I'm a lazy cook. Because of that, I love my slow cooker! In addition to the expected soups, stews and casseroles, we're treated to recipes for vegan loaves, pastas and grains, breads and snacks. Photos accompany the recipes and everything looks appetizing. I'm a little picky on the cookbooks I buy rather than borrow from my local library, but this one's definitely one I'll purchase and use frequently.

This cookbook is awesome!!!
I love using my slow cooker for everything, it makes cooking so much easier.
I love how Kathy Hester broke down the steps by the times of the day making it easier to plan ahead.
I bookmarked almost every single recipe on there.
Overall, this cookbook is easy to use and maneuver. All the recipes use ingredients that I use everyday and have in my cabinets.

You will be surprised at how many things you can make in the slow cooker that take much less time and effort to prepare and serve! The beginning cook will appreciate the introductory information about what size and type of slow cooker you should use.
The author includes a list of the most used ingredients at the beginning of the book and the last few chapters of the book include recipes for ketchup, bbq sauce, and even vegan cheese!
There is a recipe for “chocolate oatmeal” that uses unsweetened cocoa powder and steel cut oats that is delicious - I eat it every morning. There is a recipe for “kung pao ” that use ginger, garlic mushrooms and “seitan” a vegan chicken, and the seitan vegan chicken recipe is in the back of the book.
These recipes use tofu, vegetables and vegan cheese to replace meat, and most of the recipes have a gluten free recipe within the vegan recipe.
These recipes will work out well for the busy family or couple who enjoys coming home to an already cooked meal.

This book is bursting with a variety of recipes and snippets of useful information for vegans. I found the instructions on how to use aquafaba in place of eggs very useful, as lots of books tell you that you can but they don't tell you how. I would have liked a few more pictures and there were a few recipes that were better without a slow cooker, but overall a very useful book and a definite buy for any vegan kitchen

Let me start out by mentioning that I love hearty, vegan food but can't stand waiting. My patience does not fit in well with cooking and prepping. Because of this, my crock-pot is my best friend. I was extremely excited to receive a copy of this cookbook and couldn't help but run out and buy ingredients to get cooking the same day.

I read through the book and all of a sudden had almost half the pages bookmarked as TBC (to be cooked). I started off by trying the recipe for the Hard Cider and Cabbage Stew (p. 72) and let's just say I was hooked. Since then, I've ventured onto the Soy Curls and Dumplings (p. 87) and couldn't pass up a new recipe for creamy mac and cheese (p. 105). These 3 sealed the deal on this cookbook for me.

Pros: AMAZING prep instructions. Although crock-pots function on "dump meals", I was pleasantly surprised with the in depth instructions on prepping, all the way down to the time. These suggestions made the entire cooking process a breeze. I also appreciated how the book was not only sectioned into types of meals, but also by time processes - "No Time To Prep Recipes" should be a chapter in every good cookbook! Finally, I love a cookbook that teaches you something. The first bit of the book dives into the basics of crockpot cooking (and more importantly the vegan side of it). It makes dump meals seem a little more exciting and a little less daunting. Within this section, there's also a quick little guide to vegan substitutes that could be extremely helpful for anyone just picking up a meat-free lifestyle.

Cons: Honestly, the only con I could even think of - I'm a very visual person and my tastebuds and cravings would agree! I know there's a tough mix when creating a cookbook of too many pictures and too little. BUT I feel as if in a vegan cookbook, it's essential to hook the reader who might see vegan meals as rabbit food. The pictures in the book were stunning and I did tend to lean towards the recipes that I could visually see. But if this is the only con I could notice, I'd say we could easily let it slide.

Looking forward to not only cooking more of these recipes, but also diving into all the leftovers I now have stocked up in my freezer and fridge. Thanks for the awesome content!

Some truly delicious recipes in this slow cooker recipe book. As a vegetarian I do eat quite a lot of vegan dishes, my family however eat a lot of meat and fish dishes, but even they were salivating at some of the dishes I was preparing. As well as having a slow cooker, I also have a soup maker which I used for a couple of the soup recipes, yum, yum, delicious. The curries were also some of my favourite recipes in this book. It also gave me lots of new recipes and ideas, for instance I didn’t have a clue that you could bake jacket potatoes in the slow cooker, as well as pasta dishes, rice dishes and deserts. Easy to follow, quick to prepare and so much fun to eat, tasty dishes for the whole family. A wonderful addition to any kitchen. I received an advanced copy of this book from the publisher via NetGalley. This is my honest review.

