This is fabulous collection of pressure canning recipes with instructions easy to follow. I am a beginner and appreciate the authors detailed instructions.

The book is broken down into chapters with food groups, such as Vegetables, Meats, and Soups. My favorite chapter "Meals in a Jar," has some amazing recipe ideas.

I've been interested in pressure canning for ages and this book does make the process seem really easy for newbies. The instructions were clear and the recipes sound really good. I just really really wished there were photos of the final products.

I had no idea you could can so many things. Will I can some of these recipes? No but I could. Easy to follow, step by step instructions. From beans & staples to full meals.

4 Stars! This is a great starting out book to pressure canning for beginners. I learned a lot of information and got a step by step guide to pressure canning. I never even knew there were different types of canning, I just always assumed one way was used for everything. Who knew!? Also includes 50 recipes, most of which I’d love to try. Wish the book had more photos since there wasn’t many at all. The recipes looked pretty good and gives you the gist of what you can can. This book explains all about ph balance and how to insure safe canned food. Chapters on Vegetables; Beans and Staples; Stocks, Soups and Stews; Poultry, Meat & Game; and Meals in a Jar. Great for beginners.

I received an arc from NetGalley and this is my honest opinion.

I was excited to read and review this book as I am a new canner and soon to be pressure canner. The recipes are easy to follow and have a manageable ingredient list.

This book makes me feel relaxed about canning and doesn’t intimidate me at all. Well thought out and one I would recommend.

Pressure Canning for Beginners is a basic, accessible tutorial guide for beginners with some recipes, curated and written by Amber Benson. Released 4th April 2023 by Callisto on their Rockridge Press imprint, it's 144 pages and available in paperback and ebook formats. It's worth noting that the ebook format has a handy interactive table of contents as well as interactive links. I've really become enamored of ebooks with interactive formats lately. For Kindle Unlimited subscribers, this book is currently included in the KU subscription library to borrow and read for free.

As the cover suggests, this is a very basic and easy to understand entry-level tutorial guide with 50 recipes to get readers into safely pressure canning garden produce safely and with a bare minimum of cost and equipment. The first chapter covers necessary gear and supplies, ingredients, and safety info such as pH (explained easily and painlessly), different packing and processing methods, and storage concerns. The writing is very simple and easy to understand and new beginners will find it supportive and encouraging.

The following chapters contain the recipes arranged thematically: vegetables, beans & staples, stocks soups & stews, poultry meat & game, and meals in a jar. Recipes are given with an introduction, processing method, ingredients in a bullet list, and followed by step-by-step instructions. Yields are provided and ingredient measures are given in imperial (American) units only. Nutritional info is not provided.

The recipes are simple, with easily obtained ingredients. Nearly all are fairly versatile and will be usable by most families. There is very little photography or non-text illustration provided in the cookbook. There are a few general photos scattered throughout which are mostly stock photos.

Four stars. This is never going to replace the Ball Blue Book, but there are good recipes here with some good usable variations on the standards. It would be a good choice for public library acquisition, community/allotment garden libraries, self-sufficiency folks, and home use.

This is a good basic book on pressure canning. There are very few photographs for the recipes and no nutritional information. It gives basic instructions on pressure canning and then chapters on sauces, soups, meats, etc. There is a surprising focus on meats, including game like wild boar and elk, so it will be less useful for vegetarians. I still prefer my Ball cookbooks but this has some fun and creative recipes for things like mushrooms and main dishes.

I always thought of canning as jams and pickles. But this book totally took me in with way more options. Having become handicapped a few years ago, I have some good days and some bad days. I like the idea of putting food up on my good days so that we have home cook meals on the bad days. This book upped my game and I recommend it to anyone who wants to prep and pre-cook meals like I do.

Food is so expensive these days that people are seriously getting into canning their garden's bounty...we get asked for books daily about this subject. There is an initial outlay for supplies, but in the end, it will pay for itself over and over again. This book explains the subject well and its recipes are really yummy as well- unlike some people I would not can meat, but the Amish and Mennonites have been doing it for decades+++ (due to a lack of electricity for freezers) so it might work for you as well. Highy recommended.

Overall, I think this is good beginners book on pressure canning. The author gives important information about safety and the canning process. The recipes are well laid out and easy to understand. The only thing I would have like to see is smaller amounts to can. Many of the meat and chicken recipes call for very large amounts and seem like it's more than I would want to tackle.

About ten years ago I started making jams and marmalades and preserved them using a hot water bath. I have long wanted to try pressure canning but have been wary of the differences in procedures and equipment. This book is a great source for a beginner pressure canner like me. It is clear and concise and details all the steps to successful pressure canning. After reading Benson's book, I feel ready to tackle this new to me method of preserving and conserving food.

Great cookbook for beginners to pressure canning, I’ve canned doing the water bath method, but with this cookbook I’m looking forward to branching out. I look forward to trying the fire-roasted tomato and red bell pepper!

I love how informative this book is as I am an experienced beginner and I enjoy canning. Even though I've canned for over 2 years, I like to re-read the importance of following the instructions for canning. I like the illustrations and images in this book as it makes me feel a bit more confident and more inspired to can more!

I can't wait to try some of these recipes and I think this is a fantastic book for canners of all levels!
