is a MUST. These recipes are surely classic and easy to please a diverse family with many tastes. The photographs are very tastefully done I just wish there were more of them to accompany each dish. The photographs really helped me salivate at the food found in the pages. Honestly, I could do without the main courses( not that I would want to) however, for me and my family there is so much variety in the soups, salads and dips/ spread section it would be enough to keep me going for weeks. Also can I also point out, I never know what to do with my parmesan rinds? Im so excited to try the Parmesan Brodo - what a perfect use for the leftover parmesan rinds!

This cookbook is filled with pictures showing some of the most delicious Mediterranean recipes using a pressure cooker or air fryer. Every recipe seems easy to make using common ingredients.

Amazing. We haven't yet tried any of these but I just got myself a Ninja Foodi pressure cooker/air fryer and I've been wanting to try some new recipes. I've flipped through and will be buying ingredients this week to make them! They look flavourful, easy to try, or adaptable to what we have. I love the way the recipes are presented!

What a beautiful and diverse cookbook on Mediterranean cuisine. As an Italian-American I really enjoy the all the flavors and ingredients used within the book and excited to try some new things I have never heard of. 4 stars instead of 5 because I do wish there was more pictures and saying something is "no bake" but yet cooking it in the instapot is technically baking something even if the button you push is pressure. But over all love the fact she is using the instant pot to make things like ricotta and the air fryer for arancini.

Great recipes if you have an air fryer and an instant pot, unfortunately you have to have these.I should have read the title better. The recipes were interesting and I learned a lot about the spices used.

This is a great cookbook. I like that the beginning has ingredients to keep in the pantry as well as the tools that can be used/how to use them. The pictures are beautiful but I wish there were more. The recipes look delicious and I can’t wait to try the seafood paella!

Awesome cookbook! I love Mediterranean food and I'm always excited to try new and traditional recipes. There are so many recipes that I would make and I'm so excited to start trying them all. I gave it 4 starts because most of recipes don't have photos and it makes it hard to picture how the dish looks like. This is a lovely Mediterranean cookbook to make use of your IP or air fryer. Unfortunately, it's not one that's a good fit for me at all, but others are likely to really enjoy it. It has very authentic recipes with gorgeous photos.

I wish there were a lot more photos (about 1/4 to 1/3 of the recipes seem to have photographs) but it is the lack of nutritional information that makes it a cookbook that I really can't use. So many people need to monitor their calories, fats, carbs, protein, fiber, sugar and/or sodium levels these days that it's maddening to me when publishers do not include this information.

For those on special diets, this cookbook will work somewhat well. While the author talks about how little meat is used in traditional Mediterranean dishes, she does make use of a lot of animal products. Wheat is used sometimes but gluten free folks can find plenty of dishes without it or that can be substituted. Keto, low-carb and vegan folks won't find much that will work for them, while paleo folks can find enough dishes that will work to make it worth a look (though it uses a lot of beans and grains). While the recipes do make use of time-saving devices, most of the recipes seem a little more on the gourmet side to me and may not work the best for cooks in a hurry. Kids and folks used to the Standard American Diet aren't likely to enjoy a lot of the dishes or may need some time adjusting. They do seem largely healthy and diverse in tastes. The cookbook won't work for me because of dietary issues but I also just was not really personally compelled by any of the recipes even though I generally like Mediterranean dishes. That's me though, and others are likely to really love this cookbook.

I am beginning to think Tiller Press may be making some of the best cookbooks out right now. I really enjoyed reading through this one, even if quite a few of the recipes were outside of my comfort zone. I think that’s a good thing — cookbooks need to offer something more than what you can get from the internet. This is a collection that offers 1) beautiful food photography and 2) excellent range of suggestions/recipes (skill levels, ingredients, and tools all are at a range as well).

Seldom do I come across a cookbook in which every single recipe is appealing, but I have to say that Emily Paster's Instantly Mediterranean is such a book. Geared towards cooking in an Instant Pot, electric pressure cooker, and an air fryer (most recipes are for the first two), Paster presents cuisine from all along the Mediterranean coast, ranging from savory familiar French dishes such as ratatouille to Lebanese fattoush to Israeli cheesecakes. Gorgeous photos accompany the recipes throughout.

It's important to note that this cookbook's focus is on the cuisine of Mediterranean nations, rather than the Mediterranean diet, which has become increasingly popular.

I'd highly recommend this book to anyone interested in this particular cuisine, but don't peruses while hungry, because everything looks delicious and you'll have a lengthy grocery list in no time! Recipes seem easy to follow and of course, the use of the appliances Paster designed them for makes prep and cook time a breeze. I'll definitely be on the lookout for a physical copy when it releases in September.

This is easily the best instant pot/air fryer cookbook I’ve read! And believe me I’ve read many many of them. These recipes are not your same Mediterranean recipes with a different twist. They are interesting and accessible recipes. Each recipe is well written out and easy to follow. And oh my goodness the pictures are GORGEOUS and made my mouth water. Trust me you need this cookbook!

The photos in this book are absolutely beautiful and so colourful. The recipes in this book are show stopping delicious. There were many dishes I had never heard of, but they were no short of absolutely delicious! Lots of staples in this book too!
