I do love a good soup. This is a great book that introduces all sorts of different soups and stews for all kitchen experience levels. Cold soups, bisques, ramen, and other yummy goodness awaits inside. There definitely could have been more photographs in the book though. The photos present are lovely, though. I'd love to try the coconut & spinach soup, cashew soup, avikas, and the haddock chowder. Yum!

The Encyclopedia of Seasoning is one of my favorite cookbooks of all time, and upon seeing the Encyclopedia of Soups and Stews on Netgalley, I knew I had to check it out.

The cookbook is broken into several sections, including "pastas, noodles, and dumplings," "veggies," various meats, and "stocks." Out of all of them, however, I was most curious about the "chilled and dessert soups."

Before I get into what I love, two things stuck out as odd. First of all, at least one of the images appears in my other soup cookbook, which while from the same press, was not something I particularly liked (especially since the one I recognized appeared twice in this one). Then, quite a few of the pages were hard to read because they were white on pale backgrounds. I'm wondering if they are meant to be on more colorful pages like in the other cookbooks in this series?

This said, I enjoyed a lot about this cookbook. For one, the sheer variety of soups was super fun. As well, the instructions, while simplistic, were detailed enough to be easily followed. The lasagna soup, various wonton soups, and the spicy tomato and egg drop soup particularly caught my eye. Several others, while out of my comfort zone (i.e. honey, huckleberry, and veal soup) were also fascinating to read about. Also that dessert section?? I really want to try honeydew soup now.

As other reviews have said, there is definitely something for everyone. Thank you Netgalley for this arc.

This Cookbook is Perfect as I am looking to Volunteer at a Soup Kitchen. The 300 Soups and Stews all sound delicious. I like the way the Cookbook is broken down into Sections: My favorites are 1. Pasta, Noodles, and Dumplings 2. Legumes, Nuts, and Grains 3. Poultry 4. Pork and 5. Chilled & Dessert Soups. So, there is something for everyone here. There are different uses from other Countries, as well as more Standard US Recipes. I think most people enjoy Homemade Soup or a Hearty Stew and these will make Excellent Recipes. Soups and Stews are Not only Delicious, but Healthy as Well. I am Excited to try many of the Recipes. They are Simple Enough for a New Cook or Will Work for a more Seasoned Cook.

I am so excited to try so many of the recipes in this book!!
What I enjoyed:
I really liked the wide variety of recipes. Different regions, difficulty levels and time. So I feel this has something for everyone. I enjoyed the pictures which were interesting, enticing and vibrant. I also really enjoyed the explanations on the difference between things like consumés, booths, stocks, bisques, etc. Along with a section in the back for making a wide range of your own stocks.
What I felt could be improved:
I would have liked to have seen a little information on each dish, such as the region and flavor profile. While the pictures were lovely, some were repeated. Lastly, a fee on the recipes were in white font on a light colored background, making them very difficult to read.
All in all I think this is a great cookbook for soups that I am so excited to use.

What a fantastic collection of soups and stews. Every kitchen should have this. I love having the different dishes in every conceivable area. The combination they have in this book are incredible and bring so many cultures together.

This cook book is amazing! Plenty of easy to follow recipes for the fall/winter seasons, and delicious pictures to really show off! The only issue I found was some of the recipes are written in white but are against really light backgrounds, making it very hard to see every other recipe clearly. I don't know if this is a digital issue or if a physical copy would be just as hard to read, but going based off the digital arc I've received from NetGalley, it is very difficult to read.

This is an amazingly comprehensive book of soups and stews, and I've already bookmarked a ton of pages to cook this winter. A few things for me that would have made this book better:
- As others have noted, some of the white text pages are hard to read, at least on an e-reader.
- I'm a vegetarian and it would have been helpful if recipes were easily flagged as vegetarian or vegetarian with simple substitution. I can imagine the same would be helpful for people who are gluten free, vegan, etc. A little symbol on the top of the recipe would be all that is needed.
- I found myself missing some of the recipe commentary that would provide context. The recipes come from so many cultural traditions, a little note about the cultural importance of pho for example, or a sidebar telling the reader what laksa is would have been valued by me at least. I think the same is true about some of the more obscure ingredients. What are fiddleheads and when and where can I find them? If I can't find caciocavallo cheese what else is similar?

I did like how the index in the back can be viewed by ingredient, so when something is in season you can easily find all the recipes that call for butternut squash or asparagus, for example. I look forward to diving into these recipes in the colder weather -- it will be good to stretch my soup horizons a bit!

I'm going to wear this book out! The photos are gorgeous and the recipes are accessible. I love recipes that have familiar ingredients and dishes along with a few that "stretch" your skills and this cookbook is just that. I learned a lot and dog-eared enough pages to keep me busy in the kitchen for weeks! Highly recommend! Thanks to the publisher for the advanced copy! YUM!

Omg!! This all sounds amazing. Thank you to the publisher for having this available as a read now book. I looove soups and love how versatile it can be. One of my besties told me she got this book and was marveling at how good it all sounded so I, too, had to get myself the book to have some new recipes on hand. I’m so excited!

A comprehensive cookbook featuring soups and stews. This is a part of the publishers extensive cookbook collection and a welcome addition to it in my estimation. History and benefits of soups and stews along with seasonal and sustainable information start this book. Very interesting read and one for the beginner to easily understand. The recipes are categorized and easy to read. Excellent addition to any kitchen shelf.

I absolutely LOVE soups. There is nothing more hearty or comforting than a good bowl of soup. I was so excited to get a copy of this book and it didn’t disappoint. There are so many different varieties to browse through. As other people mentioned, the white text on some pages was difficult to read, but overall it is a fantastic cookbook. I already made the lasagna soup tonight and it was delicious!

