I can always count on Richa. Her previous 2 cookbooks were great, and this new instant pot book is equally amazing. The book includes all different types of cuisine ...Mac and cheese, Arroz con pollo, General Tso’s soy curls, Quick Lasagna , Spicy Peanut Noodles, Thai inspired curry Ramen, and so much more

Photos in cookbooks are really important to me, . Nothing is more frustrating than a cookbook filled with a ton of vanity shots, and few if any photos of the actual dishes. In this book, as with her previous books, Richa has beautiful photos of each recipe. You can tell that she has put a lot of time, effort and love into the creation of each recipe, and the photos reflect that .

Most of the recipes are quick, easy , one pot , after work / weeknight dinners. A few are just slightly more time consuming. So far I have made the Minestrone Soup, Golden Spinach Dal, Large Batch Butter Chicken Sauce ( which I added to soy curl chik’n but it would’ve been great over seitan as well), Refried Lentils ( which I put into taco shells ) . I’m having a lot of fun cooking my way through this book Everything I’ve made so far has been amazing ! I waited months for this book to come out, and it was worth the wait!.

Do not read this cookbook on an empty stomach. It will make you so hungry from looking at the photos! I have not made anything from it yet but I plan to. Having gotten an Instant Pot I am always looking for more recipe for its use and this cookbook fits the bill. For whatever reason I still prefer paper copies of cookbooks so I will be purchasing one.

Vegan Richa’s Instant Pot Cookbook

I recently got to preview an e-ARC copy of Vegan Richa’s newest cookbook through Netgalley. It will be out soon but for now is open for pre-orders.

If you know Vegan Richa, her work online, or her prior cookbooks and love them then this is a no brainer. Snatch it up! You won't be disappointed to add this to your collection and bring her meals to your instant pot. This book has her warm spice blends lending to full-depth delicious flavors, lots of details so you won’t need to question a recipe, substitutions to help those with allergies, food aversions, and those just looking to stay away from certain foods, and it also includes new ways for you to learn to use your Instant Pot for all your meals throughout the day.

If this is your first Vegan Richa book, I would say like most of her books a good portion of this book is Indian cuisine, probably around half. But this one also visits other areas of cuisine hitting here and there around the globe to bring so many delicious cuisines to your instant pot. These recipes visit countries like Japan, Jamaica, Morocco, Africa, as well as others. For those that want some familiar western cuisine it's in this cookbook too!

Some hits and misses
-It contains a great section to compare the models of different instant pots/ pressure cookers so you can find what best fits your needs.
-A Q/A section in case you run into issues or are new to instant pot/ pressure cooking.
-A basic guide to cooking grains, beans, etc. Plus a section of substitutions for common ingredients throughout the book.
-A list for your pantry needs.
-Information about ingredients, like spices, that may be new to you. One thing I feel it's missing is a chart of flavor profiles for those ingredients that may be new to some people. Like fenugreek which isn't easily substituted because of the bitter notes it adds to the meal.
-Some ingredients you may purchase just for this book are utilized much more than others. Some may only be used once in the whole book. With the majority of the recipes being Indian cuisine, it puts one recipe from another country at the end of the list for purchasing extra uncommon ingredients.
-There's prep and other appliances involved in many of these recipes. Which may throw the normal “Instant Pot Cookbook buyer” off. But the use of these appliances are normally quick and minimal. But when it's as easy as throwing all ingredients of a sauce, Bhuna Masala Sauce, into a blender and then pouring it into the instant pot I think quick prep like that makes these meals much more accessible for the everyday cook.
- I like how this book starts with the basics of giving you recipes for many things you will use/ incorporate throughout the book in many of its recipes. As well as showing you how easy it is to make these “ingredients” that you can use in your own dishes. Stock, Cashew cream sauce, Spice blends, etc.
-I appreciate the detailed lists of ingredients and substitutions provided. However, underlining the main ingredient initially called for would help ease navigation and viewing while you're collecting said ingredients.
-I personally love cookbooks that include grams/ml in their main ingredients lists to help those not as comfortable in the kitchen and more specifically in baking where accuracy matters more.
-I love that if you don't have a specific spice blend on hand or can't find that particular blend in store, you can use the recipe provided in this book for that blend. Making access greater in areas where supplies might be more limited.
-Storage instructions such as “freezing” makes this book great for preparing and making parts or whole dishes ahead of time.

-This book is also very much wholefoods based like described. It includes a lot of beans, legumes, nuts, mushrooms, soy, & spices. Most recipes revolve around those main staples and spice blends.

