Great book to introduce canning to novices and makes a great reference for those that are already familiar with canning. The recipes all look delicious and the book is laid out in a format to not make it seem intimidating to dive into this skill. Highly recommend to anyone that is already canning but looking to refine their skills or discover new recipes and those looking to get started!

I did not have a chance to read this book, but it is effecting my feedback rating. I am giving books 5 stars that I haven't read to improve my feedback rating. I am not recommending the book for my classroom or students since I have not read the book. There needs to be a better system of leaving feedback for books not read.

For years, I have wanted to can and make preserves. I tried twice with disastrous results. When I saw this book, I had hope and was inspired to try it again.

The book begins with detailed sections on ingredients, equipment, and techniques. The author provides helpful and caution tips throughout the book. The step-by-step water bath-canning guide should be laminated and hung in any canner’s kitchen.

The first recipes I want to try will be:

• Simple Fruit Jam
• Habanero Pineapple jelly
• Red Onion Marmalade
• Georgia Peach and Basil Preserves
• Bread & Butter pickles (two different recipes to try)
• Sweet Jalapeno relish
• Mango salsa
• Apple butter
• Baked Peach Rum Butter
• Holiday Cranberry Chutney
• Basil Vinegar


This book is so much more than just pickling and canning. The recipes are easy to follow and include ingredients easily found in most grocery stores. There are many pictures of the recipes in book. I recommend this book to anyone interested in canning and preserving his or her own food.

I tend to read cookbooks like, well, novels. And I love to can - the work that goes into it, something to be enjoyed later on when that fruit or veggie is no longer in season, or something that makes my busy nights so much easier. This book was a great example of some excellent recipes. I had no issues with any that I tried, and the instructions (most important, particularly for someone who may be a beginner) were clear and easy to follow. Definitely a good resource for newbies or those more experienced.
