I’ve been vegan 8 years so its safe to say ive seen a lot of cookbooks. This is definitely a beginner’s vegan cookbook. My personal opinion these are recipes ive seen done similarly if not exactly in other vegan cookbook (older cookbooks). They are easy and not very original but vegan nonetheless just with new names. The only thing that stood out to me was the heart tart. So I wouldn’t recommend this book to any long standing vegans i know.

This book appears to have been written especially for me. It has everything I want in a cookbook: not too many or unusual ingredients, brief introductory chapters, simple, sleek layout and a beautiful photo of every recipe. It is a joy to page through and even though I was not hungry when beginning my viewing, it didn’t take long for me to find several recipes I’d like to try.

As a vegetarian wanting to eat more vegan, this book was perfect. There are so many recepies i want to try out. The photographs are really good, the visual of the meals made me really want to try out everything.
I loved the variety for the different meals too. There were a lot of options to choose from for breakfast, lunch, dinner and desserts.

This book was so nicely put together with such beautiful photographs! The visuals tend to sell a cookbook for me, and I loved how this was presented. I haven't tried any recipes yet but this definitely put some on my radar to try!

While I'm not vegan myself, I have been really into vegan cookbooks recently for inspiration on making more veggie-packed meals. This book has all the typical vegan cookbook recipes - smoothies, salads, sweet potatoes, and tofu to name a few. I haven't gotten to make everything that I want too from this book just yet, but so far my favorite is the Smoky Sweet Potato Pizza. I'm really excited to try the No-Bake Galaxy Blueberry Donuts. My only qualm is that only some of her ingredients are listed in US measurements so if you're American like me, you have to do a lot of searching for the conversions. Not the end of the world but a little extra step that you have to take. I'd recommend this cookbook if you're looking for some recipe inspo to eat cleaner or add in more veggies to your diet - there is definitely something for everyone here!

This is a delightful vegan cookbook full of beautiful and colorful photos of the foods that she makes.

I hadn’t heard of this author or her social media accounts previously. I found this book on Netgalley, where I stalk the Cooking section. I love cookbooks that focus on making healthy vegan meals without relying on a lot of processed foods.

I highlighted a lot of recipes to try – 14 to be exact. That is a lot of me to choose in one book. There aren’t a lot of recipes that are revolutionary here but each is fairly simple and realistic for home cooks. Most of the recipes I chose are variations on things I already make but gave me some good ideas for slightly new techniques or ingredients to add.

Chocolate chia pudding with raspberries and coconut cream – She recommends blending the pudding after it sets for a smooth consistency
Simply sweet and sour tofu bowls – I’m always looking for Asian-inspired recipes that have a lot of flavor while avoiding foods that trigger allergies around here
Tomato heart tart – This uses puff pastry as a quick base for a pizza
Smokey sweet potato pizza – I’m intrigued by this sweet potato based pizza dough.
One-pot veggie tagine with jewelled bulgur wheat – This is a good way to load up on lots of veggies
Jackfruit buddha bowls with quick satay sauce – I’d use this for the method of baking jackfruit
Magical Mexican salad bowl – This has a quick pickled onion recipe
No-bake galaxy blueberry donuts – Gluten-free and no bake donuts? I’m going to be skeptical until I try this myself
Lush lime drizzle cake with coconut frosting – Who doesn’t love a vegan drizzle cake?
Bright blueberry and lemon loaf cake – That just sounds happy
Cheeky chickpea nuggets – This is from a section on feeding toddlers which is something I don’t know if I’ve seen before in a cookbook. I’m a fan of everything chickpea so I don’t care if it is toddler food.
Colorful carrot chips – Baked carrot fries would be a nice variation of the baked sweet potatoes I make often
Berry bliss balls – Little no-bake bites that seem similar to the donuts
Berry best chia jam – I have chia seeds and frozen fruit so why do I buy jam when I can make it myself?
This is a British cookbook so readers from elsewhere may need to Google a few ingredients to see what she means. She does a good job of listing temperatures and measurements in lots of units so people everywhere can make these recipes.

I'm always looking for new recipes and easy to make healthy breakfasts and lunches, to say i have been eating well this week is an understatement lol

These are the recipes i have tried this week all were easy to make and absolutely delicious

Black forest smoothie bowl
fluffy strawberry banana smoothie bowl
Dreamy cherry vanilla iced latte
vibrant raspberry jam and peanut butter crepes
Tomato heart tart
super simple roasted tomato soup
bright blueberry and lemon loaf cake
crispy BBQ cauliflower bites (these were yum!)

One recipe that was a winner above all else for me was the Warming winter squash soup with toasted croutons, it is so so delicious and something I will be making a lot more often!

An amazing book with so many recipe ideas and I love that it was using easy to find ingredients most of which I already had available to me at home. Highly recommend!

Nice little recipe book. Pictures and crisp, colorful and visually appealing.

Recipes are decent- most require a time commitment, so be prepared to be doing quite a bit of chopping, mixing and general preparation prior to enjoying these tasty meals.

If you don’t mind investing a decent amount of time in the kitchen, you might like these delicious looking creations. If you’re mainly looking for quicker things to put together, maybe not so much this recipe book.

"Eat the Rainbow" by Harriet Porterfield is a gorgeously photographed vegan cookbook that will have you running to your kitchen to make many of these beautiful dishes.

