Healthy ingredients. Tasty recipes. No leftovers.

Cooking for one often involves making a dish that feeds four (or more), calling it “meal prep” and then feeling obligated to eat the remaining three (or more!) portions in the next four days. Sometimes that works, but sometimes….well, it doesn’t. I’m sure that I am not alone in having guiltily dumped some uneaten leftovers into the trash or down the disposal. But cutting recipes down to a single portion doesn’t always work well, either. This cookbook offers a different option….recipes that are specifically designed for a single portion. Even desserts! The ingredients are healthy, lots of fresh veggies and fruits, lean meats, healthy fats, etc., all of the elements of a healthy Mediterranean diet. The book is organized by basic meal type (breakfast, snacks, salads and soups, poultry, and so on), so the reader can easily focus in on what they want to prepare. As i flipped through the 175 recipes, I jotted down several for which I knew i had all of the ingredients already on hand, and got to work testing them out. I made Shakshuka (Egg Cooked in Tomato Sauce), a spin on a dish from Northern Africa, one morning; an Italian Mixed Green Salad one night to go with some pasta; and a Beef and Black Bean Enchilada Casserole on another night. I have a Chicken and Noodles Casserole (yes, a casserole for one!) on tap for tonight, possibly with an Applesauce Mug Cake for dessert, and have a Three Bean Salad and Chicken with Lemon Asparagus planned for the week ahead.
To make the actual making of each recipe go quickly, preplanning is helpful. Choosing recipes that will use common ingredients can both prevent waste (asparagus is generally sold as a pound, but a single serving is certainly less than that, for example, so either buy less if you can or find a few recipes that will use it up) and to make life easy. Since a single portion recipe will often call for small amounts of things like onions and celery, but many recipes will use those ingredients, chopping a whole onion and a few stalks of celery at one time, and storing the excess in the fridge to grab in the coming days, saves both time and minimizes how many times you need to take out the knife and cutting board, and then wash them. I found the portion sizes appropriate, and found the prep time to be reasonable. I was glad to see that the majority of the recipes used primarily pantry and grocery staples that will be found in most cook’s kitchens and/or on their weekly lists. Hints are also given on substitutions, and ways to minimize waste. All in all, I found that this cookbook lived up to its billing. If you find yourself, whether always of just sometimes, cooking for just one, and you aren’t a huge fan of leftovers, you will want to pick up a copy. I really liked the recipes in the Mediterranean cookbook. They were creative but still easy to use. The dips were my favorite part, so easy to make but flavorful. I liked the list of ingredients and tools needed at the beginning. Of course, I wish there were more photos!

This was really good. It is the same recipes that you see in every cookbook. This had some very good recipes in it that I enjoyed.

Mediterranean cooking is my absolute favourite as it's what I grew up with and I'm always looking for new recipes inspired by the flavours of the region. This book certainly provides heaps and heaps of delicious recipes, you're sure to find something new.

I eat with my eyes so I wish every recipe had it's own accompanying photograph but there's so many I can see why there wasn't!

I’ve used Jagger’s The Ultimate Baking for Once Cookbook and really enjoyed trying out some new recipes. I loved that the batches are small so if it’s not something that my family enjoys, we don’t have a big batch to worry about, and if you’re like me, I get bored of any food after I’ve had it for a few days, even sweets. In the same vein, Jagger has now created a cookbook for one creating Mediterranean dishes.

• I love to incorporate healthy meals into my weekly lineup. I’m currently living a healthy version of a keto lifestyle and doing intermittent fasting, so a good healthy meal or two during my eating window is important to me.
• This is a delightful cookbook specifically designed for individuals who are seeking to follow the Mediterranean diet while cooking for themselves. With its focus on creating nourishing and flavorful solo meals, this cookbook provides an excellent resource for those looking to maintain a healthy and balanced lifestyle.
• Cooking for one can sometimes be challenging and I liked that the recipes focused on solo servings. The portion sizes are just right and you can easily adjust the recipes if you need to make it for more than one person. I love the fact that I can have a healthy meal that is simple to make and that I don't have to deal with leftovers.
• If you are looking to embrace the Mediterranean lifestyle, this cookbook is a great place to start.

This book is very recipe friendly for those who have most of the Mediterranean diet staples. Easy recipes to follow with fresh ingredients, and all for one person. This is the perfect book for those who may have more than one dietary alignment in the same household. I recommend this book for those just beginning to explore the Mediterranean diet.

An excellent and inventive cookbook adapting this diet for single servings. Although for a general cookbook, 175 recipes doesn't seem like much; the book has so many good & inventive recipes you'll find it hard to choose what one to cook.

