This is a great guide on how to create a varied menu on a vegan diet. In short, it details that not eating meat doesn't have to limit the variety in what you eat. It's colorful and creative.

Vegan Recipes Made with Love from Bo’s Kitchen

Delightful delicious tasty sounding recipes beautifully illustrated with gorgeous photographs to showcase this vegan cookbook filled with recipes I wouldn’t mind trying.

What I liked:
* The introduction to the cookbook and the author
* The way the recipes are set up and that they seem easy to follow
* That most ingredients are easy to find in most countries – though not currently here in Lebanon
* That there are basics like how to make plant milks and other stapes
* The breakdown of the chapters
* The variety and creativity of the recipes
* That the recipes appear to be ones that children and adults would like
* That there were several recipes I would like to try making

What I didn’t like:
* That there is no nutritional information with the recipes
* That not every ingredient is available where I live (small village in Lebanon)

Eat the Rainbow is a vegan cookbook.

I do not have much experience with vegan cookbooks. This one has absolutely beautiful pictures that focus on the rainbow theme of the cookbook. I would like to try a number of the smoothie recipes, we like good smoothies for breakfast or snacks at our house. Heavenly chocolate and strawberry granola sounds good and the picture makes me think that I definitely need to try it.

The roasted rainbow veggie tray bake looks really good, so this is a recipe I plan to try. This is a cookbook that I will use to add more vegan recipes to our weekly menu.

Porterfield describes her entry into the vegan cookbook through her Instagram. I love the democratic way social media helps good recipes and beautiful food photography to rise to the top of the market. Her journey to eat more vegan is for her own health and the good of the environment. I didn’t find the introduction too preachy or judgmental.

I appreciate her take on the basics, good smoothies, a great staple of brunches and meals. I really appreciated the kid section and the make your own staples from scratch section (almond butter, nut milks). This book is a great mix of special occasion recipes and base recipes I would revisit often. I think this would be a great book to have so you can learn her food philosophy and riff off of it to make your own variations. I would highly recommend this book to anyone vegan or vegan curious.

Stunning book from cover to cover, ever single page is a feast for the senses and I want to make everything!
I also need to add, whilst this is a vegan cookbook I am not vegan but I also am mindful in my consumption.
I really like this book, it has some great recipes and not the same rinse and repeat that we have had before. I can't wait to try making some of the desserts at the weekend.
Thank you to the author, it has got me excited to be in the kitchen!

I was looking for a recipe book with healthy vegan and vegetarian food, and from the cover and description, this appeared to be what I was looking for.
I wasn't disappointed. I have many cookery books, but very few that I go through and want to mark every page as "to try". I ended up marking most of these recipes - very few didn't appeal to me.

I've so far tried a few of the recipes and been very pleased with the results. The instructions are easy to follow, and the ingredient list is mainly items you will have in your store cupboard, or can easily get from a local supermarket. I get a feeling with this book that I'll be marking many of the recipes as not only "to try", but "cook again"!

Most of the recipes are accompanied by gorgeous photos.

If you're looking for a vegan cookery book with healthy recipes that are a little bit different yet contain ingredients that you already have or can easily get, I would highly recommend this one.

Eat the Rainbow: Vegan Recipes Made with Love from Bo's Kitchen is a gorgeous recipe book full of colour and vibrancy. The recipes are delicious and appealing and there are beautiful colour photos to go with them. The book is well structured without too much waffle and is a treat for the eyes. There are so many recipes I want to try. The perfect book.

This cookbook contains only vegan recipes. The instructions are very clear. The photographs are very beautiful and colourful which make the food look very appealing.
A very useful book for those who are just beginning their vegan journey but also for those who have been vegan for a long time.

So many yummy recipes and the pictures were so vibrant, it helped with the process of bringing these to life. I loved how the ingredients were simple. I've been wanting to try more vegan meals for my family and this book was perfect. Thank you!

I am not vegan, but enjoy cooking a lot and always happy to discover new type of food, Cooking and using ingredients in a different way that I usually do. This book is definitely good for beginner with easy and approachable recipe with ingredients easy to find. The recipe is clear and easy to follow.
I removed a star from my review as, even if the picture are nice, I really felt I was on an influencer instagram and kid of make me think that it is too pretty for a presentation and look more like the things you will put on social media. That looked too perfect for the style of the book that seems to be for beginners. I know that might seem a bit picky but that was my feeling for this one. Looking forward to try more recipe as they are nice :)

This book has beautiful images and so many good recipes!

I’m not a vegetarian or vegan but I like to eat healthy and this is a really good book for that!