-It comes with many substitutions, variations, ideas, tips, and tricks of how to switch up the ingredients to make them work better for you and to ease your experience if something needs tweaking.

Overall I think this book is full of flavorful, well thought out, and detailed recipes!
If you like to visit world cuisine and easily prepare it in your home this is def the book for you
Above was my first look at the book… before starting to test out the recipes. This is where some of my views written above started to change.

So my last thoughts on the book and some recap.
These recipes go together so quickly! Once you have measured out the spices and have your ingredients together it's more “throw and go” than I initially thought.
My initial negative thoughts of other appliances outside of the instant pot being needed really hasn't been an issue and has been minimal.
I have also loved the extra instructions for keeping and freezing the recipes. I have loved throwing them into the freezer and having it on “those days ”when you don't want to cook and you just want something even quicker than quick. You have your own prepped, healthy, whole foods waiting on you to “dump and go” or have your significant other, who doesn't know how to use the instant pot, throw together a wholesome healthy meal for the family because it really is that simple.
The more I cooked from this book the more I wanted to try and now we have tried over half the book. I also feel trying recipes from the book is very important when reviewing and seeing how the book and recipes function, come together, and over all see how the family likes them.
Plus I learned new ways to use my instant pot. Like the “ steam” feature for baking. Who knew? I didn’t even know there was a “steam” button. Lol.

This will be a cookbook that I will go out and purchase and use over and over and will recommend to my friends and family.

I’m a long time blog follower of Richa Hingle and my entire family has loved all the dishes we’ve made from her first cookbook, Vegan RIcha’s Indian Cookbook.

I wanted to really try a lot of the recipes to see how they worked for me (20+ year vegan), my husband (not vegan), and our teens (vegetarian) before reviewing. I love finding vegan cookbooks with appealing food and Richa’s food knocks “appealing” to a completely elevated level.

We tried four of the recipes before I wrote this review - the chickpea flour tofu (turned out really well for me), chole (delicious), saag aloo (amazing), and masala potatoes (potatoes are one of my favorite things to eat and these are wonderful, but I omitted the black mustard seeds, and cashews). We’ll be ordering a physical copy of this cookbook because there are a lot of recipes that we want to try.

This is another terrific cookbook from Richa and if you’ve been considering going meatless and vegan, I’d strongly suggest one of her cookbooks as the complexity of flavors in her food creates such wonderfully delicious meals, you wouldn’t miss the meat aspect at all (this according to my husband).

Vegan Richa's Instant Pot Cookbook by Richa Hingle is a beautiful cookbook with step-by-step information on cooking with natural plant-based ingredients. The recipes have a nutrition guide with each dish so the reader is aware of dietary intake counts like sodium, carbs, calories, and sugar. Additionally, the recipes have alternative ingredient suggestions for those with special dietary needs or food allergies. There are over 150 delicious recipes with stunning photographs included in this book.

Is this cookbook just for vegans? Absolutely not. I am not vegan, but I do have diabetes and am always looking for healthy food and delicious recipes to help maintain proper eating habits. Some recipes contain ingredients I'm not familiar with, but life is about learning and trying out different foods. I'm excited to find new avenues to healthy living.

I use my Instant Pot several times a week. This book includes some fantastic recipes, including many that will make for wonderful winter stews and one-pot meals.

I'm not vegan but I'm always looking for ways to make vegetarian recipes so I don't have to buy more meat, which is expensive and bad for the environment. My husband LOVES meat, so having no-meat meals means that they need to be REALLY good, but I am not a huge cook. Being able to make vegan meals in an instant pot? YES. These are really varied and delicious. I highly recommend it for both vegans and non-vegans alike.

I am a big fan of Richa's pervious book, Everyday Kitchen, so I was expecting the same excellence from this book. And the book does not disappoint - Richa's unique recipe's and flavors choices lead to fantastic meals with the Instant Pot!

Vegan Richa's Instant Pot™ Cookbook is a very well curated book of plant based recipes and techniques for the Instant Pot by Richa Hingle. Due out 24th May 2022 from Hachette, it's a hefty and comprehensive 384 pages and will be available in paperback and ebook formats. It's worth noting that the ebook format has a handy interactive table of contents as well as interactive links and references throughout. I've really become enamored of ebooks with interactive formats lately.

I love my Instant Pot beyond all reason. It's a staple of my kitchen and it gets used almost every day for food prep. I'm also a busy person with a job that eats up a significant amount of my time. This book combines all of the strengths of the instant pot cooker with yummy Indian cuisine.