Beautifully written and illustrated. The directions are pretty forthright and easy to do. I have not tried doing it in an Insta pot yet, but love that the author gives that as an option. I have various people in my life who are vegans and will happily share this book title with them.

This is the latest edition of a really great cookbook - so few slow cooker books focus on Vegan meals and there are quite a few here to enjoy. The book is nicely presented with full color photographs every five recipes or so and a very clean layout. The recipes are easy to do and nicely sorted. In all, a win!

The book breaks down as follows: Slow cooker love, Vegan slow cooker basics, No-time-to-prep recipes, Soups, Stews, Casseroles & loves, Pasta & grains, Mains, Sides, Sandwich & taco fillings, Breads, Snacks & appetizers, Breakfasts, Desserts, Staples. Also included is an index and appendix.

The book has a nice introduction by the author that also gives tips and guidelines for buying and using a slow cooker. Considerations such as special diets (gluten-free, soy free, etc.) are also included. There is even a troubleshooting section when things don't come out as expected.

The recipes come two to a page (or photograph and recipe) and are very cleanly presented so they stand out separately (note: very small text). There is a small introduction to the recipe and then symbols/text denoting gluten-free, soy-free, no oil, etc. Line breaks separate the ingredients (which are bold faced) from the steps. The steps are not numbered and instead are broken down into three categories: the night before, in the morning, and then after serving. That may seem unusual but it makes sense in terms of how slow cooking is done. At the bottom of each recipe is yield (servings), equipment, and cooking time. Every fifth recipe has a nicely photographed image and there is a large variety of recipes.

In all, I found the recipes very easy to follow and the variety was wonderful. Nearly every recipe is extremely easy, many of which can be prepared the night before and then dumped into the slow cooker on the way out the door. Recipes may require additional cooking; e.g., the Asian recipes will need some rice. But in all, there were some beautiful flavors to be had. Reviewed from an advance reader copy provided by the publisher.

This is a fantastic cookbook for any vegans on the run or with busy schedules (or anyone who hates to actively cook). There are tons of recipes for a wide range of tastes and the recipes are detailed enough that anyone can follow them easily. I personally know that I will get a lot of use out of it as I am a full-time worker and a mother with a newborn so things that cook themselves are my go-to right now. I would highly recommend to any vegan or someone looking for vegan options to make at home or for a party.

I really loved this cook book! It had lots of very good vegan crockpot recipes that worked well and tasted great. It is very hard sometimes to find good vegan crock pot recipes but this book has them. Overall I really enjoyed these recipes a lot I made the Philadelphia Style-"Cheesy" Portobello Sandwiches and they were amazing!

One of the better vegan cookbooks I’ve read. Not perfect but close. There’s something for everyone and it can all be made in a slow cooker (yay!).

As someone whose eyes start to roll if there’s too many ingredients, I found this book good for me but also good for those who enjoy cooking more and who do want a whole lot of prep work both. The mix of super easy to you may need some some cooking skills is good. Nice photos of most of the food so you know what you should be getting. Most of the ingredients are readily available, though a few here and there may be special orders online..

It's chapterized really well, dividing the dishes from ''no-time-to-prep'' to casseroles, stews, breads, breakfasts and many more. There is also a chapter with many staples you can make from scratch, such as spice blends, boullions and sauces - which I personally find very appealing.

One main feature I like about the recipes themselves, is that they're constructed for prepping the night before, and turning it on in the morning, like I always do when I slow cook something. The author describes what to do ''the night before'', and what to do ''in the morning''.

To be highly recommended!

I love my slow cooker and i love to eat vegetables. That said this recipe/cookbook has some lovely recipes on how to make the vegetables I love to eat and cook in my slow cooker taste even more better. The recipes feature a lot of meat substitute ingredients but I tend to stay away from these. All recipes can be modified as to taste an so I will recommend this book to all readers who love to cook, love to use a slow cooker and love to eat their vegetables with good health in mind.

I'm a huge fan of the slow cooker. I use mine to brew potions, make natural skin products and cook dinner - I should really buy another one. As a vegetarian I spend a lot of time sourcing delicious appropriate recipes. In my search I discovered Kathy Hester's website so I jumped at the chance to review her revised and updated edition. There is even more to discover here and the metric conversion contained with the recipes make it for ease of use. Kathy now has me interested in the Instapot. I'll add that to my new kitchen gadgets for 2019.

