What a great cookbook! The material is well written and presented in an easy to follow manner. I look forward to trying out several of these recipes.

A nice mix of recipes and easy enough to cook for everyone. As someone who owns many vegetarian or vegan cookbooks this didn't add anything new but it's a good guide for people who want to add more veggie food to their lives.

I did not read More Veggies Please through an educator lens.

More Veggies Please! by Nikki Dinki has beautiful photography for recipes that are more than just throwing veggies into pasta or drowning the veggies in some sort of cheese or other sauce. The recipes tend to be more involved than what the normal version might be, but sometimes veggies need additional prep and cook time. Nothing was too complex and anyone who has been in a kitchen and has some skill would be able to use this book to include more veggies for themselves and their family.

I remember Nikki Dinki from The Next Food Network Star, and her food concept being meat on the side. Nikki being a vegetarian, she wanted to comply with all people's dietary needs, especially kids. In years past, children and vegetable did not get along. Today, children not only eat their vegetables, they can't get enough, and Nikki brilliantly accomplished that through More Veggies Please. There are so many ways to incorporate vegetables in many of our favorite foods in a way that not only can we not taste them, they actually make the dish taste better. That was the case for the Chicken Pot Pie with Sweet Potato crust. I am not a fan of chicken pot pie nor am I a fan of sweet potatoes, but Nikki brilliantly constructed a recipe that made me love them both. If I can love these recipes, imagine how much love children will give. People always say, eat your colors, and cooking & eating through Nikki Dinki's book is another exemplary way to do that.

A creative, unique, and brilliant way for children to eat their colors. This book deserves 5 stars.

Trying to cook meals with enough veggies that my small child will eat is a difficult task for a full-time work mom. this book has great tips and recipes to add veggies to a meal and to make nutritious meals with great flavors that even children will eat.

Well written, easily understandable recipes that will make veggies more appealing to both the pickiest and most adventurous eaters. More Veggies Please! is not just about pureeing something to death and stirring it into pasta sauce or drenching steamed broccoli in cheese sauce. While I’m sure that works on some level, these recipes from Nikki Dinki are full of veggies AND seriously good!

I love the way the index is set up with sections for each “hidden” vegetable listing the recipes containing it, as well as the individual recipe names. The recipes themselves may be slightly more involved than the “regular” version of the food since the vegetables will need some preparation before the actual cooking of the dish begins. Despite that, nothing seems overly complex, and I think any competent cook will be able to handle these recipes. The photographs are lovely, and the hints and notes are very helpful.

This is definitely a cookbook I am happy to have in my collection, and one I see myself using often. I am grateful to NetGalley, BenBella Books, and Goodreads for the opportunity to read, review, and enjoy More Veggies Please!

More Veggies Please! by Nikki Dinki is a great book for anyone looking to add more vegetables to their diet. Her recipes are simple to make but oh so full of flavor! You don't need to be an experienced cook, Nikki's instructions are clear and concise, ingredients she uses are basically pantry staples that you already have in your own kitchen.
With NIkki's book you will say goodbye to dull overcooked and soggy veggies and say hello to dishes bursting with aromas and amazing flavors that are so full of colors it will make your eyes sing!

More Veggies Please! by Nikki Dinki is a fresh take on the age old problem of eating more veggies. I like how the author approaches this topic, finding ways of eating more veggies naturally and without an attempt to disguise them altogether as some other books have tried. Instead, she finds ways to naturally incorporate them into meals and snacks. I tried some of her recipes and found them to be delicious. I look forward to trying more of her recipes in the near future. I received a digital copy of this book from the publisher with no obligations. These opinions are entirely my own.

Thank you to the publisher and NetGalley for a copy of this cookbook to review. Feeding your kids enough fruits and vegetables: the eternal struggle. I have four kids of my own and it is always at the back of my mind to be trying to sneak in servings of vegetables to the kids in their favorite foods. For years I have put a blend of spinach into tomato sauce, etc., but needed some newer, fresher ideas for incorporating more veggies into their diet. Enter this cookbook! I thoroughly enjoyed the artwork, layout, and photography in this book. I will admit that not every recipe is easily integrated into our family's diet, which is very meat and potato, but I did take away several of the more easily-adaptable recipes to use on a daily basis. Love the idea of putting veggies into a cheesy mac-and-cheese dish. I would definitely buy this cookbook for my personal kitchen.

I love how creative Nikki Dinki's recipes are! I have her first cookbook, and everything I have tried has been delicious. I feel like she does an awesome job keeping food tasty for families yet healthy and relatively simple to prepare. What a great cookbook!

This is the perfect recipe book for those with kids who won't eat their greens or anyone who wants to get more vegetables into your diet but still have tasty exciting food. There is a wealth and variety of recipes with simple and easy to access ingredients for all meals and tastes. There are many exciting looking sweet treats made with different vegetables. I can't wait to make more from this book.

There are so many yummy, family-friendly and veggie forward recipes in this book! Many of the recipes included are pretty standard in our house, but this book offers easy tweaks to add extra plant-based goodness to them. I’d never thought to add white beans to waffles or zucchini to French toast, but that’s genius! So excited to have this book to turn to to make sure we’re all getting our daily serving of veggies by finding clever ways to add them into what we’re already eating, in addition to our side dishes.

I reviewed the recipes in this book and there were some that sounded very good. A lot of them were recipes that would help parents add more veggies into their families meals without the family knowing. The pictures are very clear appetizing looking. The one problem that I have it that since this was an arc copy the book expires so that when I go to make one of the recipes there is a good chance that the book will be expired and I can't use it.

This took me a little while to write a review because I actually wanted to try some of the recipes.
My favorites chocolate Avocado Truffles and cauliflower chive risotto.
Disliked chicken pot pies
recipes were easy and family friendly.
The book does offer beautiful pictures of her family as well as the food. I LOVE cookbooks with food pictures!

Originally I thought this would be a vegetarian or vegan cookbook. I guess that's what I get for just reading the title and not reading the description. I really enjoyed the creative ways the author finds to incorporate more veggies in to kid friendly foods. The layout and pictures were well done and the recipes look great. I will definitely incorporate some of these tips into my own cooking.