It has everything you need for a balanced healty lifestyle.

This is a book I would buy myself!

"Let food be the medicine and medicine be the food."

Tahini -- a Middle Eastern condiment made from toasted ground hulled sesame. It is served by itself or as a major ingredient in hummus, baba ghanoush, and halva. (Thank you Google.)

Tahini happened to be in several recipes that visually appealed to me. There were many other ingredients I didn't know: however, I don't see the need to put them here or frankly Google them.

The recipes have a picture, and many are appetizing -- eat the rainbow. The book is divided for menu planning. I scanned and stopped on what looked interesting, and then scrolled back stopping at what sounded good. The results were the same -- I would need a great deal of help should I decide to eat vegan cold turkey.

As with every eating plan, there is a learning curve. In addition, there are new ingredients and equipment needs. Some plans need a scale, this needs a blender.

I'm certain I wouldn't pick this to be gifted. This is more of a personal pick.

I recently completed Veganuary and requested this book as part of my quest to keep incorporating plant based meals into my diet, and boy will I!

The recipes are simple to follow and look delicious. I’m particularly excited to try the Tomato Heart Tart and the warming winter squash soup.

I'm not vegan but, like many people, I'm always looking for ways to get more veggies into my diet. This book is an uncomplicated way to do just that. These recipes are pretty basic, I don't think you need many skills in the kitchen to make good use of this book. The next time I find out someone in my life is moving to a vegan or vegetarian diet this is the book I'll give them.

Eat the Rainbow: Vegan Recipes Made With Love From Bo's Kitchen by Harriet Porterfield is a very pretty vegan cookbook. The photos are very pretty and perfectly at home on Instagram.

But much like Instagram, it prioritizes pretty pictures over actually interesting content. I know not everyone likes a ton of narrative in a cookbook, so that might not be a dealbreaker for you; some people just want the recipes and this one fulfills that. I did find the recipes mostly lackluster though. While flipping through, I saw maybe one or two that seemed interesting. There seemed to be a lot more sweet options than savory options. And a lot more smoothies than really seems necessary. Maybe it's just me, but I fail to see the need for a recipe for a smoothie in the first place. Perhaps it's really great for beginners, but I wasn't really impressed. It's a very pretty book for a coffee table though.

Personally, I am not vegan but I make vegan or vegetarian recipes regularly. It looks as if Harriet’s recipes attempt to redefine vegan recipes. I haven’t made these recipes yet to test-taste them, but they incorporate new ways to use vegetarian ingredients such as adding to age-old recipes to make them more nutrient-dense (e.g., adding turmeric to lemon tarts). I think some of the recipes are too “out there,” such as the pink beet and chocolate muffins. The icing is cashews, syrup, coconut oil, vanilla, and beetroot powder. - it doesn’t look or sound appetizing. Making desserts “healthy” doesn’t always work, and some recipes such as icing should be left as they are. The photos are of top-notch quality and I loved the names of her food categories (E.g., Magical Mains and Kaleidoscope Salads and Sides. I went ahead and gave her a follow on Instagram after reviewing this book. I will look forward to her innovative recipes!

"Eat the Rainbow" is a beautifully designed and photographed cookbook. The recipes are easy to follow and clear. I appreciated that the prep and cook times were listed and seemed to be very accurate based on the recipes I cooked. There are quite a few plant-based/vegan "staples" in here, so this would be a good cookbook for beginners. The recipes that really caught my eye were the more unique ones, like the Smashing Sushi Sandwich.

Most of the recipes I made were delicious, but there were a few that I feel like I'd need to tinker with to get to work the way I assume they're supposed to.

This is a very simple and approachable cookbook with recipes that aren't too difficult to follow. The photography is nicely done, with good composition.

That said, it wasn't really what I'd personally be looking for as it's not very friendly for people with nut allergies. It has some nice, budget-friendly ideas for meal planning or a party menu. However, if you have a decent amount of experience cooking, you'll probably find it a bit too basic.

I'm always on the lookout for new vegan cookbooks. Sadly, I can't say I'll be purchasing a permanent copy of this one. I feel like I've seen nearly all, or maybe even all, of these recipes elsewhere, over and over again.

I also hope this book is getting another once over by a proofreader as there are missing ingredients/instructions. For example, the roti recipe says to add a specific amount of something in the instructions, but doesn't actually say what. Reading on, it's supposed to say water but this is also missing from the ingredient list. Water is also missing from the ingredients in another bread recipe as well as some milk recipes, but included in others so these are definitely errors and not chalked up to style as it's not consistent. I was reviewing an ARC copy so hopefully errors like this will be fixed before publication.