I usually only use NetGalley for my fiction reads and audiobooks but I adore a good cookbook. I have a pretty decent sized collection of cookbooks (vintage to brand new!). This reminded me of some of my vintage favorites with the cute little icons on the cover and the style of photos and recipes.

The cover actually caught my eye while browsing NetGalley and I was so excited to scoop this up on read now. I love nothing more than a huge soup or stew when the chilly seasons roll around (or anytime really because I work in a cold office so anytime is soup time). I'm super excited to add some new recipes to my rotations and this looks perfect. How can you not find a recipe to love with 300 to choose from.

The only thing I noticed was that in some of the pages the text was white and very very difficult to read on mobile. I'm not sure if this is just an issue with viewing on a digital device and maybe in person it will pop much better.

The recipes are easy to view with clear instructions and while I do love a cookbook with a personal touch - sometimes it's just too overwhelming to properly follow recipes in between story time. I choose cookbooks for different reasons - sometimes I love an aesthetic cookbook with stories and beautiful pictures but oftentimes when I'm truly cooking from them I like straightforward and no fuss. I personally don't typically refer to informational tool pages or nutrition information when I utilize a cookbook but these do not appear to be present after a full readthrough. There is a metric conversion table in the back by the index though.

Overall a beautiful cookbook with TONS of recipes to explore and a little bit of a vintage cookbook feel! I can't wait to try some this September.

I am having some difficulty reading some of the pages with the online reader, but that's not your problem! I do find a lot of these recipes to be delightful (and very cozy; who doesn't love soup?). I also appreciate the multicultural approach - there isn't a soup that hasn't been covered (or is there?!). Obviously, this is a very specific recipe book. I don't find the book to be super engaging with the reader in its straightforward recipe & photo approach, but I do appreciate the simplicity of it. In terms of readability - some concerns regarding color choices. I was having difficulty reading some of the pages online, but perhaps this isn't as big of an issue in print.

Soup is the quintessential comfort food for fall/winter, I don’t make the rules. I was so excited to dive into this one and get some new ideas for things to make as we’re heading into the colder months.

I do like this cookbook on the overall. I love the variety of soups/stews, from tried and true classics to some more “out there” ideas. The way it’s organized makes it easy to find your favorites or browse for inspiration based on what ingredients you like or what type of soup you might be in the mood for.

A couple things kept this from being a standout to me. One is the text- several pages had white text on a light background, making it impossible to read. I’m hoping that this will get changed for later editions, or maybe is an issue exclusively in the electronic version. I also wish there were more pictures, either every page or every other. I think this would make it easier to envision the final product of what you’re making.

This was a large collection of dishes that are perfect for serving up through Autumn and Winter. Whilst some of the dishes were new to me, many I had heard of before. It was nice to compare some of those with ones that I had recipes that had been passed down through the family

I'm not the world's best cook but one of the few things I consistently feel confident making in the kitchen is various soups. I have a small amount of staples in rotation but am always looking to try new soups. I'm recovering from a cold and feeling even more in the soup mood than usual so was excited for the opportunity to read an eArc of the Encyclopedia of Soups and Stews.

The organization by category is helpful and each soup in order keeps to not only the overall theme of the chapter but is similar to the soups immediately surrounding it. I've come across recipes and thought "this doesn't quite sound good to me" then flipped the page to see a nearby soup with a similar core ingredient that sounded delicious. Some suggestions are a bit far fetched, such as the mention of investing in a chest freezer in order to batch cook with the intent of leftovers, or have ingredients that may not be easily found in all areas (like Elk, squab or galangal) without suggested substitutions. There were a lot of staple soups I've been meaning to try alongside many more I've never heard of. Sometimes recipes even include small sides, like the spicy bean sprout salad that pairs with the book's Miso Ramen (I can't wait to try this one!).

Each recipe provides approximate servings, total time and active time needed to prepare each dish. Some of these are quick and easy while others are more involved, needing overnight prep or multiple blending and straining sessions to achieve the final product. There are a couple items missing I've found handy in prior cookbooks though neither is a dealbreaker from using this cookbook. Having a section that highlights kitchen tools you may be that aren't standard to every soup, such as a blender, strainer, sheet pan, etc. would be useful in order to quickly see at a glance what tools are needed rather than reading through the full recipe steps when you're in a hurry deciding your meal for the evening. Another thing missing is nutrition information for each recipe. It would be handy to know a rough estimate of common nutritional factors folks with dietary restrictions may be focusing on such as calories, sugar content or cholesterol content.

Overall, a winner of a cookbook that I'm already planning to shopping list based on.

This is a great cookbook! I was wondering how they were going to get so many recipes in one book and hit this one out of the park. There is everything from ramen to your more traditional soups and stews. So many flavor profiles and combinations that I would not have thought of and of course the traditional favorites. Not so many ingredients it is overwhelming and not complicated. This would be a great to add to your kitchen as well as a gift. Thanks to NetGalley for the ARC.

Do you love soups? How about stews? This is a marvelous book! You’ll want to look at this one. Jammed full of over 300 recipes from all over the world. I started salivating as soon as I started to read through the recipes. And I found over 20 recipes that I want to make “right away,” with others that will also be on the must try list.

There are so many interesting soups, I can’t wait to get started.

This was a great encyclopedia of soups and stews. Giving a wide range of them along with stocks and accompanying garnishments recipes. Knocked a star off as they were some pages in a earlier chapter where they was white text on a light background that made it hard to read.