With introductory information about the Mediterranean Diet and helpful ideas for stocking your pantry and cooking tools, readers will find it deserves a place o the shelf.

This was a pretty good cookbook with a lot of recipes that are easy to make and very doable for amateur cooks. I think it's a great beginner cookbook, but I felt like some of the recipes were a bit more Americanized vs Mediterranean. However, if you are starting to eat healthy and need a place to start without being overwhelmed, then I think this is the perfect book for you. Overall, I would recommend this book.

This is a fine cookbook but I often felt like it missed the point. The main reason most people in the states want to switch to a Mediterranean diet is for the health and longevity that people in the blue zones typically enjoy. But first of all, the food is one part of an overall lifestyle that incorporates lots more movement, socialization, physical work and a totally different way of life. And if you research what people really eat in these regions traditionally, it was simple, fresh, homemade food. Breakfast would not be layered overnight oats with nuts and fruit and low-fat Greek yogurt, it would be a hard boiled egg and a handful of olives and cherry tomatoes or leftover homemade soup or a piece of homemade flatbread dipped in homemade hummus and a drizzle of authentic olive oil. A salad might be a bowl full of greens from the garden freshly picked and still brimming with every vitamin and mineral, with a splash of oil and vinegar and some crumbled feta cheese and walnuts. It’s simple and fresh and easy. It doesn’t call for complex recipes made with canned beans, canned low sodium vegetable broth, low-fat yogurt and breads made weeks ago and full of dough conditioners and preservatives. I also felt that the recipes were much more like American dishes with Mediterranean elements rather than being very traditional. That’s true with most Mediterranean cookbooks, not just this one.

That said, I appreciate the novel approach of this one offering recipes for one person. The recipes seem tasty and fairly easy. I appreciated the nutritional information for each recipe. Do note that there aren’t many photos. The book will work fairly well for people on special diets like gluten free and vegetarian. It won’t work as well for people on a low carb diet or those who avoid grains (particularly wheat, rice and oats).

I have the original version of this cookbook and I LOVE it, so I was so excited to see this. I’ve been wanting to look into the Mediterranean diet for a while.

These recipes look SO delicious! I haven’t made any of them yet, but I love how everything is made so simple to follow. There’s also such variety in case you don’t like fish or seafood so you still have plenty to choose from.

Yay!! Finally - a cookbook for one!!

Having recently moved towards a Mediterranean diet I was excited for this book.

Personally though, I would love to see extra notes for each recipe I.e. can be made ahead, perfect for reheating as leftovers, freezable etc.

Will be keeping an eye out for a hard copy of this book once released

I really liked the recipes in this book as they are healthy and tasty but I would have to double or triple (or more) each recipe as I am not going to cook a meal and not have leftovers! (This was a major bone of contention with an ex-boyfriend of mine as HIS mom cooked a fresh meal every night of the year which I refused to do - he once ate four servings of dinner just to tick me off! Thank goodness hubby is a leftover lover as I love to cook but won't do it every day!)
These recipes are easy to do if you have the ingredients in your fridge and larder vs. making up a shopping list and cooking from that - I am not sure how you are going to save money if you have to buy 21 possible meal combinations a week and not have any food go bad, though ... food is darn expensive these days ... but I guess that if you are making 21 combinations of meals from core ingredients it would work...for you. Not me.
This is a book that I will recommend at our branch, but I think the cover needs re-doing as it is not going to POP on the shelves...it looks like a fiction book and not a cookbook. (Hey, I said that I would be honest!)

The Ultimate Mediterranean Diet Cooking for One Cookbook is just about perfect for anyone who wants to eat healthy! These recipes could easily be adapted if you are cooking for two or more. I love to follow a Mediterranean diet and am always looking for different breakfast ideas so this cookbook was perfect for me!

I would’ve given this the full 5 stars, but my hold up was lack of pictures. I really like to see what I’m going to be making and what it should look like, and/or presentation for guests.
The recipes were all amazing, and very doable with ingredients that should be readily accessible at most grocery stores. The recipes have manageable numbers of ingredients and easy to follow directions. The info in the beginning is quite useful as well. I did not try a recipe this time around due to an illness but will try as soon as I’m feeling better.

At last, a recipe book full of food I want to make ! I made the Chicken and Mushroom Marsala for my tea and it was delicious. Full of recipes using the sort of ingredients you can find in all the supermarkets, no more searching on the internet for ingredients you have never heard of and will only use one and then forget. The husband was going out to dinner but I let him taste mine (cruel I know) and he decided that it was probably much better than he was likely to get served. Doubling up tomorrow. Love this book.