Each dish in the cookbook is accompanied by a photograph of the finished product and I found myself salivating as I looked through the recipes.

The book spans all meals, from breakfasts, lunches, salads, mains and desserts and offers a wide range of delicious, achievable recipes that even novice cooks will be able to reproduce successfully. And there is no special equipment. She does mention some items that might make the preparation easier but they are far from necessary.

This is a lovely book for vegans, vegetarians and anyone looking to expand their repertoire of non-meat dishes.

This cookbook is very reminiscent of ones I’ve seen from Earthy Andy. Where it seems as if the focus is primarily smoothies & yogurt bowls with a smattering of curry & pasta recipes- just enough to be “relevant” for every day or meal use.

While the photos are visually stunning, there are only a handful of recipes I’d take the time to make since the rest, quite honestly feel redundant. However, I’ll watch multiple book reviews of the same book so redundancy must not bother me much.

If boho, beach-y vegan is your vibe, this is the cookbook for you.

This is a stunning cookbook with a focus on relatively easy recipes using colorful whole food ingredients. There are photos for every recipe and they are gorgeous. Lots of the recipes are gluten free.

Minus one star for the lack of nutritional information. Still a wonderful resource. Recommended.

After reading and looking through Eat the Rainbow, I am initially interested in making about half (give or take) of the recipes included and look forward to trying out some of the dishes soon.

This book starts off looking like the sort of trendy vegan cookbook that would appeal to a younger crowd as it begins with a plethora of different smoothie bowls, which aren't really my thing. I would have liked to see more savory breakfast options besides just the one for Golden Chickpea Pancakes that are to be topped with avocado and cooked tomatoes. The recipe sounds tasty, but one does not always have a reasonably priced, ripe avocado on hand.

Many of the main dishes sound and look delicious though, and who doesn't love when cookbooks have beautiful pictures of the food?! There is also a short "kids" section with yummy recipes that aren't just for kids but are some that picky children may enjoy.

I love vegan cookbooks. Porterfield's book has stunning photographs that go well with the title of her collection. Good recipes for vegetarians too. But the recipes are more on the sweet side than savory for me personally. Nonetheless, definitely a good book for those who love sweet options for breakfasts and quick brunch ideas.

I am not a vegan, or a vegetarian but I do love my vegetables and I love have numerous colours on my plate. So this book sounded like it was something that would be of interest to me.

And it is very interesting with some lovely recipes for all meals, snacks, desserts and more. The recipes are easy and tasty and most anyone can make them I'm sure. There are so many new ideas for eating a healthy meat free meal and it is something I can use to replace meat in some meals or even use as a side or snack for any occasion.

The photos are lovely and made me want to try my hand at some of the recipes, which of course I did.

A wonderful book for anyone who wants more vegetables and plant based foods in their diets.

We love a vegan cookbook!! This cookbook might be one of the most visually appealing cookbooks I have ever seen. The photographs, like works of art, are absolutely stunning! Filled with beautiful recipes, this book also gives readers a foundation to adapt their practices and incorporate veganism easily into their lives. The introduction provides insights to helpful tools and how to shop and keep cupboard essentials for maintaining a vegan diet. The recipes look delightful and successfully made me hungry and itching to try them.

Eat the Rainbow: Vegan Recipes Made with Love by Harriet Porterfield is full of healthy and easy to cook vegan recipes.

I was drawn to this vegan cookery as the focus is on cooking up healthy and colourful vegan meals, as opposed to vegan junk food. Fruit and vegetables are truly celebrated in the recipes.

The book is divided into the sections: Brilliant Breakfasts and Smoothies; Jofful Brunches; Magical Mains; Kaleidoscope Salads and Sides; Diamond Deserts; Mindful Cakes and Bakes; Colourful Kids; Everyday Essentials. The recipes are really easy to follow and nicely set out in bullet points.

I loved the Tips and Nutritional information at the end of each recipe - detailing substitutes and nutritional information and also on how leftovers could be used.

The Colourful Kids section has recipes that wouldn’t have been out of place in the main section of the book. We baked the Cheesy courgette and carrot muffins from this section which were really delicious and great for all our packed lunches for both school and work.

I also cooked the Rainbow chilli-stuffed sweet potatoes recipe, which was very quick, nutritious and delicious. I can’t wait to try the other recipes.

A special mention should also be made about the outstanding photography that really made the dishes look so vibrant and delicious.

A loving ode to vegan cooking with whole ingredients, this book will show you how to eat as a vegan....healthily. (No 100-ingredient "chik'n" to be found here!)

The recipes are simple and appealing and are understandable by cooks of all levels...I don't like smoothies but there are great ideas here if that floats your boat and as I love "buddha bowls" I can eat very well and enjoy what I am eating as there are great ideas for those in here. If you have a person in your home who is vegetarian or an omnivore you can easily add in animal products to make everyone in your home happy without making 4 different meals for dinner.

Overall, a great vegan cookbook.

This is a beautiful book!

I'm not vegan but am interested in ways to reduce what animal products I eat. This book uses vegan-versions of cheese and milk which isn't really my thing, but there's a nice variety of recipes for those who are vegan. This book includes breakfasts, lunches, dinners, and desserts though there's a lot of smoothies and smoothie-adjacent foods included.

The photos are great and there's some good recipes making this a helpful book.