Wonderful recipe book! All recipes are quick and easy, use readily available ingredients, are budget-friendly and full of nutritious plant-based ingredients. Even those not following a vegan diet will enjoy these recipes. I can't wait to make some of these dishes this week, especially the breakfast oatmeal.

Fair Winds Press and NetGalley provided me with an electronic copy of The Vegan Slow Cooker: Revised and Expanded. I was under no obligation to review this book and my opinion is freely given.

The Vegan Slow Cooker is separated into logical sections, such as Soups, Stews, Casseroles & Loaves, Breakfast, and Desserts. The sections of No-time-to-prep Recipes, Vegan Slow Cooker Basics, and Staples are the most invaluable, as they provide the necessary information regarding cooking vegan. They give the building blocks and the convenience that it takes to try out a new type of cuisine. The author takes the time to go over slow cooker basics, which is a plus for those readers who are new to the wonder of cooking in a crockpot.

The No-time-to-prep section contains mainly soups and stews, prepared from mostly canned or frozen ingredients. The soup section has delicious offerings, like Creamy Corn Chowder (p. 44), finished with non-dairy milk and basil, then topped with alternative cheese and sour cream. The recipe I am most excited to try is Hot and Sour Soup (p. 56), as it is very similar to the non-vegan recipe that I usually use. There are hearty stews, such as Hard Cider and Cabbage Stew (p. 72), which can cook all day and provide comfort on a cold winter's night.

Casseroles & Loaves has varied recipes like From-the-Pantry Pot Pie (p. 88), with its delicious vegetables and biscuit topping, and Julie's Loaded Enchilada Casserole (p. 90), with its spicy layers of pinto beans, roasted chilis, corn, and vegan crumbles, divided by hearty corn tortillas. The Pasta and Grains section has a delicious recipe for homemade Marinara Sauce (p. 99), cooked to perfection over many hours in the slow cooker. The Mushroom Lasagna with Creamy Garlic Sauce (p. 110) will have eaters, who may be skeptical about vegan cooking, asking for more.

My favorite Main dish is easily Kung Pao (p. 113), with its plethora of vegetables and spicy sauce. Thai Red Curry Tofu and Veggies (p. 126) is so flavorful that eaters will forget that there is no meat in the dish. The Side that I am most looking forward to trying is Super-Simple Roasted Veggies (p. 135), with its mixture of hearty vegetables such as carrots, brussel sprouts, and cauliflower. Spanish Quinoa (p. 143) is delicious and cooks quickly for a hearty side dish fast.

I particularly like the Sandwich and Taco Filling section, for its variety of dishes that are sure to please. The Bread section has offerings that range from the sweet Veggie Cornbread (p. 169) to Chocolate Chip Banana Bread (p. 175). Snacks and Appetizers, Breakfast, and Desserts have too many tantalizing recipes to mention, but many of them will give readers a greater appreciation for vegan cooking.

Whether readers have a nutritional need to eat vegan, or a medical one, all who pick up The Vegan Slow Cooker cookbook will benefit greatly from the many recipes contained within. I would highly recommend the cookbook and I look forward to more by this author in the future.

Initially, I was a little unsure about the design of this book as it is not a style (font, layout, etc) that would usually appeal to me personally. However, I was thrilled to find a book that combined vegan recipes with the slow cooking method so was keen to read through it and try out the recipes and I am very happy to say that I am extremely impressed!
I was pleasantly surprised by the variety of exciting recipes included from classics like Mac and Cheese and Shepherd's Pie to an Enchilada Casserole a Veggie Chickpea Biryani. If you want a slow cooker book that focuses on one cuisine only then this is not the one for you because it has Chinese, Indian and Caribbean recipes (to name just a few!) - this is a big positive for me!
I have not tried all of the recipes yet but the ones I have tried have been easy to follow and delicious! Next on my list are the King Pao, Mix and Match Jambalaya and the Rainbow Vegetable Soup.
The only reason I have not given 5 stars is because, whilst the images included in the book are of good quality, I personally would prefer to see more photographs of the dishes alongside the recipes.

I find that time flies faster since I have two kids. I don’t have the same motivation to do elaborate meals, unfortunately. I have to admit that I didn’t think to use my slow cooker at all... and this book explains everything there is to know about cooking vegan meals (from breakfast to desserts)... I learned a lot! I can’t wait to try some of these!