I liked the efficient and accessible layout of this book. A general introduction covers general plant based cooking as well as the long history of vegetarian cooking from the rich Indian food culture, and a solid tutorial for cooking with the Instant Pot. The author has included a really good and useful pantry section with lists and ingredients, sourcing, and storage. The following chapters contain the recipes, arranged thematically: basics, Indian comfort food, dals lentils peas & beans, vegetables and grains, soups & chilis, curries & stews, stir fries, pastas & casseroles, tacos burgers & wraps, pot-in-pot meals, breakfasts, and desserts (whew!).

The recipes have their ingredients listed bullet style in a sidebar. Measurements are given in US standard with metric measures in parentheses. Special tools and ingredients are also listed, along with yields and cooking directions. The ingredients will mostly be easily sourced at any moderately well stocked grocery store or international food store.

The photography is abundantly plentiful and most of the recipes are pictured. The photos which are included in the cookbook are well done, clear, appealing, and (for tutorial photos) easy to follow.

Nicely done. This book would make a great gift/housewarming for someone looking for instant pot recipes as well as readers interested in incorporating more plant based meals into their daily routing. It would also make a nice selection for library collections.

Fabulous Instant Pot recipes. I know Richa’s recipes to be easy and delicious, and the 5+ recipes I have made thus far from this book did not disappoint!

This was a really nice mix of recipes, while different from her other cookbooks, I loved some of the editorial changes in the way things were organized.
Over the month and a half I used this cookbook, me and my family really enjoyed it, I cannot wait to receive the finished copy, that's how much I enjoyed the recipes we tried.

She has great tips and tricks, also alternatives to anything she does with the separate sauces recipes and the desserts I can't wait to make this summer.
I loved how many pictures there are in this book and how fast some of the recipes are to make.

Overall another great cookbook by Richa Hingle.

Really comprehensive vegan instant pot guide. I am kind of clueless when it comes to using the instant pot often so I was very impressed with all the different ways you can make something with the recipes in this book. It had a lot of Indian recipes but also recipes from all across the world with a vegan spin. I only saw this as an ARC, graciously from NetGalley and the publishers. So this might not be valid for the actual in paper copy but my only critique is if there were nicer pictures, formatting and graphic design it would elevate this book even further. Otherwise a great guide!

After requesting this book life got busy so I never got a chance to make them. Figured it's been awhile so I should review from what I saw. The meals looked great and I could see trying them when my kids are a bit more adventurous, I have more time to experiment, or I want to branch out. Thanks for letting me look through it.

Vegan Richa, has done a fantastic job with putting together a vegan instant pot cookbook! For those who enjoy Indian dishes half of the cookbook is dedicated to such foods the other half of the book is dedicated to not only American dishes but Mexican and so on. Examples of the dishes are, mushroom stroganoff, refried lentils, mushroom bourguignon with potato cauliflower mash, lentil walnut burger, cauliflower alfredo, quick lasagna, carrot cake and so on. The dishes don't require a lot of ingredients and most of the spices required will be used again in other dishes throughout the cookbook. There are helpful tips throughout the cookbook on cooking times to different beans and grains, also tips on ingredient substitutions it one doesn't want soy, gluten or other ingredients in certain recipes. I will purchase a physical copy of this cookbook for there are many fabulous recipes I can't wait to try.

This cookbook will make you hungry just by flipping through it.
The photos are beautiful and there are step by step photos to help eliminate any doubt as you work through the recipes. Some of the ingredient lists are lengthy, but the steps are easy to follow.
There is a detailed pantry section as well as information on InstantPot cooking. This makes this book approachable for new InstantPot enthusiasts.

I'm always looking for quick, healthy recipes that don't create a lot of dishes. This book fits the bill. There are many recipes in this cookbook that I'd like to try. About 50% of the recipes are from Richa's Indian culture and the rest are from a variety of other regions. I like that most of the ingredients are staples and are very easy to find at any grocery store. Most of the recipes do require a LOT of ingredients though so this cookbook may not be for people who want to keep things simple.

I was delighted to see an InstantPot version of Vegan Richa's vegan food.
Vegan + InstantPot means books fly off the shelves and the book and recipes are very adaptable to adding in animal products. I love the book because it uses mostly whole ingredients instead of pre-prepared and packaged foods. 5 stars

I am a huge fan of Vegan Richa. Her cookbooks always prioritize flavor and great ingredients. This one is no different. To be honest, I have had a lot of trouble developing flavor in my InstantPot. So many recipes are quick, but bland. Vegan Richa has made me enjoy the InstantPot again. I love that this cookbooks contains fantastic recipes, but also lots of charts for how to cook Vegan staples. I know that I will use those charts almost as much as the recipes.