I love that this book exists! I had yet to use my slow cooker, but as a vegetarian who only cooks vegan, this book is a dream come true! It is so beautiful and has so many great recipes! I can't wait to work my way through it

I am a strict vegan so this cookbook is perfect for me. I thoroughly enjoyed reading and making the recepies from the book. I particularly liked the breakfast section as breakfast is something I always struggle to make due to time constraints, however the convenience of waking up to apple, cinnamon and oats to take on the go is a winner (as well as all the other breakfast treats). I was really excited to read this as I love collecting Vegan cookbooks to try out. In a lot of ways, this book delivered. It had recipes that sound delicious and I loved the additional recipes for common sauces and meats that are also vegan. I also enjoyed how each recipe also specified if it was gluten-free or soy-free and no added oil. That makes it very user friendly for those who may be sensitive to gluten or soy.

However, for the cons, there are no nutritional facts, which I always see as a disadvantage in any cookbook. And there are not near enough pictures. The pictures that are in the book are beautiful and look fantastic, but I really wanted there to be more! It is hard to get excited about food I can't see and when most of the book doesn't have pictures, that is a big letdown to me. It makes it hard to compete with other cookbooks that do have beautiful pictures throughout.

The book was just so beautifully done and the recipes seemed so appealing that I'm not knocking off as many stars as I may usually do for the cons, but I really hope more beautiful pictures get added as I would love to see many of the other recipes throughout!!

I am so excited to have this recipe book. Sometimes being vegan for my family means we get stuck in some ruts with meal planning just repeating a handful of the same meals. Being a busy family we can’t spend a lot of time with meal prep either which also makes the slow cooker such a great option,
This cookbook has so many different vegan recipes! Two recipes I’m looking forward to trying first are Thai Red Curry Tofu and Veggies and Potato Stuffed Chile Rellenos!

Good recipes, but honestly I don't own a slow cooker. When I read recipe books I love when they have lots of photographs, and this one... didn't really have that many.

As a vegetarian I am always looking for slow cooker recipes and this book provides such a wide variety of options. This book contains meals that cover breakfast, mains, sides, desserts, and even soup. And there are not just many types of meals but the recipes range from Asian soups to southern side dishes. So any meal you are looking for there is a recipe for you in this book.

Now I will say that if you avoid soy or meat replacements you would need to alter a decent portion of these recipes. That is not a problem for me and I can't wait to make about a quarter of this book. I might break my crock pot with all the use I will get out of it now. It will be nice to make more than vegetarian chili for once,

This is a great addition to vegan cookbooks. I often find that vegan recipes involve a lot of steps or very different foods that you don't often have on hand; this book was very easy and approachable and the recipes tasted delicious! I am a full time working mother of two small girls and I loved that I could prepare it beforehand and have supper ready after work, instead of having to rush and try to prepare something, Great for busy families. Definitely recommend!

The Vegan Slow Cooker, is a great cook book for a busy vegan person. The recipes are easy to make. easy directions. start it in the morning, and by the time you comeback home you have a yummy healthy delicious meal

Great addition to any cookbook collection. For those looking to use their slow cooker in new ways, and looking to either change their diet to full vegan or even just changing some of their meals a week to be vegan.

I did not realize that one can make so many things in slow cooker. This is a easy to follow, well explained, practical and beautifully illustrated book. So much in one book!!
There are many recipes all vegan but also catering for people with extending dietary needs such as gluten free, soy free and no oil option.
I never though of making Asian meals or for that matter pizzas in my slow cooker, and this book shows you that you are not limited to casseroles and soups. I have already found a favorite that I have been look to make for ages - Shitake Congee - yum
This book covers many aspects of meals from yes soups and casseroles, and including bread, desserts, cake and everything in between. The beginning cover some information and sensible advise on starting off with a slow cooker.

Kathy Hester does a terrific job making vegan meals seem tremendously easy. Any questions or hesitations I had before approaching many of her recipes were thrown out of the window quite vivaciously as each recipe answered many concerns succinctly: Can I prep this the night before? What about noodles in the slow cooker? Gluten free options - check! Everything here is not only healthy and simple but also quite delicious!

As a family of three, I've found however the serving size to be a little inaccurate. What is listed as serves 6 fills three adults perfectly! Not including seconds that is. And so, it is often difficult to gauge how much is enough prior to cooking a meal for the first time.

I would truly recommend this handy book for every kitchen without a doubt, just be prepared to double the recipe and follow your gut. Thank you, Kathy!

Lovely recipe book for anyone looking to spice up the kitchen. Great for vegans and non-vegans alike...who doesn't like experimenting with new flavors in the kitchen? This one will give my slow cooker a workout.
